- Hey y'all, I'm Jamie Deen back in Mama's Kitchen.
0:03
I'm gonna be working two pots today.
0:05
I don't think I've done two pots on Mama's show,
0:07
so I might talk faster than normal today.
0:09
I got some oil heating up in here, y'all.
0:12
a pistachio crusted salmon filets
0:16
with a really quick homemade cream sauce,
0:20
a lemon cream sauce, that we're gonna do super simple
0:23
and we're gonna start with the roux.
0:24
So, I'm melting my butter.
0:25
As this oil's heating up,
0:27
I'm gonna take our salmon.
0:29
I told you we're moving today.
0:31
I got a shallow dish.
0:32
I've chopped up this salmon.
0:35
I did chop up the salmon 'cause I tried to take the skin off
0:38
of it and they're ain't a sharp knife in this whole house.
0:40
(pistachios rustling)
0:41
I'm embarrassed how the salmon looks.
0:44
But I did chop the pistachio nuts.
0:47
And we're gonna dredge these through our pistachio mixture
0:50
while we have our oil heating up and my butter's melting.
0:53
You see this is cooking here, y'all.
0:55
I got two pans and one telephone I'm talking to.
0:59
I don't want my pistachio nuts too big.
1:01
I mean I don't want 'em dusty either.
1:03
Make sure and take time to press those on.
1:07
Got me a wet paper towel for my hands here.
1:09
So, this salmon's only gonna take a few minutes.
1:14
All this should come together, hopefully at the same time.
1:18
So what I've done is I chopped our pistachios.
1:21
Ask your monger at your store to remove the skin.
1:24
And then I dredged it through our pistachios.
1:26
We got a little bit of butter going.
1:28
Now it's starting to bubble.
1:30
So to this, I'm gonna add our flour
1:36
and I gotta whisk this as we do it.
1:38
(whisk scrapping pan)
1:40
So, this is a traditional butter flour roux
1:42
(whisk scrapping pan)
1:44
to start and I'm gonna brown it off.
1:47
I want it to get a little bit deep brown.
1:50
This is the thickening agent for our sauce.
1:53
As that's cooking, I'm gonna take our filets.
2:00
Can't hardly hear it.
2:05
Into our pan I'm gonna cook this
2:06
for a couple minutes on each side.
2:11
You see what our roux's doing here?
2:14
This is a very small amount of butter
2:17
and flour that we're working with.
2:19
So, I'm not gonna cook it too long.
2:21
I'm gonna whisk in some heavy cream.
2:28
And that is how you start many a fantastic sauce.
2:33
I am gonna let this cook for just a minute.
2:35
I'm gonna turn my salmon up a hair.
2:39
Now if you wanted to you could always
2:41
do this fish in the oven if you'd like.
2:43
It's super easy to do salmon in the oven,
2:45
my wife loves to do that.
2:47
Actually, last week she cooked some
2:49
and after it was done,
2:51
let it cool and then made salmon cakes
2:54
and then we did 'em in a saute pan
2:56
and they were delicious with a little bit of panko.
2:58
We put an egg in there and we sauteed some peppers
3:01
that we like and some onion.
3:05
Every time I'm in front of y'all,
3:06
I'll always spend more time talking about things
3:09
I'm not cooking, than I am cooking.
3:11
I've got our chicken stock.
3:13
(whisk scraping pot) (salmon sizzling)
3:15
This is where I gotta work.
3:18
Breakdown this flour, the heavy cream
3:22
it started to brown on us.
3:24
(whisk scrapping pan)
3:36
I'm gonna add a little bit of garlic to this,
3:38
should have done that earlier.
3:40
(whisk scraping pan) (salmon sizzling)
3:42
Got two pots going, y'all.
3:45
I'm gonna put a little bit of white pepper in here.
3:48
White pepper goes a long way, I think.
3:50
I'm gonna add just a smidge of salt.
3:57
I'm gonna let this cook low until it starts to thicken up.
4:05
We're gonna take a quick break, y'all.
4:07
I got two pots going.
4:08
Gimme one second to get myself together.
4:10
Hey y'all, look we're back.
4:11
You hadn't missed anything.
4:13
I'm gonna turn our salmon.
4:17
This doesn't take any time to cook.
4:19
You could eat this straight out of the package too,
4:20
so do not overcook the salmon.
4:23
My filets don't look pretty,
4:24
but it's gonna be good I promise.
4:26
Can you see our sauce over here working?
4:30
- [Paula Deen] Kind sauce you making, son?
4:32
- It's a simple sauce, mom, that has lemon.
4:38
So we're gonna add our lemon zest right now.
4:46
So I started with just a simple roux
4:48
and a little bit of heavy cream.
4:49
Boy, that's a lot of lemon there.
4:50
- [Paula Deen] It sure is. - But I do like lemon.
4:52
(Paula laughing) I love lemon those
4:53
- [Paula Deen] And lemon is so good with fish.
4:56
(knife hitting cutting board)
5:00
- [Jamie] I'm gonna let this go for it.
5:02
That'll thin it out a little bit too.
5:03
So I'm gonna let this cook.
5:04
- [Paula Deen] What all do you have in there, son?
5:05
- We started with butter and flour
5:07
and then we added some chicken stocks, some heavy cream,
5:09
a little bit of fresh lemon.
5:13
- [Jamie] Y'all see how my salmon's kind of?
5:17
- [Jamie] Breaking up there.
5:18
- [Paula Deen] Yes, you don't want to over cook salmon.
5:20
And that looks like perfect, doesn't it?
5:27
- [Jamie] Really good.
5:28
- [Paula Deen] Y'all everything Jamie cooks is good.
5:31
He brought me, Michael and me,
5:34
he made pho the other night
5:38
and his repertoire goes out further I think than mine.
5:44
Don't you think, Theresa?
5:47
- Okay, y'all, I did not salt and pepper
5:49
the salmon when we got started.
5:50
So that's the number one first thing that
5:52
I noticed, that it needed a little salt and pepper.
5:55
And I think mom is right, this looks ready.
5:59
Mom, I have your breakfast salmon ready.
6:02
- [Paula Deen] Oh, yay.
6:04
- So I'm gonna take this ugly piece and then.
6:09
- [Paula Deen] Sometimes the ugliest taste the best,
6:12
- [Jamie] I'm gonna take that pretty piece.
6:14
- [Paula Deen] Like I love a ugly cake.
6:17
- [Jamie] All right, I'm gonna turn everything off.
6:29
And let's go just go with.
6:39
- [Jamie] Just a little bit of sauce.
6:41
I'm gonna do it down the center
6:44
'cause we can always come back and get more.
6:55
a little piece of lemon on here, make it pretty.
7:01
(knife hitting cutting board)
7:03
And since this is for mom, I'm not gonna mess this one up.
7:06
I'm gonna come over here into our pots.
7:10
- [Paula Deen] Oh, I can't wait, son.
7:12
- [Jamie] It's almost ready.
7:16
If y'all hadn't ever eaten off a cutting board,
7:25
I know it seemed kind of hectic, y'all,
7:28
but I'm trying to teach y'all how to do this
7:30
at the same time that I'm doing it.
7:31
When you got two pots going at the same time
7:33
it can keep you busy.
7:34
This is a really simple recipe though.
7:37
Salmon is a great food for you to introduce to your kids.
7:40
Then you put in the nutritional value of these nuts.
7:42
It's a double home run.
7:44
Let's see how it tastes.
7:50
(humming affirmatively)
7:58
The cream sauce smooths it out like you wouldn't believe.
8:01
The pistachios give a little bit of texture to the salmon.
8:05
Really, this is a fantastic recipe.
8:07
I hope that y'all enjoy it as much
8:09
as my mom is speaking to enjoy it.
8:11
Jamie Deen, appreciate it.
8:13
Hope y'all eat good food.
8:14
And I see you around the kitchen.
