Bobby Dean here today, and I'm filling in for my mom.
0:06
Can you believe it's already Mother's Day?
0:08
Every time I'm over here at mom's house filming
0:11
and making recipes, I say, I can't believe
0:13
that it's already, and this time, it's Mother's Day.
0:16
I'm gonna make a beautiful baked salmon for you today.
0:19
I think you're really gonna like it.
0:21
It's super simple, super healthy,
0:24
but that's just a happy accident for me.
0:26
I just enjoy the salmon and I like it cooked real simply.
0:30
I'm gonna start by, I've got two eight ounce filets
0:33
of salmon here, and it's skin on.
0:36
So on the bottom of this is a layer of skin,
0:40
so I'm only gonna prep the top side,
0:45
and that's mama's olive oil.
0:47
That's some good stuff.
0:49
So I'm gonna paint the olive oil onto the salmon
0:52
and make sure that it's coated nicely.
0:56
The salmon is so pretty,
0:58
it's such a great source of protein.
1:04
Omega threes, just really good fats.
1:08
It's so good for every aspect of you.
1:11
I love to feed this to my kids.
1:13
This is brain food, man.
1:16
All right, so we've painted on our olive oil.
1:18
It's this simple little salt on top.
1:22
I've got my oven preheated, every oven is different.
1:26
My mom's is, man, it's a furnace,
1:29
so you gotta be careful.
1:30
At my house, when I make this salmon,
1:33
I do it exactly like this and do it parchment paper
1:36
on a baking, sheet into the oven.
1:38
My oven is, I cook it at 425,
1:43
and I do it fast, so it doesn't take a long time.
1:48
You don't wanna overcook the salmon.
1:49
That's really the only way to injure this dish
1:52
is to overcook it and burn it.
1:53
I don't wanna do that.
1:55
You're wondering right now, where's the citrus?
1:57
Well, I do that afterwards.
1:58
Okay, so we're gonna bake the salmon
2:00
with just olive oil and salt.
2:01
We'll put it in the oven right now.
2:02
When it comes out, we'll squeeze some citrus on it
2:07
(speaking in foreign language)
2:09
And then we'll make some couscous.
2:11
So we'll be right back.
2:12
Something that goes really great with salmon is couscous.
2:17
So let's make some couscous.
2:18
This is two and a quarter cups of chickenstock
2:25
Go ahead and get it rolling.
2:27
Okay, I just peeked at the salmon
2:28
in the oven and it looks fantastic.
2:30
So let's go ahead and get the couscous started.
2:32
Couldn't be any simpler.
2:33
Look, there's all kinds of different couscous' out there.
2:36
I just got these from the local grocery store here,
2:42
they come boxed and really simple to cook.
2:44
So whatever kind of couscous you want, make your own choice.
2:47
I've got my water boiling.
2:50
We'll add the couscous, stir it in.
2:56
That's quickly going to thicken.
3:03
And this is the way I do my oatmeal,
3:04
my polenta, everything at home.
3:05
I'm gonna go ahead and turn it off so the heat is off.
3:10
I'm gonna stir in my tomatoes, my green onions,
3:20
and I'm gonna let this sit on the stove top.
3:22
I'm gonna cover it and let it sit on the stove top
3:24
for just a few minutes.
3:30
And the last thing that I will add will be my feta cheese.
3:36
Wonderful, okay, so that's done.
3:39
Let's take one more quick break
3:40
and we'll go back to the salmon.
3:42
I forgot the salt on the couscous.
3:45
Tomatoes, green onions, salt,
3:57
Now I can let it stand.
3:59
So one more quick break and we'll come back to the salmon.
4:03
Let's take a look at this salmon.
4:07
Yeah, gosh, that's gorgeous, perfect timing.
4:13
I'm just gonna drop a pat of butter on each one,
4:19
and pop it back in the oven for just a couple more minutes.
4:24
Ooh, that's gonna be so, so good.
4:29
Oh, I know it's perfect.
4:37
Oh boy, look at that salmon, golden and delicious.
4:41
That butter did its job.
4:42
It's carried into the kitchen.
4:51
Wonderful, gosh, look at that.
4:55
Okay, the lemon juice or lime juice.
4:57
This is fresh squeezed lime.
4:59
I always hold that until after the fish
5:01
comes out of the oven.
5:03
You could do it before, I suppose, I've done it both ways
5:05
but I prefer my citrus on top after it's cooked.
5:18
Yes, now the skin, you might be wondering about the skin.
5:22
The skin on the bottom, it will easily peel right off.
5:26
Or you could just eat it, you know?
5:36
The parchment paper did its trick too.
5:38
That skin stayed on, that beautiful filet
5:42
of salmon peeled right off.
5:47
This is just my favorite thing on the planet, I think.
5:51
Look it, how beautiful.
5:53
All right, the couscous
6:04
That could benefit from a little butter I'll bet.
6:09
All right, recipe calls for a cup of feta cheese.
6:14
If you don't like feta, if you have a different preference,
6:19
I'm not a big fan of goat.
6:22
I think feta is wonderful.
6:25
Gonna marry that in, couscous and salmon.
6:29
It's a great combination of things.
6:33
One is just super great healthy protein,
6:35
and the other is really high in calories,
6:38
and I think they compliment one another quite nicely.
6:42
The couscous, you can make it however you like.
6:46
I made it with tomato, green onion,
6:49
the salmon I just painted with olive oil,
6:53
a little bit of salt, and one more
6:58
little pinch of fresh salt right there at the end.
7:01
Put a little pad of butter on the salmon
7:05
and put it back in the oven for about three minutes.
7:08
And that butter melted on top and became golden brown,
7:11
and wonderful looking.
7:13
Look at that dish, ooh, all day long.
7:21
Let's see how that salmon looks.
7:42
I could eat it every day, I love it.
7:45
If you're not a big fan of fish,
7:47
this is a great recipe for you to try.
7:49
Maybe it'll turn you on.
7:56
Do great things that go great together,
7:58
Salmon couscous, I'm gonna finish this plate.
8:01
Happy Mother's Day to you and your family
