It's Jamie Deen today, back in Mama's kitchen.
0:04
I'm going to share a delicious recipe for you
0:06
and your children this morning.
0:07
And I'm doing it out of the single greatest cookbook
0:09
that our family has ever written.
0:12
Maybe the greatest cookbook ever.
0:14
I had a great time doing this with my son, Jack,
0:16
look how young he was.
0:18
So this recipe, this book,
0:19
Jamie Deen's Good Food is full of fresh meals,
0:23
not healthy meals, not diet meals,
0:26
but fresh food that you can cook for your family
0:28
'cause no family wants to go on a diet together,
0:31
but fresh, good food is delicious
0:33
and fresh applesauce is one of our youngest son,
0:36
Davis's, favorite things.
0:37
If you want to follow me on Instagram or Twitter,
0:40
you'll see thousands of beautiful pictures of Davis.
0:43
So our applesauce is really simple. We've got,
0:46
let me check. I don't know how many I've cut.
0:49
We got six large apples.
0:51
I love to use Honeycrisp apples
0:53
and I like to use Granny Smiths.
0:55
Whichever apple you decide to use,
0:57
make sure it's got a nice
1:02
'Cause you do not want to use a soft apple,
1:04
'cause we're gonna cook this down for about 35 minutes.
1:08
So as you can see Terry and I stood here,
1:09
we peeled these and then you chunk them out.
1:12
And while you're doing that,
1:13
get you a big large bowl like this,
1:14
put some water in it,
1:16
and squeeze you a lemon or a orange.
1:17
Anything citrus in there
1:19
will keep your apple from turning brown.
1:21
You don't want that to happen.
1:23
So let's go with our liquids first.
1:25
We have one, two cups?
1:27
[Terry] - One cup. - One cup of apple juice.
1:31
We have one cup of water.
1:37
two cinnamon sticks that we're going to drop in here.
1:40
A quarter of a teaspoon of ground cinnamon.
1:45
I got two tablespoons of granulated sugar
1:49
and two tablespoons of brown sugar.
1:52
Now we're going to put a dash of salt in here
1:59
a couple of shakes of fresh ground nutmeg.
2:04
There's a lot of water and apples.
2:07
So all the liquid in these apples
2:09
are going to cook out slowly.
2:11
So once you get your six apples in here,
2:15
let's just give it a good twist.
2:17
Make sure everything gets coated.
2:20
So this is going to cook for 25 minutes
2:23
and probably, you know, maybe 10 minutes or so into it,
2:27
and you're going to cook this softly.
2:29
[Terry] - I was gonna say, what kind of heat, Jamie?
2:32
- You definitely don't want this to boil.
2:34
All we want this to do is to cook softly and slowly
2:37
over 25 minutes and soften up.
2:41
you don't even have to put it through your food processor.
2:43
This is going to be soft enough and easy enough for you
2:45
to eat without messing up another appliance in your kitchen.
2:49
If you get this on a big roll in bowl,
2:51
you're going to have a mess at the end of it.
2:53
So I'm going to cook it on like a medium,
2:55
low heat for 25 minutes. Look how simple that is.
2:58
And we're this close to fresh applesauce.
3:03
Hey, I also brought these to a boil, you see.
3:07
A very slow come up boil
3:11
and I'm going to stir them kind of gently,
3:14
about maybe 10 or 15 minutes into the process.
3:18
I'm going to turn it down a little low.
3:20
We're going to let them finish cooking.
3:26
I've cooked this down.
3:29
Now, the last thing you have to do is
3:31
remove your cinnamon sticks.
3:34
- [Terry] Oh, it smells so good.
3:35
- I just prop those up there.
3:36
They did not cook that way.
3:38
'Cause what I did was I pulled a bowl out
3:41
and put in the refrigerator real quick so I could taste it.
3:45
'Cause the other day I was over here
3:46
and I burnt the entire top of my mouth off.
3:51
'Cause I'm not very patient.
3:53
- [Terry] Look how easy that was. That's fresh.
3:56
- This is fresh applesauce.
3:57
And I'm going to be bringing this home
3:59
for Davis later today.
4:02
You see the consistency that you have here.
4:04
Now, if you don't like texture in your food,
4:08
if this ain't for you,
4:09
put it in a blender or a food processor
4:12
and you can get this as smooth as you like,
4:15
but I really love this because it looks
4:19
and really tastes homemade.
4:21
- [Terry] You could serve this at Thanksgiving.
4:25
Let's give it a test drive.
4:30
I can taste everything that I put in there. It is so good.
4:35
I love applesauce. Homemade applesauce.
4:37
- [Terry] You can put raisins in there too.
4:39
10 out of 10. And you want to add blueberries.
4:42
Like for the last 10 or 15 minutes
4:43
you got blueberry applesauce.
4:48
And it's good for you and I'm Jamie Deen
4:50
and I'm at my mama's house.
4:51
And I'm glad that you tuned in.
4:54
I'm going to eat this and I'll see y'all around the kitchen.
