0:02
I'm standing up here thinking,
0:03
about some nice sides for Easter
0:08
as I eat chocolate almond candy.
0:12
Which is out of this world.
0:21
Eddie would you like some to eat?
0:31
So what does Peter Cottontail like to eat?
0:35
He likes to eat rabbits.
0:43
Peter rabbit does not eat other Peter rabbits.
0:47
So, Peter rabbit likes carrots.
0:51
So I decided I would share this easy little recipe
0:55
with y'all and hopefully somebody
0:58
in your family likes carrots.
1:01
Now I've got, what is that?
1:05
- [Teresa] Yes Ma'am.
1:06
- Of slice carrots, and we're gonna steam 'em
1:11
over boiling water for about seven to eight minutes.
1:17
And when they're tender, I'm gonna pour 'em in a bowl
1:21
and I'm gonna add honey, lemon juice, and butter.
1:25
And get this, cilantro.
1:28
So, if you don't like cilantro and you got babies
1:33
that you're trying to feed, you can take these carrots
1:36
and put your, butter, your lemon juice, and your honey
1:40
on it and put it in a food processor and make baby food.
1:46
And the babies probably would like it
1:49
with that little bit of honey.
1:51
So I'm gonna need the zest of,
1:56
how much zest am I gonna need?
1:58
Just a half a teaspoon of zest.
2:00
And this should get ready Y'all, in
2:07
Maybe seven or eight, 10 minutes.
2:09
Something like that, depending on
2:10
how soft you want your carrots.
2:13
All right, so I'm gonna,
2:18
I'm gonna zest our lemon.
2:21
You know, they have zesters that are different depths
2:27
And this one's nice and deep
2:29
where you can get in there and get 'em.
2:31
But I know I picked up one outta my drawer one day
2:35
and it was one of those that's like minced.
2:40
I didn't think I was ever going to get that lemon graded.
2:43
So if you go into buy zester, make sure it's one
2:50
that's got wide enough blades.
2:54
See how nice that did?
2:57
I got to find a bowl to put carrots in when they're ready.
3:05
I used to make a, dish called copper pennies
3:12
and it was a vinegar and sugar dressing light.
3:17
Have you ever had copper pennies, Teresa?
3:18
- [Teresa] Yes, I love carrots.
3:22
- I like good carrots.
3:25
I don't like bad carrots
3:27
- [Teresa] Not that I've ever heard bad carrot.
3:30
- Alright, and I do like white chocolate too.
3:35
I'm gonna have to move it.
3:37
(paper crumbling sound)
3:40
We'll have to move it.
3:43
Maybe if you could hide it from me, Eddie.
3:47
And make me have to go like a Easter egg hunt to find it.
3:53
Oh, I'm getting so excited.
3:56
Because we gonna have a Easter egg hunt
3:59
for the grandchildren
4:06
And hopefully we'll do a video of it, right Eddie?
4:11
- All right, so I'm gonna go ahead.
4:16
That looks like about a half a teaspoon,
4:25
and how much butter we'll say exactly?
4:28
Two tablespoons of butter,
4:37
one tablespoon of lemon juice,
4:42
and one teaspoon of honey.
4:50
And next I'm gonna chop a fourth of a cup of cilantro.
4:55
And I know I've told y'all this a hundred times.
5:02
Either you love cilantro or you don't love it.
5:07
Now both of my sons say it tastes like soap to them
5:18
It doesn't taste like that to me.
5:24
Is there anybody else out there that
5:25
- [Eddie] I don't think it tastes like soap, but I don't
5:28
care for the, taste of it.
5:31
- You just don't like it, okay.
5:34
All right, I'm gonna chop our Cilantro.
5:37
And like I said, the recipe calls for, like a 4th of a cup.
5:44
So this is gonna give this, what we think of carrots
5:50
and how they taste, it's gonna give 'em
5:52
a whole new taste with this cilantro.
5:59
Our carrots are tender and now I cooked them on top
6:06
of a pan of boiling water.
6:08
So our carrots never, touched the water.
6:21
All right, so we are just going to toss this
6:43
Okay, so that's, a pretty Easter side dish to me.
6:50
Little salt, little pepper, not too much pepper
6:54
that the kids won't eat the carrots.
6:59
- [Eddie] That's not why kids won't eat carrots.
7:02
- Well, you know, some children do,
7:03
if you start 'em off on it.
7:08
- [Eddie] Yeah I mean, carrot have sweet taste.
7:10
- [Eddie] To begin with.
7:11
- I think all of our grandchildren, like, you know
7:17
Okay, so let's let that cool a minute
7:23
and I'll see if we need anything else.
7:26
Maybe even want some more cilantro
7:28
or some more lemon zest,
7:36
It's good, but I'm like Teresa,
7:43
- Well, they look like they're about to
7:45
burn your mouth, but, so you have no tongue.
7:55
- [Teresa] They're good, they're different.
7:57
I mean, this is a totally different
7:58
- I'm wondering if I need to cut some more cilantro.
8:03
- I would say some salt.
8:08
- [Teresa] I wouldn't do more cilantro,
8:09
but that's just cause I'm like,
8:10
I'm kind of like you with the
8:13
- I think after it sits in the cilantro, it won't
8:27
I am going to add the rest of that,
8:34
- [Teresa] Me, I don't,
8:35
- So that's it, Peter rabbit would love it,
8:39
He would love for you to love it.
8:43
So Happy Easter, everybody.
