0:00
- Hey y'all, I'm Jamie Deen, I'm here in mama's kitchen,
0:02
along with everybody else.
0:05
My kids are here, my wife's here,
0:06
my mama's here, everybody's here.
0:09
And so today we're doing
0:11
really simple fall dishes that I love.
0:14
On yesterday's show you all saw
0:16
that I made some Greek potatoes,
0:17
and they were so good.
0:19
And today we're gonna repurpose some of those potatoes.
0:22
We're making Gentleman Joes today.
0:26
We're not making Sloppy Joes,
0:28
we've had enough of Sloppy.
0:29
We're gonna go with a gentleman's version,
0:32
and it all starts with
0:36
- [Paula] Feeding your children.
0:38
- [Theresa] Two pounds.
0:39
- Two pounds of ground beef.
0:40
And I didn't even check the recipe for this,
0:42
'cause I'm telling y'all this is like,
0:44
remember, rewind yesterday's show,
0:46
salt your water for your pasta
0:51
Your grand beef from Publix need,
0:53
or not from Publix, from the grocery store,
0:57
and put a little black pepper on it,
0:59
I've got my pan warmed.
1:02
So nothing that's fun is gonna happen
1:04
in the next six minutes.
1:05
I'm gonna be here browning this meat off.
1:07
Y'all do what you gotta do.
1:09
When you come back, Gentleman Joes y'all.
1:11
Hey y'all, I'm sitting here,
1:12
I just finished browning this beef,
1:14
and I wanted to show you
1:15
this is the trick that I use at the house.
1:17
When I have to strain any kind of steak,
1:22
any kind of protein fat
1:23
that I wanna get off my meat,
1:26
I always put my cullender inside the bowl here,
1:27
'cause you don't want this going down your kitchen sink.
1:29
So this is a nice way to do it.
1:31
It keeps your protein out, it's straining,
1:34
and then when it cools down,
1:37
and I can pour it into a tin can
1:40
and get rid of it that way,
1:41
instead of pouring it straight down the sink.
1:43
Now into this pan that we just used
1:46
I'm gonna wipe it out just a little bit,
1:48
I've got some bacon fat
1:51
that I have reserved from the bacon that I cooked,
1:55
and we also have an onion that I've sliced up pretty fine.
1:58
Just gonna wipe this out, 'cause I don't wanna burn
2:03
but I certainly love that essence of flavor
2:05
that's still in this pan.
2:06
So going straight back into this pan,
2:15
So in the pan I'm gonna add
2:18
the reserves of this little bit of bacon fat
2:21
that we have left from the bacon that we cooked
2:23
which is gonna go in our Gentleman Joes,
2:26
which the more I stood here and kind of think about it,
2:35
potato shepherd's pie sandwich, that's what it is.
2:38
We added a little bit
2:40
of some, a pea element, English peas or something.
2:44
What we're gonna be eating here today is
2:50
and rather than a puff pastry on top of the shepherd's pie
2:51
we're gonna put it between two pieces of bread,
2:54
which just sounds amazing.
2:56
I'm gonna get my onion going,
2:58
in my bacon fat here.
3:00
I'm not gonna, I don't wanna caramelize this,
3:03
I'm just gonna get 'em translucent.
3:05
These are fine working on their own over here.
3:08
Meanwhile, we're back to the potatoes
3:11
that we had on our show yesterday.
3:14
I'm gonna add three cups of potatoes.
3:19
Not all of these, but that's probably pretty close.
3:24
And I'm gonna bring these back up to temperature.
3:27
I'm gonna put it on low,
3:30
I certainly don't need to cook 'em,
3:31
don't wanna burn 'em,
3:32
but I wanna heat up my potatoes,
3:37
and then once it gets a little bit of warmth
3:39
we're gonna add the cheese to this,
3:41
and then we're gonna build everything together.
3:43
You see, Theresa's sliced these onions up
3:46
really thin, so it's not gonna take them very long to cook.
3:50
A sauteed onion starts so many delicious recipes for us,
3:54
and every time I smell it cooking,
3:56
it's always like the first page of a book.
4:01
Page one is saute your vegetables.
4:05
That's why I love to read books.
4:10
I did not know this morning
4:10
when I was waking up that I'd be making
4:11
a shepherd pie sandwich,
4:12
but it certainly seems like something
4:14
that I would want to get next to.
4:16
I love sandwiches and shepherd's pie.
4:19
Our potatoes are going over here,
4:20
I'm gonna work two pies at one time.
4:23
We cooked three pieces of bacon,
4:24
that's where the bacon fat came from that we reserved.
4:27
And I don't need all of this cheese.
4:29
I'm gonna use, I'd say probably
4:33
half a cup to three quarters of a cup.
4:40
and make a little bit of a mess for Theresa,
4:43
'cause everybody likes to feel
4:44
wanted and needed, don't they?
4:47
Just kidding, love you, Theresa.
4:49
Boy, that looks delicious,
4:50
that looks like a loaded baked potato in a pot.
4:54
Now that our onions have cooked down a little bit
5:00
just gonna give it one more minute.
5:01
I'm sorry y'all, this is boring to watch.
5:02
Cliff might cut it out,
5:04
but I just cannot do it to you.
5:05
I cannot put everything in here
5:09
until these onions cook up,
5:11
just one more second.
5:14
We're gonna add back into our onions,
5:18
this is our beef that we browned off.
5:25
Also to this we're gonna add,
5:32
I'm at the point now where if my arms
5:34
don't grow one or two more inches
5:36
I won't be able to read anymore.
5:37
I've got one cup of barbecue sauce.
5:44
That's kind of the theme today.
5:45
We're sticking with things that Jamie would like to eat
5:48
at a Georgia football game.
5:51
A Gentleman Joe certainly fits that description.
5:55
Every time I'm putting things together,
5:57
especially in the fall,
5:58
I think about when and how, I already know the why part,
6:05
How am I gonna get this somewhere,
6:07
keep it hot and make it delicious?
6:10
All we're doing is we're making our,
6:12
building our beef here,
6:14
which is really simple, it's only a few ingredients.
6:17
Choose your own barbecue sauce.
6:19
If you like Alabama white,
6:20
if you like Carolina yellow,
6:22
if you like Georgia red and sweet.
6:25
Using the Deen Brother's barbecue sauce
6:27
because no kidding that's my favorite.
6:30
It's all incorporated good together.
6:33
We cooking today y'all.
6:35
Melting our cheese and our butter.
6:40
I know that Cliff probably is gonna
6:41
put a break in here somewhere,
6:44
so I'll be in charge of that.
6:45
We're gonna step away for one quick second.
6:53
Kitchen's full of people,
6:57
I wonder why everybody's here?
6:58
It's because of what I'm cooking today.
7:01
So I'm gonna take my potatoes,
7:04
potatoes that we did with our bacon
7:09
Man, this does look like a gentleman.
7:11
So we've got our sauteed onions,
7:13
our barbecue sauce, our ground beef,
7:15
all of our seasoning.
7:17
Oh, look at that y'all.
7:21
What took so long for me to get this close
7:26
to something I love so much.
7:28
Sandwiches y'all, one of my favorite things in the world.
7:31
One of my favorite things in the world
7:32
is the unseen test tester over there
7:35
who saved just enough room
7:41
I'm so happy it's football season.
7:44
This is what I dig, man.
7:46
I'm Jamie Deen, this is good food,
7:47
we'll see y'all around the kitchen.
7:48
- [Paula] And I wanna look at it.
