- Hey y'all, it's Jamie Deen here today.
0:01
I'm gonna share a delicious fall recipe with you.
0:04
You know why I call it a fall recipe?
0:05
Cause we're using acorn squash.
0:08
Now, what is an acorn squash?
0:10
I don't know.
0:10
It's a squash.
0:11
But it's kinda like an acorn.
0:13
It's a fall gourd vegetable that we love.
0:17
I've been making these for a long time.
0:19
They're super simple.
0:19
My mom's made them at home my whole life.
0:22
Here's another little benefit to 'em.
0:24
It is perfect for baby food.
0:27
Our third son Davis is nine months old
0:29
and Brooke makes all of his baby food.
0:31
Which is not as hard as you might think.
0:33
She follows this recipe,
0:35
although we don't use any sugar in it.
0:37
And then you just put it in a blender, whip it down.
0:39
We put an ice cube tray, we freeze it
0:41
and then we thaw two of those out
0:43
and that makes up his lunch.
0:45
So it's not only good for you,
0:46
it's good for your babies too.
0:48
So we got two acorn squash here today
0:51
and we're gonna slice and deseed.
0:53
But the first thing we're gonna do,
0:54
is get a little sauce pan going.
0:56
I know you like measurements here.
0:58
So I'm gonna read.
0:59
Make sure I do this exactly right.
1:00
Five tablespoons of butter,
1:02
three tablespoons of light brown sugar,
1:05
two tablespoons of maple syrup
1:07
and two teaspoons of fresh top charm.
1:11
So thyme.
1:13
Chop charm. - [Lady] Chop charm.
1:15
(lady laughs)
1:17
- So I'm gonna put my butter,
1:19
in our little sauce pan that we had going here.
1:21
I'm gonna get it.
1:23
This won't take but just a couple of seconds.
1:24
What we really want to do, is melt the butter
1:27
and introduce it and get it married to our brown sugar
1:33
and our syrup too.
1:35
This is gonna bake in the oven for one hour.
1:38
So this is one of those recipes
1:39
that if you find yourself with time in the morning
1:41
or the afternoon, you can fix this ahead of time.
1:44
And if you'd like to whip it up later,
1:46
you can mash it and serve it to your family.
1:49
Or you can do it an hour before dinner time.
1:51
We like to eat it right out of the gourd.
1:53
That really makes it fun for the boys too.
1:56
So let's get our butter melted down here.
2:01
And we're gonna add our brown sugar.
2:06
Get our maple syrup down in here.
2:12
It's always time for thyme.
2:15
(lady giggles)
2:17
You like that one mom.
2:18
- [Lady] I like it.
2:19
- So this is it.
2:20
Once our butter and our sugar and our syrup
2:24
and the thyme gets all together.
2:26
This is all the ingredients
2:28
that we have going into our roasted acorn squash.
2:31
Save for just a little pinch of salt and pepper
2:34
that we're gonna do.
2:36
Oh, this is melted down here.
2:38
Why don't we step over to the cutting board
2:41
and let's get our acorn squash ready.
2:45
So we've got a knife here.
2:46
I'm gonna cut it down a sim.
2:53
It's like carving a pumpkin.
2:55
So you wanna be careful.
2:56
Use a nice long knife, crunch fingers and toes.
3:02
We'll cut right through the center.
3:03
It looks just like a pumpkin on the inside.
3:07
Gonna pick a good sim here.
3:14
Straight through
3:14
and then I give the knife a little twist at the bottom
3:16
to help pop the cord off the top.
3:21
We wanna save as much of this meat as we can.
3:23
So just be careful to get all those little strings
3:28
that keeps the seeds connected to the inside
3:32
of the acorn squash.
3:33
We wanna go just deep enough
3:36
to get all those guts out of there.
3:39
It's a lot easier than carving a pumpkin.
3:41
(spoon scratching the acorn)
3:49
Just take time and make sure
3:50
that you don't wanna eat any of those things.
3:53
It's not as good.
3:55
It's like leaving corn silk on a corn.
3:58
You don't want any acorn squash silk
4:01
to pop up when you're eating your roasted acorn squash.
4:10
(bangs spoon on the bowl)
4:11
(spoon scratching the acorn)
4:19
Now, don't you for one second,
4:21
think that this is too much trouble.
4:23
For this little bitty acorn squash,
4:27
I promise you,
4:29
you are gonna love how delicious this is.
4:32
So while I've got this open,
4:34
I'm gonna take just a little bit of salt.
4:36
Sprinkle it on the top.
4:41
We love the savory and the sweet around here.
4:45
Little bit of pepper.
4:46
Just to kinda balance everything out.
4:49
Just a little bit.
4:50
I'm gonna take these four,
4:52
I'm gonna put them on a cooking pan.
4:57
Right there.
5:02
This couldn't be more easy.
5:04
Make sure you got a nice stable base.
5:06
If you've got a rocker, if you want to,
5:08
you can always come in and take a little bit off
5:13
just enough to find you a flat edge.
5:16
Being careful not to cut all the way through
5:18
because these little vessels are gonna hold all of this.
5:28
Look how delicious that looks y'all.
5:31
Mmh. Mmh.
5:33
(bangs spoon on pot)
5:36
Just use my same spoon.
5:38
(water splashing on spoon)
5:40
(bangs spoon on sink)
5:42
I'm gonna try to divide this equally
5:45
between these as I can.
5:48
I'm gonna start with three tablespoons.
5:53
- [Man] It's like a savory caramel sauce.
5:56
- Yeah. You cannot go wrong with butter and brown sugar.
6:02
The maple syrup adds itself to this dish too.
6:05
It goes really well with the acorn squash.
6:09
And now you see, I've got three tablespoons in each.
6:12
So now I'm gonna take my little pastry brush
6:16
and I'm gonna take care of the brush the sides.
6:19
Cause we want everything covered with this flavor.
6:25
Most of this is gonna cook off
6:27
or absorb into the acorn squash.
6:29
So don't think
6:30
that you're gonna be eating a bowl of syrup.
6:33
By the time this is over,
6:34
this is gonna cook down and it is gonna be delicious.
6:45
Mmh. Perfect.
6:49
I love it when a recipe looks good before you even cook it
6:53
and this looks delicious.
6:58
I got a oven y'all preheated at 400 degrees.
7:02
- [Mom] I wanna see.
7:03
- This is it Mom.
7:05
Look how pretty this is.
7:05
You can actually open the oven for me, please.
7:07
- Oh my gosh!
7:08
That looks delicious Jamie.
7:11
Mama used to make those and she put brown sugar butter
7:15
and little pineapple tidbits in it.
7:18
- Yeah, that's a good idea too.
7:19
- And we'd eat it right out of the shell
7:20
like you's talking about the children.
7:22
So I'm hungry.
7:23
- So that's it.
7:24
I'm gonna feed her acorn squash in one hour.
7:27
(Mom cheers and claps)
7:29
Hey, I'll let you in on a little secret.
7:31
Whenever we get the chance to come over here,
7:34
it's kinda hard to coordinate all of us together
7:36
and I'm watching the clock.
7:37
Cause I gotta pick up my kids from school today
7:38
because my wife's got somebody coming in the house.
7:39
Cause they gotta have something done.
7:40
Y'all know how that is.
7:42
I've done four or five recipes today,
7:44
but I'm here to tell you,
7:45
this is the end of the acorn squash recipe.
7:48
It's ready.
7:49
It's been in the oven for an hour.
7:52
Let's have a gander. Shall we?
7:54
- [Man] Whoo. Ah.
7:56
- Now y'all be careful.
7:56
Cause this is hot.
7:59
Hard.
8:02
Now you see, this has retained
8:03
a little bit of that liquid that we had in there.
8:05
So before I serve this to my family,
8:07
this is a little tasting cup.
8:09
This flavor has been sitting in there
8:12
and it's just been soaked up by this acorn squash.
8:16
That's a little too much for me to serve.
8:19
I'm gonna tip it over.
8:21
I'm gonna leave the inside moist.
8:25
But I don't want it quite so full.
8:28
I'm gonna give it a little tip.
8:30
Y'all be careful cause that's hot.
8:31
It was been in the oven for an hour.
8:35
Look at that.
8:39
- [Mom] Owen, you need to come taste this.
8:40
- Now you might not wanna eat two.
8:42
A whole acorn squash at one time.
8:46
But for a side dish,
8:47
of anything that you're doing at your house,
8:48
most especially this time of year in the fall or the winter
8:51
or the late winter, this is a delicious compliment
8:54
to anything that you're cooking.
8:57
A nice slice of pork.
9:01
See that, you just eat it right out of that little cup.
9:04
- [Mom] How you do it?
9:06
- Bring it down in there.
9:07
Like anybody has ever had to tell you how
9:09
to get food out of something. (mom laughing)
9:11
Eat the one that I've drained the syrup out of already.
9:13
- Well, I was gonna get my straw.
9:17
I kinda like the looks of these.
9:19
- [Jamie] Mmh.
9:21
- [Mom] And just pull it apart
9:22
and deep down in that wonderful sweet soup.
9:26
- Oh my gosh!
9:28
Y'all, I'm not kidding you.
9:32
The brown sugar and the butter
9:33
and the syrup and the earthiness of this gourd vegetable--
9:38
- Have you ever thought how different you and I are?
9:41
- Everybody's different mom.
9:42
Everybody's kind of the same
9:43
but there's a million different things
9:45
with every person that makes us all different.
9:46
That's what I tell my kids.
9:47
Everybody's kind of the same,
9:48
but everybody's completely different.
9:50
(Mom giggles)
9:52
- [Lady] That's what makes the world go round.
9:53
- That's what makes the world go around.
9:55
I say it every day.
9:56
- Mmh.
9:57
I see what I like.
9:59
I like all that juice.
10:03
You certainly don't need it.
10:04
This is really delicious and real easy--
10:06
- I know cause I'm sweet enough. Right?
10:07
(lady giggles)
10:09
Is that right? - [Lady] Of course.
10:11
- I'm gonna hold my tongue so it helps on the editing,
10:14
but sure you're sweet enough.
10:17
That's it y'all.
10:18
Really delicious acorn squash.
10:20
- It's hot--
10:20
- Give it a try. Let us know what you think.
10:22
- Well, I'm trying.
10:23
I'm trying--
10:24
- Not the best dishes?
10:25
- I gotta get my kids from school. Eat.
10:27
- Get your own tagline.
10:29
- Y'all do good things and love one another.
10:30
Thanks y'all
10:31
- You gotta to push.
10:33
We're not going anywhere till I taste this.
10:36
- Well, take your time.
10:36
- Get your own tagline.
10:38
- I just dropped it.
10:39
- What you drop?
10:42
- I'm gonna save everybody on the editing.
10:44
You're right mom.
10:45
I'll get my own tagline. What do you think about the squash?
10:47
(Mom laughing)
10:48
I'm always worried.
10:49
Cause we give each other such a hard time.
10:51
I want y'all to know,
10:52
I love my mama more than anything.
10:54
- Oh.
10:55
- She's so sweet and has achieved more in her life
10:57
than most people ever would dream to do.
11:00
- Mmh.
11:01
Oh son, come here. Mmh.
11:03
- It's good y'all.
