0:00
- Good mornin', y'all.
0:03
I am gonna share with y'all today,
0:06
a recipe for Nana's Blueberry Muffins.
0:11
Now this has been in our
0:14
wheelhouse for so long,
0:17
for so many years,
0:19
I can't remember who gave it to me,
0:24
whose nana gave it to me.
0:26
All right, so is this come from one of our cookbooks,
0:29
or has it just been on the website?
0:31
- [Theresa] It's on our our website.
0:31
We had somebody, somebody submitted it to us years ago,
0:34
and we used the recipe.
0:35
- Oh, okay.
0:37
And the reason why we're doing this is because?
0:41
- [Theresa] It is literally
0:42
one of our highest-rated recipes,
0:45
and it's extremely simple. - Okay.
0:46
Okay. - And it's the season where
0:49
people are doing things for their kids,
0:50
and the grabs-and-gos,
0:53
and it's a good grab-and-go. - Back to, yeah.
0:54
- Back to school. - Back to school, yes.
0:57
- [Theresa] Plus, who doesn't like a good blueberry muffin?
1:00
- I love a good blueberry muffin.
1:02
But I have to say the,
1:05
I now use the recipe for blueberry muffins
1:08
that is in "Paula Deen's Southern Baking" book.
1:12
It is so wonderful.
1:14
Has a almond, a strudel topping on 'em,
1:17
and it's wonderful.
1:19
But then it's hard to beat just a standard,
1:24
you know, homemade grandma's blueberry muffin.
1:27
So that's what we're gonna do.
1:30
And I've always been under the assumption, y'all, that
1:36
you don't ever use a, have to use
1:38
an electric mixer when you're makin' muffins.
1:41
Because you just are supposed to stir it together
1:45
until the dry ingredients have all
1:49
gotten moist, been moist.
1:52
But on Nana's, she said to beat your butter
1:58
and your sugar together until creamy, a light creamy color.
2:02
So that's what I'm gonna do.
2:04
I've got one stick of butter and...
2:11
1 1/4 cups of sugar.
2:15
(mixer whirling)
2:16
- [Theresa] Paula, that has a little bit of salt in it,
2:18
and I did not know that-
2:19
- Yeah, I hadn't gotten that far,
2:23
but I'm definitely gonna put some salt in it,
2:28
even if it doesn't call for it, because, I, listen...
2:34
Yeah it does. It calls for 1/2 teaspoon of salt, Theresa.
2:38
(beaters rubbing)
2:44
Okay, so we're addin' two eggs, one at a time,
2:49
beating between each addition.
2:52
(mixer whirling)
2:59
And then, we're gonna add our flour
3:06
and our milk.
3:11
We're gonna incorporate,
3:12
excuse me, I got to wash my hands, one second.
3:16
I got that raw egg on them.
3:18
(water running)
3:19
Made 'em sticky, sticky, sticky.
3:23
All right.
3:25
I'm going to add two teaspoons of bakin' powder.
3:33
(cup tapping)
3:37
And about a 1/2 teaspoon of salt,
3:47
'cause I do want the little salty
3:50
with my sweet, don't y'all?
3:52
- [Theresa] Mm-hmm.
3:54
- Yes, ma'am.
3:56
(whisk crunching)
4:03
So from here on out, we're gonna do this
4:05
just like we would
4:07
if we were makin' a cake.
4:10
(whisk tapping)
4:10
We're gonna alternate
4:14
flour and milk, startin' with flour and endin' with flour.
4:25
(mixer whirling)
4:27
I'm not used to this mixer yet.
4:32
Okay, here we go.
4:34
Probably gonna fly all over the place.
4:37
(mixer whirling)
4:58
(beaters rubbing)
5:13
Okay, y'all, we got our batter to our blueberry muffins.
5:16
And the recipe just says to gently fold in the blueberries.
5:21
Well, after spending 50 years in the kitchen,
5:25
you know, you just, you pick up little things.
5:28
And to me...Thank you, Theresa!
5:31
- You're welcome. - Ah, to me,
5:36
I like to toss my blueberries,
5:38
or any kind of fruit I'm doin',
5:40
if you're doin' raisins or whatever,
5:43
I like to toss 'em with just a little bit of flour.
5:46
And that prevents them from
5:50
goin' all to the bottom,
5:51
'cause you want your blueberries to go all through.
5:57
So the recipe doesn't tell you to do this,
6:00
this is just Paula. (laughs)
6:04
This is just Paula tellin' ya.
6:07
So like I said, I don't wanna...
6:11
I'm gonna put these in the colander now,
6:14
'cause I don't want to, if I can remember
6:17
which drawer the colander is in, y'all. (laughs)
6:21
Here it is!
6:23
Here it is. Eddie knows.
6:25
(metal clinking)
6:28
Okay, so I'm gonna come down here to this sink, Eddie,
6:33
and just shake any excess flour off of 'em.
6:42
'Cause I did put a little too, too much flour.
6:46
'Cause I don't want so much flour
6:48
that it's gonna alter our recipe, ya know?
6:52
We just want to
6:56
make sure our blueberries
7:00
(bowl clanks)
7:01
go all through our muffins.
7:12
(berries swishing)
7:16
That looks like it's got it all, didn't it, Eddie?
7:20
So we're gonna gently fold those.
7:25
And we don't wanna beat 'em up.
7:27
We wanna be kinda gentle with 'em.
7:32
And this is gonna make 12 regular-size muffins.
7:41
- [Eddie] It's a thick batter, isn't it?
7:42
- It is a thick batter.
7:51
I wanna try to get those blueberries
7:56
evenly distributed in there,
7:59
'cause I don't want somebody to get a naked muffin. (laughs)
8:04
All right, so we don't know where
8:06
our ice cream scoops are, right, Eddie?
8:10
- I know where they are. - You do?
8:12
- [Eddie] I just can't get to 'em.
8:13
- Oh, (laughs) okay.
8:17
Well, I love usin' an ice cream scoop,
8:22
because you gonna get the same size every time,
8:26
and it's got the little handle,
8:27
and it just scoops it right on out, but,
8:33
we gonna do it this a way.
8:35
And I'm gonna try to get it right.
8:40
Okay, so I didn't tell y'all this earlier,
8:47
but the recipe asks you to hold back
8:51
two teaspoons of your sugar,
8:56
so that you'll have some extra sugar to
9:01
sprinkle on your...
9:06
Yeah, it's sugar. (laughs)
9:09
Just, you know what?
9:11
That turbinado sugar
9:13
would work good in this
9:16
for the top of your...
9:19
But I've got this out, so I'm gonna use it.
9:35
Okay, there we go.
9:37
We're gonna put these in the oven, y'all, at 350.
9:40
And we're gonna bake 'em for about 25 to 30 minutes.
9:45
But just be careful, 'cause all ovens
9:47
can vary and be different, so.
9:51
But we gonna shoot for 25 minutes on ours.
10:01
(pan thuds)
10:05
Can I tell y'all (laughs)
10:08
how many butts shots (laughs)
10:11
Gordon Elliot got of me in this oven? (laughs)
10:17
I'd say, "Gordon, please no butt shots.
10:19
Please, no butt shots!"
10:22
Well y'all, Nana's Blueberry Muffins
10:25
look like they turned out perfect.
10:28
And you know, I hadn't cooked on this stove in 12 years.
10:32
So I've got to have it calibrated,
10:34
because Eddie and I both
10:37
think it's cookin' a little on the fast side.
10:41
- [Eddie] It's cooking at 450 at 350.
10:44
- At 450 at 350. (Eddie laughs)
10:46
Yeah, I think somethin's off.
10:48
But Teresa has already grabbed a muffin.
10:53
- [Theresa] Yeah, I had to taste test.
10:55
- And tested it.
10:59
So I wanna, I wanna test it.
11:02
And my decoratin' buddy is here.
11:06
Carolyn Hultman, who decorates all of our restaurants,
11:10
all Paula Deen's Family Kitchens and all that.
11:14
So I'm gonna...
11:14
And Carolyn's been out West.
11:17
So share half of that with me, Carolyn.
11:19
- Oh, I'd love to.
11:22
- Carolyn has decorated
11:25
restaurants from Nashville to
11:29
Panama City to Foley, Alabama.
11:31
- Branson. - To Branson, Missouri.
11:34
(Paula laughs) - Mm-hmm.
11:34
- So, cheers.
11:36
- [Carolyn] We've had a lot of fun together.
11:37
- [Paula] Let's see, this is...
11:40
- [Theresa] Nana's Blueberry Muffins.
11:42
- [Carolyn] Mm! Mm!
11:44
Yum! - They're delicious,
11:45
aren't they? - Mm-hmm, absolutely.
11:47
- [Theresa] They're nice and fluffy.
11:49
- Mm-hmm.
11:51
Delicious.
11:53
And I love these with sweet...
11:58
with a little sweetened cream cheese.
12:03
Mm, maybe sweetened with a little honey.
12:04
- That would be good. - Mm-hmm!
12:07
- [Carolyn] These blueberries are really good.
12:09
- Aren't those blueberries beautiful?
12:11
Look at that.
12:13
And tellin' everybody that
12:20
if they'll dust their blueberries with flour.
12:24
You know, sometimes they'll all fall to the bottom,
12:27
and all your blueberries'll be down there.
12:30
But, if you dust 'em with flour, Carolyn,
12:34
it keeps them distributed. - Is that the trick?
12:37
- Mm-hmm, mm-hmm.
12:39
- [Carolyn] Oh, my goodness.
12:40
This is just yummy.
12:42
- I think so too. You want some butter?
12:44
- Hmm.
12:46
- (laughs) Let me show you,
12:47
let me show you this little bag I found.
12:51
I'm gonna bring it over here so y'all can see it.
13:00
When I saw that, I said that is the truth,
13:02
as sure as I'm (laughs) standin' here.
13:05
- [Carolyn] That is so funny.
13:07
- Read it Eddie. Can you read it?
13:10
- [Eddie] Can I read, it? Yeah.
13:11
"Money can't buy happiness,
13:13
but it can buy cows.
13:14
And cows make milk.
13:16
And milk makes ice cream.
13:18
And ice cream makes you happy."
13:21
- Happy. - Happy, happy, happy!
13:24
(Paula laughs)
13:27
I had to have that.
13:28
I thought that's, that's the way I think.
13:32
So enjoy the recipe.
13:35
Y'all have a great day.
13:37
And I'll see ya on the next round of recipes.
