But it's a really straightforward, great, easy dish.

it's called a cauliflower,

Mediterranean cauliflower casserole.

That was easy to say, right?

Okay, so I've already boiled and drained my cauliflower.

It's soft and tender over here.

So the next step in the process is

onion sauteed in our skillet.

And we're just gonna let this saute for a couple of minutes.

Get a little color to it

before we add our garlic and our Kalamata olives.

and it also happens that I like cauliflower.

It's a simple bake and I think you're gonna like it.

So the ways that we're cutting some corners are,

I'm going to use some pre-minced garlic, okay?

And I know that people have feelings,

You can mince it yourself at home.

I have a garlic mincer and generally

I mince fresh garlic, whenever I'm using.

this is a really simple way to cut down

and have to do a little bit less work.

canned diced tomatoes

but you know when I'm at home,

I usually take grape tomatoes or vine ripe,

whatever I have, and throw 'em into a food processor.

but really simple to just use canned tomatoes

So my wife Claudia, makes a lot of cauliflower rice.

and it's a great way to kind of trick your kids.

Sometimes you have to do that or we,

you know, you hide things inside macaroni and cheeses.

You do all sort, you learn all sorts of little tricks

So what we're gonna do is,

have our cauliflower in our casserole dish here.

Get those onions nice and tender.
