You know, Mother's Day is right around the corner,

and we're gonna do a week's worth of Mother's Day recipes.

And today I've got one that takes me back to my childhood,

because my mom used to do something like this,

my aunt Peggy used to do something like this.

And virtually every southern table has got a version

of this right in the midst

of all of that abundant deliciousness

that we all enjoyed when we growing up.

So it's a really simple,

I would call it like a summer salad,

because what it's made up of is,

cucumbers, Vidalia onion, and a fresh vine-ripe tomato,

a little vinegar, salt and pepper, and some dill.

Super simple, as a lot of the best recipes are.

So what we're gonna do is,

throw a cucumber, and vinegar.

'cause we're also gonna add vinegar to it.

And then I'm just going to slice up my tomato,

and sort of fold it all in together.

I love this time of year for lots of reasons,

but fresh fruits and vegetables

are just something to really get excited about.

And you could cut your tomatoes however you'd like.

You could cut 'em into a rough cut like this,

or you could leave them in, you know wedges,

Now let's talk about the vinegar,

that that was a part, a very small amount of vinegar,

Now, when my mom made this, Aunt Peggy too,

these things were swimming in vinegar.

I mean, it was a virtual pool of vinegar,

and probably a little olive oil.

So you could play with it and do that if you'd like.

This recipe comes from, "Y'all Come Eat,"

So it's not much vinegar,

but a little bit of vinegar can go a long way.

We've got a great garden in the back of our house,

and we really enjoy it.
