- You know, I just wanna suggest something to you.
0:06
If you don't subscribe to my magazine,
0:11
you can find it in some stores.
0:17
I know Publix up here carries it,
0:19
and I don't know who else,
0:26
it's been on sale for like $16.95 for a year's subscription.
0:32
And I would highly, highly recommend
0:36
that that would be a brilliant way to spend $17
0:41
because you'll get so much use out of it.
0:44
And this recipe that I'm gonna share now was
0:48
in one of the issues of Cooking with Paula Deen Magazine.
0:52
And you talking about a beautiful, delicious, easy dish.
0:58
And I'll even show you the picture
1:00
of what it's gonna look like when we're through with it.
1:06
All right, so in a cast iron pan.
1:09
And I'm using, I'm not trying to peddle anything,
1:14
but I am just so proud of the latest addition
1:20
I now have a cast iron, enamel clad, no stick on the inside.
1:29
I just love it. I'm so proud of it.
1:31
I don't know if it's in our stores yet.
1:33
Does anybody know? It is in the stores?
1:36
And you'll think it's another brand when you see it.
1:43
It's really, really good.
1:48
Okay, I'm gonna put a tablespoon of butter in there.
1:55
And I'm gonna throw in a small chopped onion.
2:02
And I'm gonna let that cook
2:07
for five or six minutes until it's kind of soft.
2:13
And then I'm gonna add some garlic.
2:15
But you know, garlic will burn. It will burn.
2:19
So I might put that in there
2:23
a little towards the end of the onion cooking.
2:27
Okay, so that's got just enough butter in there.
2:31
And we've got some chicken stock,
2:33
we've got some lemon juice, we've got some capers,
2:37
we've got peeled and de-veined shrimp.
2:41
And I have a little bit of wine,
2:46
and I have a half a box of angel hair pasta.
2:53
And I think one thing attractive
2:56
about this recipe is we're not gonna have to
3:00
boil a pot of hot water to cook our angel hair
3:03
because it's just gonna cook naturally
3:06
from the heat of our ingredients in our pot.
3:12
All right, so I'm gonna go ahead and throw in our garlic.
3:19
And I will keep a close eye on that
3:21
because like I said, garlic can burn so quick.
3:25
Okay, our onions and our garlic are just like perfect.
3:32
And I've watched over that garlic,
3:35
so it has not gotten brown or singed at all.
3:37
So I'm gonna add our chicken stock,
4:01
I'm gonna bring this,
4:03
let it come back to a boil.
4:05
And I'm gonna let it reduce by half.
4:09
So that may take 10 minutes,
4:11
maybe 15 depending on how fast I'm cooking it.
4:16
So I am gonna turn it up because I had put it
4:20
on low because I didn't wanna burn our garlic.
4:23
So we're getting very close to the end of this dish.
4:27
All right, I've been walking around waiting
4:30
for our chicken stock and our white wine to reduce
4:33
down to about half what we started with.
4:36
And so I think it's about there.
4:39
So the next thing I'm gonna do, no letters, y'all.
4:45
Don't write me any letters saying
4:47
"Paula, you're trying to kill us."
4:50
No, I'm not trying to kill you.
4:51
But shrimp and pasta,
4:56
you put those two together and they call for butter.
5:00
So I'm putting one cup of butter
5:03
into our pot and I'm gonna stir that until it's melted.
5:13
Occasionally I'm gonna stir it.
5:17
And then I've got my half a box of angel hair pasta.
5:24
But after our butter melts,
5:30
I'm gonna add our shrimp and our capers
5:32
and I'm gonna let that cook for about one minute,
5:35
and then I'm gonna put my pasta in the pot.
5:42
And I'm gonna cook it maybe for six, seven,
5:45
eight minutes, something like that
5:49
until I think the pasta is done to my liking.
5:53
I don't like pasta al dente, so.
5:57
I like it Georgia way, soft, soft pasta.
6:05
Turning the heat up a little bit.
6:08
I'm gonna go in with our two tablespoons of capers.
6:14
And y'all notice I have not put any salt in this dish
6:20
because capers contain a lot of salt and so does butter.
6:25
I don't use unsalted butter.
6:27
I always use salted butter, even in my baking,
6:31
because I like the savory with the sweet.
6:35
So to me that's what makes my pound cake so good
6:41
is because I put salt in them.
6:48
All right, so we're gonna cook this for about one minute.
6:54
Let those shrimp get a little head start.
6:59
And then I'm gonna put in our pasta.
7:03
All right, our pasta has come back to a low boil.
7:11
I'm just gonna snap our pasta in two.
7:20
I wanna make sure that gets down in all of our liquid.
7:33
It didn't do too bad, did it, Eddie?
7:38
Okay, now we're gonna put the lid
7:40
on this and we're gonna cook it, like I said,
7:42
another six to eight minutes,
7:44
stirring it occasionally.
7:46
I'm gonna turn the heat down some
7:49
because I did have that fire roaring.
7:53
And this is gonna be ready to eat in no time.
7:58
I'm just gonna put a little bit
8:20
I love just buttery pasta,
8:23
y'all find that one hard to believe too, but I do.
8:32
So do my grandchildren.
8:33
I'm kind of with them on that.
8:49
This dish has got no salt and no pepper.
8:54
So please don't be tempted to add any
8:58
because you'll have it too salty.
9:01
The ingredients in there are plenty,
9:03
has plenty of salt in those.
9:07
This is good enough for company, y'all.
9:13
if you don't have a subscription
