spent Saturday night with us,

and Sunday morning, I asked them

what they wanted for breakfast and they said,

So, I made them regular, just buttermilk pancakes

and then blueberry pancakes

and I used my biscuit mix to make these with.

- Oh, well, you better be glad you remembered it,

So, back to what I was saying before Michael interrupted us,

I used my biscuit mix to make the pancakes with

and little Henry at the end of the meal said,

"Guinny, I sure do wish my momma

"could make pancakes like that."

I said, I pulled out my box of biscuit mix and I said,

"Well here's your secret recipe.

"You can take that home and tell mommy

"she can make pancakes like Guinny."

We are pancake eaters around here.

The recipe I'm sharing with you is,

chocolate chip pancakes,

with a cinnamon whipped cream topping for 'em.

So I took one cup of heavy whipping cream

and I added 1/4 of a cup of sugar,

either powdered or white.

- And I added maybe a heaping, half a teaspoon of cinnamon,

but you can add to your taste for that.

So I'm gonna put this in the refrigerator,

so it will stay nice and chilled.

And in this bowl I had two egg whites,

that I beat until they are stiff.

And then I've got two egg yolks for the batter.

So, let's see what we're gonna do.

We are gonna start with 1 and 1/4 cup of all-purpose flour,

three tablespoons of sugar,

two teaspoons of baking powder,

1/4 of a teaspoon of salt.

So we're just gonna mix that all up.

This whisk almost acts as like a sifter.

Alrighty, so I'm gonna add my milk, slowly.

Now pancakes and waffles are just naturally

gonna have some lumps, but it's okay,

it's not like if you were making a regular cake.

When you're baking like a pound cake, or a carrot cake,

you don't want a bunch of lumps in your batter,

but you can expect some lumps

All right, I'm gonna get me a knife,

'cause I don't want to goop up my fingers.

So, I'm just gonna run through this

and see if I can get all the flour out of there.

Now I'm gonna go ahead and throw in my egg yolks.

Stir those up and then I'm gonna finish adding my milk.

And all you have to do, to make a banana pancake,

and I finally found an old farmer, near Statesboro,

and he would bring it to me in five gallon buckets.

And we'd put it on the table for our biscuits and hoe cakes.
