I'm gonna share with y'all a wonderful fall recipe.
0:09
It involves fruit and vegetables, and it's delicious,
0:13
and it's in a casserole form, y'all.
0:16
But before, before I do that,
0:19
I would like to talk about something kinda personal.
0:23
I understand that people are concerned
0:26
and think maybe I'm sick because of my weight loss.
0:30
(laughing) I'm not sick, y'all.
0:33
I've been working on my weight for years.
0:38
And I've almost got it under control, y'all.
0:44
So I appreciate y'all's concern, but I am not sick.
0:50
I was sick of being real fat.
0:52
That's what I was sick of.
0:54
But I'll tell y'all this, too.
0:56
As you get older, you can't eat as much.
0:59
How about you, are you that way, Theresa?
1:00
- [Theresa] Mm-hmm, yeah, I lost weight.
1:03
- Yeah, I just can't eat what I used to.
1:07
I eat what I want, but I just can't eat as much of it.
1:10
So it's worked out well. (clapping hands)
1:13
- [Theresa] That's one bonus of getting old. (laughing)
1:16
There's got to be some
1:18
silver lining somewhere out there, doesn't it?
1:21
- Well, we're going to, like I said,
1:23
start with this wonderful fall harvest recipe.
1:27
And I'm gonna start by adding brown sugar,
1:31
teaspoon of cinnamon, (dish clanging)
1:32
and a little bit of salt.
1:36
And I'm just gon' mix that together.
1:38
And then I'm gonna toss our granny smith apples
1:42
and our squash together.
1:47
- [Theresa] That's actually sweet potato, Paula.
1:49
- Oh, it is sweet potatoes.
1:51
I was thinking I was doing squash.
1:53
(spoon clanging) Sweet potato, even better.
1:57
The other night I fixed Aunt Peggy and I
2:00
just a baked sweet potato
2:02
and her cake cornbread for dinner, and it was so good.
2:07
Okay, so let's go with our sweet potatoes.
2:11
And to make this a little easier on myself,
2:13
I'm gonna kinda divide this.
2:18
(dish clanging) And then I'll put my apples.
2:22
These apples look delicious.
2:25
And you can see, (dish clanging)
2:26
you want 'em in fairly small cubes.
2:30
And then we got our dried cranberries.
2:33
Pour of those. (dish clanging)
2:37
So I'm just going to start mixing all this together.
2:41
And I'm just gonna toss this, y'all,
2:42
until it's kinda all in.
2:48
All right, I got that coated, y'all.
2:55
Ooh, this is gonna be a pile,
2:58
but it's be real good reheated.
3:04
You gon' have a bunch.
3:07
If you going to a Halloween party,
3:08
you may wanna bring something in like this, you know?
3:13
- [Theresa] Thanksgiving.
3:14
- [Paula] Yes, Thanksgiving
3:14
is wonderful. - [Theresa] It's coming
3:16
around the corner. - Uh-huh,
3:18
and this would be something different.
3:22
This recipe was from my magazine.
3:27
And I don't know if y'all,
3:31
hopefully the magazine would've said something,
3:35
but after 12 or 13 years,
3:42
my magazine has come to an end,
3:45
and I wanna thank all of y'all for your love and support
3:49
that you gave me with that magazine.
3:52
I had so much fun doing the recipes,
3:56
and the stories, and just, it was just fun,
4:00
and I wanna thank y'all for that.
4:03
All right, I've got more brown sugar.
4:05
(dish clanging) I've got oatmeal,
4:08
the five minute oatmeal.
4:14
(dish clanging) I've got cinnamon.
4:18
Now I'm just gonna give all of this quick stir.
4:23
And this is much like the topping
4:27
that you do on sweet potato casserole.
4:37
Okay, so I'm gonna pour my melted butter over this.
4:43
And then we're gonna cover our casserole with foil
4:51
after we put this on,
4:55
Calls for a 400 degree oven.
5:00
And we wanna make sure, you know,
5:02
all the dry ingredients are wet from the butter.
5:07
Y'all picking up what I'm putting down? (chuckling)
5:19
Just dot this all over.
5:23
And I wanna distribute it, you know, fairly even.
5:33
It's gonna be delicious.
5:35
Now, I don't want this topping to stick to my tinfoil,
5:42
(can spraying) so I'm just gonna spray
5:45
my tinfoil lightly. (foil crinkling)
5:54
And because I'm putting mine into a confection oven,
6:02
I have to make sure that I wrap that tinfoil underneath,
6:06
because that commercial oven
6:09
will blow the tinfoil right on off.
6:12
I have to make sure it's tucked under there good.
6:20
40 minutes, and then we gon' uncover it
6:23
and cook it for about another 30.
6:28
So that's it, and we gonna have a harvest time.
6:31
Now, you know, (chuckling) you know this dish is for guests,
6:35
so I'm just gonna come in here.
6:39
Look at that pumpkin.
6:43
- [Theresa] You mean sweet potato?
6:44
- I meant sweet potato. (chuckling)
6:45
I keep wanting to call it, 'cause it's orange.
6:50
at that pumpkin. - [Theresa] You can guess
6:51
it's own names. - Look at that sweet potato,
6:53
and those cranberries, and that crumbly topping.
6:57
Can y'all tell I've been in it?
7:02
Oh, thing is, I've gotten real good at that.
7:09
This screams Thanksgiving.
7:11
You know it, Theresa?
7:15
- [Theresa] And we're about to start
7:16
Thanksgiving videos soon,
7:21
- [Theresa] Get everybody in the mood.
7:22
- And you know what, this would be wonderful for breakfast,
7:26
or brunch, or lunch, or supper. (chuckling)
7:40
Winner, winner, chicken dinner.
7:42
Winner, winner, turkey dinner. (laughing)
7:48
