Today's video is how to prepare an omelet.
0:10
Well, I think most of y'all probably know
0:12
how to make an omelet, but the recipe that I'm gonna share
0:15
with y'all is a pimento cheese omelet.
0:18
Now, I know a lot of folks outside of the South
0:25
has not heard of pimento cheese.
0:29
Well, down here, had you ever heard of pimento cheese,
0:36
Eddie, in New Hampshire?
0:37
- [Eddie] No, I don't think so.
0:39
So many folks in this world don't know about it.
0:42
Well, it's wonderful.
0:44
It is wonderful, we were raised up down here
0:47
on pimento cheese sandwiches
0:50
or a scoop of pimento cheese on your hamburger
0:55
and I love when I make a pot of vegetable beef soup
1:00
and then I'll make grilled pimento cheese sandwiches
1:04
to dip down in that soup
1:06
and it is tongue-smacking good y'all.
1:11
So if you're not sure how to make pimento cheese,
1:16
I don't recommend buying it
1:18
because it's just not the same as homemade,
1:21
but where could they go to find my recipe?
1:23
Didn't we do a video of it.
1:27
- [Lady] We did, a total of about 14 videos
1:32
So all they'd have to do is go to quarantine cooking
1:35
and then under search...
1:36
- [Eddie] Paul Deen YouTube.
1:41
And then in the little search button
1:44
they could put in pimento cheese, right?
1:46
And it would just come up for them.
1:49
- Or it's also in my very, very first cookbook.
1:58
So you'll just have to try making that.
2:01
It's wonderful, it's no trouble, but I do recommend this.
2:05
I do recommend you grating your own cheese
2:10
because the cheese it's already grated for us,
2:13
I know it's so convenient,
2:17
but try for your pimento cheese
2:19
to grate your own cheese of choice.
2:22
I use a medium cheddar,
2:24
sometimes I will mix it up with sharp and medium.
2:29
Sometimes I'll mix it up with medium and Jack,
2:37
you know, just another type of cheese.
2:40
And I like using a white cheese
2:42
and a yellow cheese together, just the way it looks.
2:45
So as my tips for your pimento cheese
2:49
and it calls for a little onion.
2:51
And when I recommend putting an onion in it,
2:56
you always wanna make it's grated, grated onion,
3:02
because it's that onion juice that you want so badly
3:06
for your pimento cheese.
3:09
So you don't wanna use a chopped up.
3:16
So this is omelet gonna be a two egg.
3:21
Do y'all know that there's a town here in Georgia
3:25
Two Egg, Georgia, did y'all know it?
3:28
- Did you know it, Teresa?
3:30
- [Teresa] I did not.
3:30
Did you know it, Mike?
3:32
Two Egg is in South West, Georgia down there in that area
3:36
near Albany, where (indistinct) is.
3:45
Mm, love whipping cream.
3:47
All right, I'm gonna need just a tablespoon of heavy cream.
3:53
If you don't have any heavy cream,
3:57
heck, I usually just put water in mine
4:00
because it seems to make it not as tough
4:11
A little salt, little pepper,
4:20
I've got a tablespoon of butter
4:23
and I've got some green onions.
4:29
So I'm going to start by heating our pan
4:32
and I did use a non-stick spray on our pan
4:40
because when you make an omelet,
4:43
you certainly don't want them to stick.
4:45
And they will stick on you.
5:05
Pimento cheese omelet.
5:07
Two large eggs, a tablespoon the heavy whipping cream,
5:10
1/4 of a teaspoon of kosher salt, one tablespoon of butter,
5:16
a third of a cup of pimento cheese,
5:19
two tablespoons of chopped green onions
5:22
and you'll need chopped green onions and diced pimentos
5:27
and a little more shredded cheese for your topping
5:32
So all we have Let our pan get up to heat
5:40
and when you're making an omelet y'all,
5:43
you you have to have one of these rubber spatulas
5:46
because you're gonna have to move your egg
5:51
around a little bit so that the uncooked part of the egg
5:55
can fall underneath the bottom of the omelet.
5:59
So I'll show you what I'm talking about.
6:02
So we got that beat up real good.
6:07
I like to make sure it's really beat well.
6:16
Coz I want this omelet to be fluffy like me, fluffy like me.
6:23
I'm not fat, I'm fluffy.
6:29
I think that's not enough y'all
6:30
cause I don't want my omelet to cook too fast.
6:35
I like cooking them on a slower lower heat
6:44
because I like my omelets done.
6:49
- [Teresa] Take your time.
6:56
I'm gonna inch up that heat just a little bit.
7:05
And you'll see that the outside edge
7:11
is going to get done first.
7:34
Just have to be patient.
7:42
And do you see what I'm doing?
7:45
I'm pulling away the edge that the raw can have its turn
7:58
on the bottom of the page.
8:06
So now I'm gonna add the good stuff half of it,
8:14
the pimento cheese, and you can put as much
8:19
or as little as you want, the recipe calls for 1/3 of a cup.
8:27
And you see I've taken this off of the eye
8:33
while I'm doing this because I want it
8:37
to have a chance to keep cooking.
8:40
And then I'm putting my green onions in there,
8:54
put it back on stove,
9:10
make sure it's well done.
9:27
Now I'm going to reach over Eddie and look for my spatula
9:35
I was at aunt Peggy's one time
9:36
and I looked over in her little container
9:40
and saw this spatula,
9:41
I said, where did that come from?
9:45
And she said, oh, I don't know.
9:47
I've had it for years.
9:48
I said, well, I sure do like it.
9:50
And she said, well, take it.
9:53
So I took it, I like it.
9:57
- So I'm gonna try to get under here
10:02
and flip that omelet just like that.
10:09
I'm gonna turn that down
10:12
And I'm gonna top the top of the omelet
10:18
just with a little bit more cheese, not a whole bunch,
10:31
just to let people know what it is,
10:33
I'm topping it with some pimento.
10:37
And then I'm gonna top it with a little bit more of my onion
10:43
and there our pimento cheese omelet.
10:49
This makes a wonderful dinner.
10:51
You know, I love breakfast for dinner, sometimes.
10:57
And it's just that simple.
10:59
It's a very, very easy to make.
11:01
You have to be patient, cook them a little slower
11:07
than you would if I was standing up here
11:10
frying two over medium eggs.
11:13
Like I said, it makes it a great dinner,
11:16
makes a great brunch recipe or a great breakfast recipe.
11:25
So let's see what we got.
11:28
Our pimento cheese has started melting,
11:35
oh, oh, I almost got it.
11:42
I want some of those pimentos.
11:58
The twang from the pimento cheese is just delicious.
12:03
So y'all enjoy, one night when you think, oh,
12:06
I don't have anything to cook for supper,
12:09
make an omelet, input anything thing you want to in it.
12:15
I love shrimp omelets.
12:17
Mm, this is delicious.
