0:00
- You know, it sounds funny, but one of my grandson Jacks,
0:07
This is a little carrot (chuckles).
0:09
It's a little carrot,
0:10
and I'm trying to keep it as long as I can.
0:16
Jack Deens, one of the favorite desserts.
0:21
I can't even hold the carrot
0:24
- Sorry, I'm thinking about this damn carrot, Eddie!
0:29
Oh, one of my favorite vegetables
0:31
that I have cooked for Jack Deen
0:34
in the last few Christmases or Thanksgiving,
0:39
is green bean bundles.
0:43
So, and I was just a little surprised.
0:48
Now I peel that 'cause I just don't like
0:52
these little carrots.
0:54
I would suggest using a bigger carrot y'all.
0:56
- [Lady] I tried those though.
0:57
- These are, these are a little on the tedious side
1:00
but anyway, these, this is a different version
1:05
of the green beans that has always been Jack's favorite.
1:09
So I'm starting with bacon, I mean a pile of bacon.
1:14
A big pile of diced up bacon.
1:21
It looks like a lot so I may add that to
1:25
something else that I'll be cooking later on.
1:30
So, we're just gonna let this cook
1:36
until it's kind of nice and crispy.
1:39
Actually, I probably won't bring it to a full crisp
1:43
but I'll cook it till I like the looks of it.
1:48
All right, so we, we've got our fresh green beans
1:52
and we've trimmed the ends off 'em.
1:55
And so you just make a bundle
1:57
and we blanched these for about five minutes
2:02
Then we remove them and do a ice bath on 'em so
2:06
that they'll keep their pretty green color.
2:10
So all we are gonna do now is take our green bean bundle
2:15
and we're gonna wrap each bundle in a carrot strip.
2:25
So they've got the pretty color.
2:27
Alright let's see if this one can be tied.
2:30
You gotta keep 'em long enough so that you can tie 'em
2:34
or you can just wrap them.
2:37
If you got a long enough carrot
2:39
you can just wrap them and put 'em same side down.
2:44
All right, let's get a long, long, long one.
2:51
Okay. So you can do 'em just like that as well.
2:56
And then just put 'em same side down.
2:58
Do you know how long your, your carrot strip is?
3:10
Some of 'em may not be long enough for you to actually turn.
3:15
So like I said, your alternative you can see that one broke
3:19
so, I'll do it just like I did the last one.
3:23
I'll just fold it over and put it same side down.
3:28
And these are so pretty y'all.
3:31
And the carrot just gives some nice color.
3:36
So, we're gonna cook our bacon
3:39
and it's gonna take just a few minutes for it yet.
3:43
And then we're gonna make a nice glaze to pour over these
3:49
and then I'm gonna bake it for maybe 15 or 20 minutes.
3:53
But it's a great way to kind of pretty up a vegetable.
3:58
Let me get the children to eat.
4:00
I was shocked when Jack Deen liked it so much.
4:03
So, I hope you and your family like it as well.
4:08
I have cooked this to the desire that I like
4:13
which is not extra crispy.
4:16
I like but to have a little bite to it.
4:20
So, you cook it the way you like it.
4:25
Now I'm gonna let that drain
4:28
and I'm gonna leave about three tablespoons
4:32
of bacon fat in my pan.
4:36
And let's see, I'm gonna just pour
4:42
little bit of it off.
4:45
And now I'm gonna put in my shallots.
4:58
Kind of a cross between onion and garlic to me.
5:03
I just love the smell of them.
5:08
I'm now wearing grease eyeshadow.
5:21
So you can see, you can see what we're getting towards.
5:25
We're getting through a,
5:26
a wonderful glaze to pour over our green beans.
5:34
I was talking about me making a recipe similar to this
5:39
but Jack and it was always at Thanksgiving and Christmas.
5:42
But guess what's coming up?
5:49
This would be a wonderful dish
5:54
you could make your partner or whoever, your friend,
5:57
whatever, whoever it is in your life.
6:01
You could make them a wonderful steak dinner
6:05
and serve these beautiful green beans on the side.
6:09
You could make them a beautiful plate.
6:11
So, Valentine's Day or birthday, whatever day this is
6:20
this will be a nice side item for your menu.
6:25
with three-fourths of cup of balsamic vinegar.
6:30
So that's my shallots, my brown sugar
6:37
and my balsamic vinegar.
6:39
And we're gonna let that cook for just a few minutes.
6:44
And then I'm gonna pour some on top of
6:48
our green bean bundles
6:51
and put 'em in the oven for about, maybe 20 minutes.
6:55
And then when I go to serve 'em
6:56
I'm gonna sprinkle this yummy bacon on top.
6:59
But remember we got some of that bacon fat in this pan
7:03
which is gonna kick it up.
7:07
That flavor it's gonna be so good.
7:09
Now I've got a fourth of a cup of olive oil
7:12
that I will be adding to the pot after
7:15
this is cooked for a while.
7:18
So, I'm going to get the grease out of my eyes
7:22
and I'll be right back.
7:24
Okay, I needed to cook that for about six minutes
7:27
and now I'm gonna take it off the heat
7:31
and I'm gonna drizzle in a fourth of a cup of olive oil.
7:40
Now I usually try to use more,
7:48
I don't like extra virgin.
7:50
To me it just tastes like I'm trying to chew up
7:55
a mouthful of olives or something.
7:58
So I do like the, the quieter version.
8:02
So, this is, I'll show you what,
8:05
I don't know if you like me or not but,
8:08
like I said, this, I just like the extra light.
8:16
So now we're gonna take our glaze
8:22
and we're gonna put like a tablespoon on each bundle.
8:29
Look at our shallots.
8:38
Ooh I love the way these look.
8:46
Like the tablespoon on each bundle y'all.
8:52
And then I checked the cooking time again
8:57
and it's like for 15 or 20 minutes.
9:02
And then when we take 'em out,
9:07
oh my gracious great.
9:14
This looks so good and smells so good.
9:17
The balsamic smells so good.
9:21
All right, so we've got some left over.
9:23
When we take 'em out if they need a little bit more
9:25
we can douse 'em again with our balsamic marinade
9:30
and when they come out I'm just gonna sprinkle
9:34
a little bit of this wonderful bacon on 'em
9:39
= [Lady] Can we put 'em in for you?
9:40
- Yes and that's gonna be our vegetable dish.
9:44
What do you think about our green bean bundles?
9:48
That balsamic vinegar really turned dark on it
9:54
but they're just so good.
10:00
I wish Jack was here.
10:03
Now the thing is, how do you eat these?
10:13
That's a good start, isn't it?
10:24
The balsamic vinegar takes it to another level
10:32
and the bacon on top, that just kind of seals the deal.
10:49
And these have been out of the oven for a few minutes.
10:52
I mean they're no longer hot
10:54
but they're just slightly warmed.
10:57
And that's another thing I like about this dish.
11:00
You don't have to worry about getting it out like
11:05
and serving it like immediately
11:07
because it's pretty good at any temperature.
11:12
So I hope y'all will try this
11:13
and I hope that y'all would like it
11:17
'cause it's delicious and different.
11:23
Sometimes I just don't wanna do the same old thing
11:25
you know what I mean?
11:33
You're loving best dishes y'all.
