- Y'all, we in the kitchen today with Q,
0:04
this will be her second recipe that you've shared with it.
0:09
Please check out her videos that we've done on YouTube.
0:14
And she also has a YouTube channel, which is...
0:19
- Mixing it up with Miss Q.
0:21
- Yes, Mixing it up with Miss Q.
0:23
- Yes. - I love that.
0:25
Now, how about your pink table?
0:27
- Yes, Mixing it up with Miss Q,
0:29
it features a pink table
0:31
that has different topics,
0:33
will give you resources
0:36
on different things in the community and around the world,
0:39
so you don't wanna miss it,
0:41
we're gonna keep you informed on a lot of great things.
0:44
- Her book is available on...
0:48
- Amazon. - Amazon.
0:49
- And. - Kindle.
0:50
- And Kindle. - Mm-hmm.
0:53
- Did you read this book for, do you have it in a tape form?
0:57
- Yes, they have it audio as well.
0:59
- Okay, did you read it,
1:01
did you do the reading yourself?
1:02
- I did not.
1:04
- I had so much fun doing the reading for
1:07
"It Ain't All About The...
1:10
- The cooking, right. - Yeah.
1:12
- "It Ain't All About The Cooking."
1:13
And I had to go into the studio and read the book,
1:18
and I looked so forward to it every day.
1:20
It was like, I didn't know how it was gonna end.
1:23
- Right, right, right. (Paula laughs)
1:24
- Ain't that goofy?
1:27
But I enjoyed reading it even though I knew how it ended.
1:31
- Right, exactly.
1:32
- So check this book out, y'all.
1:33
She's an inspiration.
1:37
She is an inspiration, that's all I can say.
1:39
All right, so you're gonna share with us
1:41
your squash casserole. - Yes.
1:43
- And Q made a confession to me a while ago,
1:47
she said Paula, "I don't formula cook,
1:50
except in the sweets part of my bakery."
1:55
And I said, "I know, I know.
1:57
Formulating a recipe is one of the hardest things
1:59
for a cook to do."
2:01
- Yes. - So hit it, girl.
2:03
What are we making?
2:04
- So you must remember that,
2:06
we're doing squash casserole today,
2:08
but you must remember, my bakery is called,
2:12
it's a bakery and sandwich shop,
2:13
and it's called Q's Cakes Done the Old Fashioned Way.
2:17
So I don't get into the recipes, but I love to cook.
2:21
And my savory side of it, I have veggie burgers,
2:25
I have turkey burgers, and I have ham sandwiches,
2:30
we now do roasted wings, grilled-
2:32
- Oh wow. - Yeah, grilled.
2:35
We have grilled zucchini, grilled squash,
2:38
we have grilled Brussels sprouts.
2:40
- It was a few tucked in there.
2:42
- Okay.
2:42
We have grill Brussels sprouts,
2:44
so we have an extended menu that is on the healthier side.
2:49
- They do sound healthy. - Yes, on the healthier side.
2:52
So right now we're gonna add, we poured the squash in,
2:55
we've already boiled the squash and the onions together.
2:59
- And that was, I'm reading the recipe.
3:02
- (Q) You read the recipe.
3:03
- Two yellow squash it was? - Yes.
3:05
- Okay. - Two yellow squash.
3:06
I'm gonna put a little salt, we got some sea salt here,
3:10
just gonna sprinkle about a half a teaspoon here.
3:13
And then we're gonna do some black pepper,
3:17
about a half teaspoon here.
3:20
- She made this one day y'all,
3:22
she has her children and her grandchildren
3:26
two Sundays a month
3:28
at her house for Sunday lunch for dinner.
3:31
- Yes, yes.
3:32
- And she does all the cooking.
3:34
Now, her children don't like squash.
3:36
- Right.
3:37
- So she's trying to come up with a way
3:39
where they'll eat it. - Right, right.
3:41
So I'm mixing in the sour cream.
3:44
So what I did was I kinda used some of the ingredients
3:47
from my homemade mac and cheese, what they love love.
3:51
So I substituted the noodles for the squash,
3:55
so hopefully it'll work.
3:57
So here we have two eggs, unbeaten,
4:01
and I will pour them in the bowl so that I can mix it
4:06
with some of my heavy cream right here that I have.
4:11
And I have heavy cream here, a cup and a half,
4:15
so I'm gonna pour some of it right here to mix up.
4:20
- (Paula) That looks like a lot of heavy cream
4:21
for that little bit of squash.
4:23
- (Q) It does, doesn't it?
4:26
- Teresa or Eddie found you my beautiful casserole dish
4:31
that I just love, it's the honeycomb.
4:33
- Mm-hmm, I love it.
4:35
- Yes, it's the honeycomb from the store.
4:37
- So we're gonna pour about a half cup in here.
4:38
- This looks way too big for that little bit of squash.
4:43
- Okay.
4:44
- So I'm gonna find you a smaller casserole.
4:45
- Okay. - Okay?
4:46
- All right, so I poured about a half cup of the heavy cream
4:50
and the two eggs beaten together in this bowl,
4:57
and then we're gonna start adding our cheeses.
5:02
- (Paula) Now, that's where
5:05
you and I kind of differ a little bit,
5:06
I've never used the cheeses that you are using,
5:09
it sounds wonderful.
5:10
- Yes, we have a Gouda cheese.
5:13
I'm using, people, the cheese that's fun for my kids,
5:16
because I'm trying to get them to eat vegetables.
5:20
So we're using Gouda cheese here today,
5:24
and we're going to use Parmesan cheese.
5:28
So we're gonna pour this in.
5:31
A half a cup.
5:32
- (Paula) I think this size will be better, Q.
5:34
- Okay, perfect.
5:35
- What you think?
5:36
- I think so, too.
5:37
So, here's the thing about the squash,
5:40
if you're trying to appease some kids,
5:43
you gotta remember moistness, they like it soft,
5:48
they always wanna feel like they eating something
5:50
that reminds you of French fries and chicken strips.
5:54
(Paula laughs)
5:56
So I'm trying to make this tasteful, so that,
6:00
I was trying to make it tasteful so that,
6:02
I'm gonna add a little bit more salt and pepper here.
6:07
- You're right, they're into macaroni and cheese
6:09
and chicken fingers. - Yes, they are.
6:11
So we're gonna go ahead,
6:12
we're gonna add some bread crumbs.
6:15
No, these are, excuse me, butter crackers.
6:17
- Okay, I hadn't put the butter on them yet.
6:20
- They're crumbled butter crackers.
6:22
- Oh, okay, those are just for the inside.
6:24
- Inside, yes.
6:26
- Okay, so you still want me to butter...
6:28
- The top.
6:29
- Okay, and is this what we have for the top?
6:34
- Yes.
6:35
- Okay, and which butter is this for?
6:37
- That's for the top.
6:39
- Perfect. I'm gonna need some more crackers.
6:41
- Yes.
6:43
- I think I'm gonna need some more.
6:47
- I think so too.
6:49
So we've got this going.
6:53
And this is just amazing,
6:54
so what I do, I do add a little butter in the recipe,
7:01
about a half cup.
7:02
Yeah. (laughs)
7:08
Just for the moistness and the taste.
7:11
It's absolutely delicious, I love it.
7:14
See, they can't hardly tell it squash y'all. (laughs)
7:18
I tricked them and they love loved it,
7:21
they loved it.
7:23
So Paula is getting us ready for our topping,
7:26
and we're gonna put this in the oven
7:28
for about 25 minutes and let it brown,
7:32
because you must remember, the squash is already done,
7:36
so we don't have to bake it that long,
7:37
just enough for the ingredients to come in together.
7:41
So she's getting us ready for our topping.
7:43
- I'm getting you some more crackers.
7:45
- Okay, so meantime, I'm gonna spray the bowl,
7:48
'cause we do have to spray it,
7:50
and I'm going to get me some spray.
7:54
- Second drawer, baby.
7:55
- Second drawer, got it.
7:59
I got some butter spray, (Both laugh)
8:02
and I'm gonna spray this pan and get it ready.
8:10
Perfect.
8:13
- This little trick is so much better
8:15
than trying to dot the top of your casserole with butter.
8:19
- I'm learning something new from her, y'all.
8:21
Show me, Paula.
8:22
- Okay, if you'll just make your crumbs,
8:26
and then toss it in melted butter,
8:28
and that way every crumb has some butter
8:30
instead of just- - Perfect, I like that.
8:32
- Just little dollops. - I like that.
8:37
- So that is good.
8:39
- So we are ready.
8:40
I'm gonna pour it over in the bowl.
8:42
- All right, I'm going to snatch
8:43
a little butter from over here.
8:44
- Sure.
8:52
- (Paula) Love these toasted toasted cracker crumbs.
8:55
- (Q)Yes.
8:56
- (Paula) Oh, that casserole dish is perfect for that.
8:59
- (Q) It sure is, it sure is.
9:01
You know your stuff. (Both laugh)
9:05
- (Q) So we're gonna spread it.
9:06
- (Paula) I could eat it up and swallow it.
9:08
- (Q) And we're gonna do...
9:09
- (Paula) Looks beautiful.
9:10
You know what it looks like?
9:12
Looks like creamed corn.
9:13
- (Q) Corn, it sure does.
9:15
- That's how you got your children to eat it.
9:18
(Both laugh)
9:19
- So we're gonna do the crumbs,
9:20
the bread crumbs on the top, and the cheese.
9:23
- Okay, which goes first?
9:25
- I'm gonna do the cheese first.
9:28
- Now is that the Gouda cheese?
9:29
- This is the Gouda cheese,
9:31
which is my absolute favorite, and theirs as well.
9:33
- (Paula) Okay.
9:37
Wonderful.
9:39
I like Gouda. - Gouda's good.
9:41
It is.
9:43
Yes. - Good golly.
9:44
- Now we're gonna go with the...
9:46
- Okay. - Perfect.
9:47
- I got those buttered for you.
9:48
- Perfect.
9:49
We gonna pour these on,
9:51
and we just going to kind spread 'em on the top.
9:55
Oh, that gives it that good crunch.
9:57
- (Paula) That is gonna be so good.
9:58
- (Q) Oh my gosh, I can't wait.
10:01
- I can't either. - I can't wait.
10:04
- (Paula) I can't either, Q.
10:06
- I think La Chak is waiting on this one.
10:08
- (laughs) Is she?
10:09
- She's waiting on this one.
10:11
- I couldn't talk her into the-
10:13
- I know it. - Peanut butter.
10:14
No, but she's waiting on this one.
10:17
All right.
10:17
- You know what, I think I am too.
10:21
- So we're done with that,
10:23
and we're gonna put it in the oven.
10:26
- (Paula) Okay, I think I heard you say about 20 minutes.
10:29
- Yes, 20 minutes.
10:31
- (Paula) 20 or 25 minutes,
10:32
'cause the only thing that has to cook is the eggs.
10:34
- Right, exactly.
10:36
- Well guess who's joined us in the kitchen.
10:40
You finally got to meet the other half.
10:42
(Q laughs)
10:44
Michael is down there entertaining Chaka Khan.
10:48
(Both laugh)
10:52
You didn't know I could say that,
10:53
did you, Michael?
10:55
- No, but...
10:55
(Paula and Q laugh)
10:58
- So, I cannot wait to taste your casserole.
11:00
- All right, so this is-
11:02
- And Chak's sitting down there waiting on me, isn't she?
11:04
- Yes, she is, yes, she is.
11:06
So this is the squash casserole
11:09
that we just put in the oven.
11:12
And I just want you to look and see the bubbling.
11:16
It's so moist.
11:18
It's not dry.
11:19
That's the food of kids, don't forget.
11:21
- Yeah, and it looks like corn,
11:25
it looks like a corn casserole.
11:27
- It does.
11:28
- So I can see how she fooled her children with this one.
11:31
- Yes. - And I will say this,
11:34
Teresa did the prepping for us,
11:37
and she sliced that squash with a mandolin,
11:40
and she sliced it so nice and thin.
11:42
- Yes. - That it was like incognito.
11:48
- She did an amazing job.
11:50
- Now you're talking about hot.
11:51
- Yeah, this is hot.
11:57
- The next time I make swash casserole,
11:59
which is fairly regular,
12:04
I'm gonna use that mandolin.
12:06
'Cause to me, that's the secret.
12:10
- It is.
12:11
- (Crew) Why don't you show everybody
12:12
what a mandolin looks like?
12:13
It's in the bottom drawer. - Oh, okay.
12:15
- (Crew) It's on that.
12:16
- (Q) Right here?
12:16
- (Crew) Very bottom, kind of stuck to the back.
12:18
- I love it.
12:20
- It turns out it looks different for everybody,
12:21
but that's a great tool.
12:24
- This is mandolin,
12:25
it cut the squash perfect.
12:29
And you just kind slide it right here.
12:32
- And that's a cheap mandolin, y'all.
12:36
- Paula's eating and hadn't said nothing, y'all.
12:39
(Paula laughs)
12:39
I just want y'all to know that.
12:40
- Oh my goodness.
12:44
It's out of this world.
12:47
I may have to switch from mine to Q's. (laughs)
12:51
- (Crew) You don't have to tell anybody.
12:52
- Yeah, I won't
12:53
- (Crew) You can keep your secret.
12:54
- Oh my gosh.
12:55
- Isn't it yummy. - It is.
12:57
- You gonna let your friend just sit down there
12:59
and just crave it, but not get it?
13:02
(Both laugh)
13:03
- Say, isn't that what you're gonna do, Q?
13:07
- (Crew) You need another?
13:07
- Mm.
13:09
Michael.
13:10
- This is my job. (All laugh)
13:19
- (Paula) Chaka. - She gonna do this one.
13:22
- If there's any left, we'll let you have some, okay?
13:24
(All laugh)
13:27
- (Crew) Would you like a bowl?
13:27
I mean, would you like a- - Please, Teresa.
13:29
- Oh, I thought you were getting it, Teresa.
13:31
I was being a smart aleck.
13:34
- (Crew) You eat it Michael, and then I'll (indistinct)
13:37
Do you need to another spoon?
13:39
- No, I got plenty of forks.
13:41
- (Michael) Just delicious.
13:42
- I mean, it is wonderful.
13:46
And we wound up cooking that,
13:47
do you think we cooked it 30 minutes?
13:49
- Mm-hmm.
13:51
- I gave you more than a taste-testing size,
13:55
- Thank you.
13:56
because I think Chaka drove Q over here
14:01
with the promise of squash casserole.
14:03
(All laugh)
14:12
- (Crew) With that addition of the Gouda,
14:14
that's an unusual cheese to put in.
14:15
- Uh-huh. - Yes.
14:17
- Excuse, please.
14:18
- That's what makes it so Goud-a.
14:20
- Uh-huh, and that's why I said.
14:21
- Right.
14:22
- Goud-a be good.
14:23
- (Crew) We have our own resident comedian.
14:26
- Yes. - Yes.
14:28
- (Crew) He costs nothing.
14:30
- What would they do without him?
14:33
- (Crew) And we would send you anywhere.
14:35
- You think he costs nothing?
14:37
Wait until he tells you the latest
14:41
gift he wants for Christmas.
14:43
Or his birthday.
14:44
- His kids could drive me anytime.
14:48
- (Crew) What do you want for Christmas?
14:50
- Well, usually it's something that involves a motor.
14:54
Right?
14:57
- My garage is about full.
15:02
- My finger is not.
15:04
- Yeah, they are, yes, they are.
15:06
Leave it on.
15:06
- No, they're not.
15:08
- All right, so this is the squash casserole.
15:12
- You want some more?
15:14
- Got to try.
15:16
I'm just, I'm so glad that it turned out like it did.
15:20
- I'm good.
15:21
- And don't miss Mix it Up with Miss Q on YouTube.
15:25
Thank you.
15:27
- Our love, and best dishes.
