- Happy Halloween.
0:03
The next recipe I'm gonna share with y'all
0:06
is ghost mousse in chocolate cups.
0:11
Look at that.
0:14
Look at those chocolate ghosts.
0:16
They scary, aren't they?
0:18
Well Theresa. God love her.
0:22
I'm gonna let her tell you what she went through
0:25
to get this chocolate cup.
0:29
Tell 'em about it Theresa.
0:31
- [Theresa] Don't turn the camera.
0:33
This is so funny.
0:34
This recipe is the cutest recipe going,
0:36
and you would've thought that it was gonna be really easy.
0:39
But those silicone molds which are the best things
0:41
people have-
0:42
who ever made those is a genius.
0:44
But they look like little cups.
0:46
And so I tried 'em with brownies because I thought,
0:48
oh gosh brownies will be great.
0:50
- And look at this.
0:51
I thought that was genius Theresa.
0:54
- [Theresa] Well, it wasn't as easy.
0:55
You have to really have a-
0:56
- Although they are kind of falling apart a little bit
0:59
but you know that's gonna be good for the mousse.
1:03
- [Theresa] So, but then the smart part of me said
1:06
just put chocolate in it and be done with it.
1:08
And so the chocolate ones are very big.
1:11
- So you know, there's, you just use your imagination
1:16
on how to create you a chocolate cup.
1:21
And there's many ways of doing that.
1:24
You could-
1:26
- [Theresa] You said one way.
1:28
- Use a cupcake liner and dip it down in your chocolate,
1:32
you know several times to get a nice thick coating on it
1:35
and then put it in the refrigerator and let it harden.
1:38
- [Theresa] Never thought of that.
1:39
- And that can be your cup. But you could use-
1:43
- You said tin. A tin.
1:45
- Yes. You could use muffin tins
1:49
and roll your chocolate around.
1:51
You know, to get it thick.
1:54
You could even use something like this,
1:56
if you like that size and shape.
1:58
You know, dip that down in your chocolate.
2:00
Keep dipping and dipping until you have a thick enough one.
2:04
Put it in the refrigerator.
2:05
But y'all are all so smart out there.
2:08
Cause I see some of the things y'all do.
2:11
So you will have that figured out in two seconds flat.
2:16
So I thought the brownies was a great idea.
2:20
This one is a little thin, right here.
2:22
It's got a little holes in but-
2:23
- [Theresa] That brownie mix had the chocolate chips
2:26
and all in it-
2:27
- See I don't use that.
2:27
- [Theresa] -and that's where it doesn't benefit you
2:29
to have fancy brownie mix.
2:31
- Yes. All right,
2:32
now this makes a lot of mousse.
2:36
And we only need mousse to fill up three cups.
2:39
(laughs)
2:40
So what are we gonna do?
2:43
It calls for one envelope of unflavored gelatin.
2:47
Three tablespoons of cold water,
2:50
a fourth of a cup of boiling water,
2:53
and three cups of heavy whipping cream.
2:57
That will make enough heavy cream mousse
3:01
to feed Wilmington Island.
3:03
- [Theresa] Exactly.
3:05
- Along with three fourths a cup of sugar,
3:08
and a fourth of a cup of orange flavored liquor.
3:13
And then three boxes of dark Belgium chocolate cordials
3:18
and toasting cups.
3:21
I guess this is the toasting cups.
3:24
And I love what Theresa did.
3:26
I thought it was so smart.
3:29
So smart.
3:30
Where there's a will, there's a way y'all.
3:33
And if you wanted to ever see me
3:37
going into a crazy mode,
3:40
tell me I couldn't do something.
3:42
- [Theresa] Ooh I've been there.
3:44
- Tell me I can't do it.
3:46
Oh, oh. But I can do it.
3:50
If I want it bad enough, I can do it.
3:52
I can figure out a way.
3:53
So I'm gonna cut back though,
3:56
on this much whipping cream.
3:59
And this is a deep bowl,
4:01
so I'm gonna change that bowl Theresa.
4:03
- [Theresa] Absolutely.
4:06
- And get one that's,
4:10
I can get in the beaters easily.
4:14
And naturally, the bowl I always need
4:16
is on the very bottom.
4:18
(dishes rattling)
4:20
Always.
4:22
All right, so
4:27
I'm going to use one package
4:30
of unflavored gelatin.
4:35
If I can get it open.
4:39
And I'm gonna let that soften
4:40
in that cold water.
4:46
And then, I'm gonna add my boiling water.
4:51
And this should take like two minutes
4:53
for it to kind of soften.
5:02
And this is our boiling water.
5:04
It's not quite boiling anymore Theresa.
5:06
- [Theresa] You want me to boil?
5:08
- Yes, please.
5:09
- [Theresa] Well as I add some dry ice-
5:10
(laughs)
5:12
- Your dry ice is
5:16
leaving us.
5:19
Alright, what is that?
5:20
I love these measuring cups, I just can't read them.
5:24
I just can't see through 'em.
5:26
All right.
5:27
So I'm gonna cut our recipe in half.
5:30
As far as our heavy whipping cream goes.
5:33
I'm gonna do a cup and a half.
5:38
Whoa.
5:42
A cup and a half would be,
5:48
would that be 12 ounces?
5:50
Yes.
5:51
Eight ounces plus four would be 12 ounces.
5:55
Okay.
5:59
So a cup and a half of heavy cream.
6:07
And let's see, how much sugar am I going to use?
6:11
- [Theresa] Here you go on that one.
6:15
- All right.
6:15
This is all for the frosting.
6:17
Thank you. Thank you.
6:20
All right. Now I'm gonna add
6:21
a fourth of a cup of boiling water.
6:27
- [Theresa] I gave you something.
6:28
Here's your confectionary sugar to add to the-
6:30
- Oh, okay.
6:31
- [Theresa] I didn't know how much you were gonna need.
6:32
Yeah, don't, this goes for your-
6:34
(toy skeleton laughs in background)
6:35
- Whoa.
6:36
There's spooky sounds going in here, Eddie.
6:45
(toy skeleton laughs in background)
6:46
- [Eddie] What you cooking,
6:47
what you cooking in that cauldron?
6:49
- What is it?
6:50
I got a witches brew.
6:53
So you better be careful.
6:57
Better be careful what you're tasting.
7:04
Okay, we're gonna sit that aside
7:07
and I'm only going to use half of that
7:09
when it's all said and done.
7:13
Alright. And I'm going to need
7:18
three fourths a cup of sugar.
7:21
Theresa do you have that out anywhere?
7:24
- You usually use confectionary sugar
7:26
with your whipped cream. So I-
7:28
- No, I don't.
7:29
- You don't?
7:30
- I use white sugar.
7:32
Let's see.
7:34
Three cups of heavy whipping cream
7:35
which I downed to a cup and a half.
7:38
And three fourths a cup of sugar, half of that.
7:41
About a half a cup of sugar.
7:44
And it'd be an eighth of a cup of orange liquor.
7:54
An eighth of a cup.
8:00
Oh.
8:02
- [Theresa] Smell good.
8:02
Can I just put this in?
8:04
- Oh, it smells so good.
8:05
No, not yet please, but thank you.
8:06
- You're welcome.
8:09
- All right.
8:10
You wanna figure out an eighth of a couple of this?
8:11
- I'm gonna give you a fourth of a cup one for half.
8:14
- Okay.
8:16
- How about that?
8:16
- That will do it.
8:20
You can actually use as much sugar as you want.
8:23
Just depending on your taste, how sweet you want this.
8:28
And I gauge mine by my tongue.
8:33
I use a fourth of a cup of sugar to each cup of heavy cream.
8:38
So I've got a cup and I half of sugar here.
8:40
So that would be a fourth of a cup plus a half of a fourth.
8:47
(electric mixer whizzing)
8:52
All right. Now let me see.
8:54
In a medium bowl, beat cream at medium speed
8:57
with electric mixer.
8:58
Gradually add sugar, beat until stiff.
9:01
And then we're gonna stir in our orange liquor,
9:05
and our gelatin mixture.
9:07
And like I said, I'm gonna use about half of that.
9:11
In goes out liquor.
9:14
It smells so wonderful.
9:20
Smells so good.
9:25
All right and now,
9:28
I'm gonna spoon in,
9:33
our unflavored gelatin
9:36
because that's gonna assure that this really gets stiff.
9:43
And so about half of that.
9:47
There we go.
9:50
I think I forgot to tell y'all,
9:53
this has to chill for four hours.
9:58
To make sure it is good and firm.
10:03
And that we can pipe it in to our chocolate cups.
10:09
So we just wanna stir in our gelatin.
10:13
- [Theresa] May not take as long,
10:15
cause we didn't use as much.
10:16
- I don't think so.
10:18
And do you think I used half?
10:22
Just to make sure I'll pour in another.
10:28
Another teaspoonful.
10:30
Oki-dok, I'll see y'all in four hours.
10:33
You know what this reminds me of?
10:38
Do y'all know what this reminds me of?
10:40
- [Theresa] What's it reminds you of?
10:40
You know what this reminds me of, Eddie?
10:43
- [Eddie] I do.
10:43
- You do?
10:45
This reminds me of Paula Deen's
10:51
Lumber Jack.
10:54
- [Theresa] Feud.
10:55
- Feud. Yes.
10:57
It is located in Pigeon Forge.
11:01
Right down the road from Paula Deen's Family Kitchen,
11:04
that's located on my island,
11:07
where there's just loads of great things to do.
11:11
And then Paula Deen's Lumberjack Feud
11:13
is right down the road.
11:14
Maybe two blocks, right?
11:15
Y'all?
11:16
- [Eddie] Yeah. Not too far.
11:17
- Yeah, it's not too far down the road.
11:20
And I'm bringing my whole family
11:26
to Paula Deen's Lumber Jack Feud for Thanksgiving.
11:34
We are gonna turn on the Christmas lights at Lumberjack.
11:39
- [Eddie] Yeah, I think this is the first year
11:40
they've done it.
11:42
- First year we've done this.
11:43
And you see what I'm wearing?
11:45
I'm wearing my lumberjack shirt.
11:47
Because you've heard of the Hatfields and McCoys?
11:52
Well, it's gonna be a very divided team.
11:56
One's gonna be pulling for the Hatfields
11:58
and one's gonna be pulling for the McCoys.
12:01
And have we decided who's on what team Eddie?
12:05
- You know, we did. Red and green shirts.
12:07
- Red and green shirts, yes.
12:09
- And I just went
12:11
starting with Jack and going down.
12:14
I went red, green, red, green-
12:16
- Red, green, red, green.
12:18
So when we flip the switch,
12:22
I guess there'll be feuding about who gets to switch,
12:26
who gets to flip the switch, right?
12:27
I don't know.
12:28
But we are looking so forward to it.
12:32
We are gonna be there through the Thanksgiving holidays
12:36
through Sunday.
12:38
Yeah. Or Monday, I can't remember.
12:40
Wednesday to Sunday, I think.
12:42
- [Eddie] Yeah.
12:43
- Is that right?
12:44
And naturally we're staying on my island
12:48
in the hotel there on my island,
12:52
Margaritaville.
12:55
And all we have to do is walk out the door
12:59
and you're right there in the middle of the island
13:02
with so many fun things to do.
13:05
So it's one of my grandchildren's favorite places
13:08
in the world.
13:09
It even, some even like it better than Disney World.
13:12
So that's, that's going a stretch.
13:15
So we have spent every Thanksgiving together,
13:19
as long as they've all been alive.
13:23
And so I can't not spend Thanksgiving with 'em.
13:26
So, I said, okay, y'all are coming with me
13:30
and Guinea still in a roundabout way,
13:33
gonna cook Thanksgiving dinner for y'all.
13:37
Cause I cook every Thanksgiving half
13:40
since I was 23 years old.
13:42
So we can't stop now.
13:45
But if you're around Pigeon Forage at Thanksgiving,
13:48
come by,
13:50
check out what time we are flipping the lights on
13:53
at Lumberjack.
13:55
And I hope to see y'all there.
13:57
Are y'all kiddies ready to fill up our mousse cups,
14:00
our chocolate cups with our mousse?
14:03
Yes. All right, now I got our,
14:08
I got our little piping point down in there.
14:12
Now I'm gonna just, see how that
14:20
that gelatin
14:22
made this so nice and thick.
14:30
Okay. Get in there.
14:33
All right, so we're gonna roll this up,
14:38
and push our cream to the bottom,
14:43
giving this a little twist.
14:46
And we're just gonna fill it up with our mousse
14:51
to look like a ghost head.
14:56
Does that look like a ghost head?
14:59
- [Theresa] That's an Eddie call.
15:01
- [Eddie] Yeah.
15:07
- You know what?
15:08
We might have needed a plane.
15:14
Look at that.
15:18
Come on ghosties.
15:21
- [Theresa] I think they look fun like that. Curled up.
15:25
- See I like that.
15:28
You know, it's just like anything
15:29
that you have to play with it.
15:34
To get it the way you want it.
15:37
Alright now here we go.
15:44
We gonna give him his eyes here.
15:49
We gonna give him a little, little mouth.
15:56
- [Theresa] I might fill this last one while you're-
15:58
- Please. Oh Please.
15:59
- -decorating.
16:00
- Yes.
16:04
I said look Eddie, does he look cute?
16:07
- [Eddie] Yes he does.
16:11
- Okay, now his eyes are gonna be-
16:16
Oops.
16:19
- [Eddie] I think mousse is such a great dessert.
16:22
If you have a big meal and you go to, at a restaurant.
16:26
- [Theresa] Is that enough for you?
16:28
- I think it is.
16:29
I don't know. Why don't you?
16:33
- [Theresa] You're doing such a great job.
16:35
- Well you, why don't you put his eyes on him,
16:37
and his nose.
16:39
Oh, I love the different shapes of the head.
16:44
You can just have a ball in these.
16:48
Oh, look at the shape of that ghost.
16:51
- [Eddie] Yeah that one looks like a poodle.
16:53
Poodle sticking his head out.
16:57
- So let me see what you do.
17:00
Let me see how you get your chocolate cup
17:02
and let me see how you get their heads.
17:10
That's so good.
17:11
- [Theresa] Those turned out cute.
17:13
No, I'm talking about this.
17:14
- [Theresa] Oh, I know it's good.
