- [Videographer] Ooh, look at those.
0:02
- Hoecakes coming off the grill, y'all, look,
0:13
make sure I get my garnish
0:14
all put together before I get the salad.
0:16
Hey y'all, Jamie Deen, back in The Chicken Box with Theresa.
0:19
Today I am doing an unusual, delicious,
0:22
fresh ingredient salad.
0:25
This is from mom's magazine, I've never seen this before.
0:27
I've never made it before. It's very interesting though,
0:30
so let's take a look.
0:32
I've got two different types of radishes, cucumbers,
0:35
we've got our shallots,
0:37
we've got crushed basil that Theresa grew in her garden.
0:41
Delicious, local grown basil.
0:44
And the dressing for this salad is very simple, y'all,
0:47
I'm gonna do one quarter of a cup of olive oil.
0:52
You know if you click on this, y'all will get the,
0:55
you'll get the recipe for this dish.
0:58
I don't want you to miss any of it.
1:01
Two tablespoons of white wine vinegar.
1:05
(vinegar gurgling) (people chattering)
1:07
I love white wine vinegar.
1:10
We've got a little bit of lemon zest, two tablespoons,
1:15
got two teaspoons of lemon zest.
1:21
I love the vinegar, I love the oil,
1:23
I really love lemon zest in my dressings.
1:27
It is so good. And how many times have I said it?
1:30
Say it with me, it tastes like sunshine.
1:34
And the same lemon that I'm using
1:36
I'm gonna squeeze in here
1:37
now I need two tablespoons of lemon juice.
1:49
- [Speaker] All good. (people faintly chattering)
1:54
- [Jamie] One hoecake might not be enough.
1:59
That's my weak spot, a fresh hoecake.
2:02
A light dressing, okay.
2:04
Oil, rice wine vinegar, zest, and a lemon.
2:12
I'm also gonna add two tablespoons of honey.
2:19
Nice natural sweetener for our dessert here for our salad.
2:26
And little bit of fresh pretzel salt.
2:30
(whisk clattering) (door creaking)
2:33
How you doing? - Are you okay?
2:34
(whisk whooshing) (door creaking)
2:39
(whisk whooshing drowns out speakers)
2:45
- [Videographer] It smells so good.
2:46
- It really does, it smells so bright and light.
2:50
Love it. - Like sunshine.
2:52
So into this y'all we're gonna add our basil.
2:58
We're gonna leave a couple of pieces out here for garnish,
3:01
our radishes, the red radishes,
3:04
the multicolored radish, y'all, is interesting.
3:09
See the white and the red,
3:10
they look the same except for the outside.
3:13
Then get all of these.
3:14
I'll save a couple of red ones for garnish.
3:17
We're gonna add our shallot,
3:21
and look at all this delicious, fresh cucumber.
3:26
- Pick me some. - With this there.
3:35
- We're gonna toss all this together.
3:40
I wonder why my mom didn't put black pepper in here.
3:43
Why do y'all think that is?
3:47
Well, how about since mom's not here
3:49
and this is The Chicken Box,
3:50
I'm gonna put a little black pepper in here,
3:51
but I'm gonna do it after we plate it.
3:54
But isn't that interesting y'all, look,
3:56
all it is is just the fresh vegetables, a light dressing,
4:00
and then our basil leaves.
4:02
Let's get this on a plate.
4:04
We are into the time of the year
4:05
where this is the kind of salad that you would like to have,
4:10
It's starting to warm up here in Savannah, y'all.
4:12
I'm telling you, summer is almost here
4:16
and we're looking for ways to stay cool.
4:21
You know what? I don't even need that garnish,
4:23
I've got enough here.
4:27
We'll garnish it with a hoecake.
4:33
We will take our light, fresh, healthy salad
4:36
and we'll pair it with a piece of butter-fried cornbread.
4:41
It's a good looking salad, y'all,
4:42
let me give it a test drive.
4:44
Cucumber, the radish, mm, mm.
4:54
I didn't really like my chances.
4:57
These are good, needs a little bit of pepper.
5:05
Radish has never been one of my favorite things
5:07
but with the cucumber, it is delicious.
5:09
If you know the red radish
5:10
has got a little bit of heat to it,
5:12
really compliments the lemon dressing with this.
5:14
And you can never go wrong with a hoecake.
5:19
Y'all make this as soon as you can
5:21
and then come to The Chicken Box
5:22
and get Jo to make your hoecakes.
5:25
I'm Jamie Deen, this is good food.
5:28
See you around the kitchen.
5:33
Hey, y'all, it's Paula Deen.
