- Hey y'all, it's Jamie Deen.
0:01
I'm here in mom's kitchen again.
0:03
Mom is visiting the restaurant in Foley, Alabama
0:06
and Panama City, Florida this week.
0:08
So I'm excited I get to come cook for y'all.
0:10
Mom's new countertop is in.
0:13
Black is a perfect color
0:14
because it will show every grain of salt
0:17
and spec of stuff that you have on your counter.
0:20
But it's my mama's house, she can do what she wants.
0:22
Today y'all, I'm doing a really good
0:24
roasted mayonnaise chicken.
0:26
Mayonnaise chicken is probably,
0:28
and I say this maybe too much,
0:31
this recipe we cook a ton at our house
0:34
because it's so simple and it's so delicious.
0:36
Did y'all know that if you put mayonnaise over chicken
0:39
it browns it beautifully?
0:41
It's egg yolks, it's got flour-
0:46
It gives a good flavor.
0:47
And it's beautiful when it's done.
0:49
If you put it on the grill
0:50
or if you do what we're doing today
0:52
and you put it in the oven.
0:53
So I've got three chicken breasts
0:55
that I've kind of patted dry a little bit.
0:57
And our topping, this is a little bit more fancy
1:01
than what we do at our house.
1:03
I'll start with what we do.
1:05
We use about a cup and a half of mayonnaise,
1:09
and this is an important part,
1:11
we're gonna use the zest from two lemons.
1:15
And I went ahead and got started since it was two.
1:18
So I used every bit of that zest
1:21
and we've got some salt going in here
1:24
and we've got pepper in here.
1:26
Now this is where this recipe varies just a little bit.
1:30
We're gonna add celery seeds.
1:32
We've also got a little bit of paprika
1:36
and just a pinch of cayenne pepper,
1:39
which is gonna equal maybe two dashes.
1:46
We're gonna mix all this together.
1:48
Look at all these colors and this texture and flavor.
1:54
Traditionally chicken, you know,
1:56
everything's a little bit higher now
1:57
but chicken is a more affordable dish.
2:00
It's a really good lean protein for your family.
2:03
And so it's so healthy
2:05
that why don't we cover it with mayonnaise?
2:08
I tell you what, I'm gonna transfer this stuff over.
2:11
Let's take a quick break.
2:11
When we come back we'll put this together
2:13
and get it in the oven.
2:14
Okay y'all, I'm also gonna take time
2:17
to season this chicken a little bit on its own.
2:21
I love this big salt.
2:22
We've got some pepper going on here
2:25
and now with our mayonnaise mixture.
2:30
See, I've got three chicken breasts
2:32
so I'm gonna mentally figure out
2:34
about what a third of this is for each one.
2:37
Pop it right on the top.
2:40
One third, two thirds, and then a whole.
2:47
Now I've been practicing that a long time.
2:48
So don't get disappointed if you've gotta steal
2:50
a little bit from one and add to the other.
2:53
This is gonna cook on and drip down,
2:55
so I'm gonna try to cover this top surface area
3:00
Ooh and you know what else would be good about with this?
3:02
Take you a piece of bacon
3:03
and wrap it around the chicken this way.
3:06
Ooh and let all these flavors cook down
3:09
and mingle that bacon in.
3:10
That's a different recipe.
3:11
We're not doing that one today.
3:14
It's going in the oven at 150 degrees.
3:17
Y'all be sure and check your internal temperature.
3:19
You wanna be up to 165 to ensure
3:21
that you've cooked all the bad stuff out of there.
3:23
Probably about, I'd say 25 minutes
3:26
on these chicken breasts in the oven.
3:27
Y'all stick around and we when get done we're gonna eat it.
3:31
Okay y'all, it really was right
3:32
at 25 minutes for our chicken.
3:35
And I know you're gonna say,
3:37
"Oh, Jamie you burnt that chicken."
3:40
That's the mayonnaise.
3:41
See how juicy this chicken is.
3:43
Really get yourself a thermometer
3:46
that you can check your meat,
3:48
'cause if you can cook it to 165 and not overcook it
3:53
the juice that comes outta your chicken.
3:56
Mm, look how juicy this chicken.
4:00
[Woman] Oh, look at that.
4:03
[Jamie] And with our mayonnaise on top,
4:04
it really browns quickly.
4:05
But this is just all flavor there.
4:09
None of this is burnt.
4:14
you can do it with rice and gravy and steam broccoli.
4:18
That's kind of our sides that we do it with,
4:20
but this is perfect chopped up on a little salad.
4:22
You eat a little bit of mayonnaise.
4:24
Fatten it up a little bit.
4:25
Then you lighten it down a little bit
4:26
by eating it with lettuce.
4:30
Thanks for tuning in.
4:31
I'll see y'all around the kitchen.
