0:00
- Hey all my dear friends out there.
0:03
Today, I'm gonna share a recipe with y'all
0:05
that came outta "Cooking with Paula Deen Magazine,"
0:08
and you know, it's a perfect Easter dish
0:13
because I'm gonna share our recipe with baby carrots
0:20
because you're so synonymous with a baby rabbit,
0:24
and baby rabbits eat carrots.
0:28
So see, it's all kind of kin, isn't it?
0:32
So let me cut on this eye,
0:35
and I'm gonna start by melting half a stick of butter.
0:40
Oh, so let me tell y'all.
0:42
Maybe one of y'all can help me.
0:46
Phyllis Diller is crowing
0:53
We could not believe the first time we went out there,
0:56
or I heard her, the last day or two
1:00
since getting back from my trip. (imitating rooster crowing)
1:04
- [Camera Operator] I heard her at 6 A.M.
1:05
this morning. (laughter)
1:11
- Her name may be Phil instead of Phyllis.
1:15
- [Theresa] Oh, she's a neighbor.
1:16
- So what kind of chicken is she? She's one of-
1:18
- [Camera Operator] She's a Polish chicken.
1:21
So Eddie immediately went onto the internet, right?
1:25
I'm putting my garlic in, y'all, and my shallots.
1:31
So Eddie immediately went on the internet to find out,
1:36
do female chickens actually crow?
1:41
Well, it turns out that a Polish chicken
1:50
a female Polish chicken can crow.
1:54
- As a protection mode if they're being picked on.
2:00
- [Theresa] She must get picked on.
2:01
- Yes, they pulled every one of her hairs that stick up.
2:05
- [Theresa] Yeah, they're mean.
2:06
- Almost every one of 'em.
2:08
Okay, so just for a couple of minutes on this, y'all.
2:13
Wanna be careful cause garlic will burn on you
2:15
and once it burns, I have to throw it out.
2:22
All right, so I'm gonna add two cups of orange juice.
2:30
So this is gonna be a wonderful, wonderful glaze, y'all.
2:35
I'm gonna add one teaspoon of salt,
2:41
half a teaspoon of black pepper,
2:44
and if you're feeding young ones on Easter,
2:49
you may wanna leave out the pepper.
2:53
All right, now I'm adding the honey as our sweetener,
3:03
and hopefully the honey will help make this kind of sticky.
3:08
So right here, we're gonna cut because this,
3:12
it's probably going take about 12 to 15 minutes to reduce
3:17
down to a cup and a half.
3:19
And you're gonna want to stir occasionally.
3:23
So when it's appropriate stage
3:30
then we'll come back, and we'll finish.
3:32
But while that's doing, while we're breaking,
3:35
I think I'm gonna go ahead and take our carrots
3:40
and spread 'em on our sheet pan and go ahead and toss them
3:45
with the olive oil, and we'll have that done.
3:49
So when that's ready, we'll be ready.
3:55
So we'll see y'all back when this is right.
3:59
All right, so I'm gonna toss them in some olive oil,
4:04
and then I'm going to throw 'em in the oven
4:05
for about 10 minutes while our sauce is thickening up.
4:17
Okay y'all, it probably took a good 15 minutes,
4:21
wouldn't you say, Theresa?
4:24
- For this to reduce, and I actually reduced it
4:26
down a little, little bit under a cup and a half
4:29
because I do want this glaze to be able to do
4:33
what it's capable of.
4:42
kind of getting to a sticky stage, I hope.
4:47
Cause you can see it starting to coat the spoon.
4:51
Oh my gosh, it's gonna be so good.
4:56
You wanna just stir 'em around a little bit,
5:00
make sure they're all coated.
5:02
So we were fine reducing it a little bit more
5:08
than a cup and a half, yay.
5:12
- [Theresa] And they've already cooked for 10 minutes.
5:13
- Just borrow one of these.
5:16
I washed these yesterday or day before yesterday.
5:19
They had so much grease on 'em.
5:24
Just spreading that out a little bit.
5:26
Trying to get some down there in that corner.
5:36
So 10 more minutes and they'll be
5:40
maybe some of the best carrots you ever put in your mouth,
5:45
said the Easter bunny.
5:48
So y'all, our carrots went back in the oven
5:51
after I put the orange juice mixture back on it
5:55
and look. They are perfect. They are so beautiful.
6:01
And, I mean, they're just outta the oven
6:03
and it's still hot as a firecracker,
6:12
These are so delicious.
6:17
And the carrots held its integrity
6:24
because there's not a load of sugar.
6:26
Just a little bit of God's honey.
6:30
- They are wonderful.
6:32
So Easter is on its way.
6:36
Hippity-hoppity Easter is on its way.
6:40
- [Theresa] And you're gonna have a hundred bunnies
6:41
when it's all said and done.
6:42
- Yeah. (soft laughter) Probably.
6:44
But please try these for your Easter meal.
6:49
You won't be disappointed and go right by the directions
6:56
and they will be perfect every time.
7:00
And hopefully this will help remind us
7:03
of what Easter is all about.
7:07
It's really not all about Bugs Bunny.
7:14
It's about our renewed life.
