- Y'all know my new friend by now,
0:02
Lisa Clap from North Carolina,
0:06
and she's got one more recipe to share with us, y'all.
0:10
And I adore this recipe.
0:14
My niece Cari makes a wonderful, fresh corn salad.
0:18
- Yum.
0:19
- And I'm assuming it's very close to what she does.
0:22
I can see by the ingredients.
0:23
It's not exactly alike,
0:25
but she's gonna share with us how she does it.
0:31
So Lisa.
0:32
- [Camera Woman] Lisa, tell us about
0:34
where we can find you, because as you've told
0:36
us in some of the other videos that you've got.
0:38
- Gotcha, you can find me always,
0:40
I started my blog on Facebook.
0:42
So it's cookin, cuttin up, keepin it real
0:45
on Facebook in your search bar.
0:46
- All right, say that one more time.
0:48
- Cookin, cuttin up, and keepin it real.
0:52
It's all Cs and no Gs.
0:55
- Okay.
0:56
Okay.
0:57
Like I.
0:58
- Like cookin instead of cooking.
0:59
Cuttin instead of cutting.
1:01
- Okay, okay, yeah.
1:02
- Or you can, you know,
1:03
you can Google search,
1:04
I also have a website it's cookin, cuttin up,
1:10
I can't never remember.
1:11
- [Camera Woman] We don't use websites very much
1:12
anymore, I mean.
1:13
- I cannot ever remember,
1:14
that's terrible, isn't it?
1:15
- No honey, I'm with ya.
1:17
- Well, here's what I can tell you.
1:19
Being a wife of a farmer for 31 years, okay.
1:23
I had to learn to do some tricks
1:26
with some of this stuff that they grow, right?
1:29
- Yes.
1:29
- So corn, okay.
1:31
We grow corn where we're from.
1:32
Okay.
1:33
So, you know,
1:34
it gets kind of boring with just cooking the corn,
1:37
and this is white corn.
1:37
- [Paula] That looks like silver queen.
1:39
- [Lisa] Mmm hmm, oh and people love that.
1:42
- [Paula] Which is my favorite.
1:43
- [Lisa] So I like to kind of figure out
1:44
how to do some different stuff, right.
1:46
- [Paula] That is deliciously sweet.
1:48
- [Lisa] So what I've done, I love corn,
1:49
and we love it any way you want to fix.
1:51
- [Paula] Me too.
1:52
- [Lisa] Right.
1:53
So what I did, I had four shucks corn.
1:56
I put them in the microwave
1:58
and I microwaved it.
1:59
- [Paula] In the shuck?
2:00
- In the shuck, just out of the field, you don't touch it.
2:04
Put it right in the microwave, two minutes per ear.
2:07
- Uh huh.
2:08
- Okay.
2:09
And then take that out, let it cool,
2:11
let it cool enough that you can handle it.
2:13
And then I shuck them, and threw the shucks away.
2:15
- And the silks fall out easily, don't they?
2:16
- Silks fall off so much easier.
2:19
- So that is a wonderful tip, y'all.
2:21
- It is, and you know, people ask me about it all the time.
2:23
And I'm like, you know, when you have to do it,
2:26
you learn it.
2:27
- [Camera Woman] Lisa, if you did multiple,
2:29
like if you put two or three ears in at one time,
2:32
how long would you microwave it?
2:34
- Well.
2:35
- Two minutes per corn, ear.
2:36
- Two minutes per ear is what I usually say,
2:38
but I don't put over two in my microwave,
2:41
cause I want it to cook evenly.
2:42
So I do two ears at a time.
2:44
- [Camera Woman] And you cook it for four minutes?
2:45
- I do, I'll do it three to four minutes,
2:47
and it depends how your microwave cooks.
2:49
- And it really probably depends on how big your corn is.
2:52
- It definitely does.
2:53
- Cause some of them can be like this
2:55
and some of 'em be like that.
2:55
- Yes, absolutely.
2:56
I like to freeze it just like that too.
2:58
I put it right in a freezer bag,
3:00
fresh out of the field,
3:01
and then freeze it, deep freeze it,
3:03
and then I take it out and we put it in the microwave
3:05
like that, or we'll put it on the grill,
3:08
but that's personal preference.
3:09
- All right, now you freeze it.
3:11
- I do.
3:12
- In the husk, in the silk, everything.
3:14
- That's correct.
3:15
- Well, Lisa, when I was in my late twenties
3:19
and we had a garden,
3:24
and putting up corn, green corn.
3:26
- Oh gosh.
3:26
- Was the hardest job I've ever done.
3:28
- It is.
3:29
- You have to have this much corn
3:31
to make this much corn.
3:33
- That's right.
3:33
- And it's one of the hardest vegetables to put up.
3:36
- I agree.
3:37
- So you're telling me,
3:38
I can go get me some fresh corn straight out,
3:41
put it in bags, freezer bags.
3:43
- That's right.
3:44
- And throw it in the freezer.
3:45
- That's right, that's right.
3:45
- And then pull it out, thaw it, put it on the grill.
3:49
- That's right.
3:49
- Or cut the kernels off and have a corn,
3:53
or I can grate it and have cream corn.
3:56
- Yes.
3:57
- Or I can put it in boiling water
3:59
and have just a boiled corn on the cob.
4:02
- Exactly.
4:03
Exactly.
4:04
- Y'all, that is incredible information.
4:07
- Yeah.
4:08
- I've been so out of touch with gardens
4:10
and things like that, you know.
4:12
- Yeah.
4:12
- We used to work in that garden
4:14
and I'd think I was going to die.
4:15
- Oh gosh.
4:16
And it's a lot of work.
4:17
- Oh, and I had so much fun.
4:18
I was with my grandmother making pickles.
4:21
- Absolutely.
4:21
- It was hard work, but it was fun.
4:23
- And there's nothing that tastes any better.
4:26
- No, no.
4:27
- There's nothing.
4:27
- No, no, no.
4:28
- So what I did.
4:29
- What all does your husband grow, excuse me.
4:31
- Oh no, no, no.
4:32
He grows tobacco.
4:33
- Tobacco.
4:34
- Tobacco.
4:35
That's our number one cash crop in North Carolina.
4:38
- I finally quit smoking.
4:39
- Good for you.
4:41
But it's still tobacco is the most,
4:43
I mean it is.
4:44
- North Carolina.
4:44
- North Carolina.
4:45
- The Carolinas.
4:46
- That's right in North Carolina,
4:47
he grows soy beans, corn, straw,
4:51
milo.
4:52
- Straw?
4:52
- Yeah, you know, people that are landscapers
4:55
and they buy straw to put in your yard.
4:57
- Pine straw?
4:58
- No, it's like a wheat straw.
4:59
- Okay.
5:00
- Mmm hmm, mmm hmm.
5:02
And then sometimes he grows milo,
5:03
and milo is something that is an ingredient in dog food.
5:08
- Oh.
5:08
- Yeah, yeah.
5:09
- So interesting.
5:11
So interesting.
5:12
I could talk to you all afternoon.
5:14
And when you get through with this recipe,
5:15
we're going to do just that.
5:16
- We are, I can't wait.
5:18
I can't wait.
5:19
- So get going darling.
5:19
- All right.
5:20
This one, I love it because there's no mayonnaise,
5:22
and so if you have four ears.
5:23
- [Paula] There's four ears?
5:24
- [Lisa] Four ears of corn, okay.
5:25
Put that in there.
5:26
And I cut it off.
5:27
Now I did one green, I mean one red bell pepper,
5:31
one red pepper.
5:33
You could use green pepper,
5:35
but green pepper doesn't agree with me always.
5:37
- [Paula] It doesn't, well the red
5:38
is sweeter than the green.
5:40
I like red bell peppers too.
5:42
- [Lisa] It makes.
5:43
- [Paula] I've got some things to do in the kitchen,
5:44
so I'm just gonna be pooting around in here.
5:46
- [Lisa] Okay, well you go.
5:47
- [Paula] And I'll be listening to every word you say.
5:49
- All right.
5:51
You poot around and I'll get with this.
5:52
I've also got a seedless cucumber that we've just cubed,
5:57
washed it.
5:58
And I like the skins on.
6:00
I'm gonna dump that in there, okay.
6:03
And then I also used about a half of a medium sized
6:08
Vidalia onion.
6:09
And I'm going to put that in there and this salad,
6:11
you can do what you want to with it.
6:13
If you don't like onions, don't put onions in it.
6:15
You could put jalapeno peppers
6:17
if you like jalapeno peppers, okay.
6:20
- [Paula] That's right.
6:21
Make it your own.
6:22
- [Lisa] Make it your own.
6:22
So, Miss Paula, here's what I did with this dressing.
6:26
- [Paula] What's in there?
6:27
Vinegar and oil?
6:28
- I went for a shopping trip in your pantry,
6:29
and I used a little bit of olive oil.
6:32
I used a little bit of this balsamic vinegar
6:36
because we like to use what we got.
6:37
- [Paula] Yes, that's right.
6:38
- [Lisa] I did just a dub dub of this red wine.
6:40
- [Paula] I like red wine vinegar.
6:42
- I did just a dub dub,
6:43
and then I put a teaspoon of this.
6:45
- Of my peach preserves?
6:47
- Yeah, because I wanted a little something sweet.
6:50
- Those are wonderful.
6:51
- We just needed something sweet, salty.
6:54
Just like you love.
6:55
- And I love, we carry these in the store y'all,
6:58
and for people traveling out of town
6:59
and just want to take a little memento.
7:01
- It's so cute, they're wonderful.
7:03
- I wanna see if I got some to give ya.
7:05
- But now I need you to put your finger in there
7:07
and just see if I got,
7:08
I put a little salt, little pepper.
7:11
Tell me what it needs.
7:15
Oh, and I squeezed the lemon too.
7:16
I got a lemon in there.
7:18
- All right, you stick your finger in it.
7:21
Cause I'm feeling like all I got was oil.
7:24
- Oh, you know what?
7:25
Let's stir this baby up, let's stir it up,
7:28
let's try it again.
7:34
- Mmm.
7:35
- Better?
7:36
- Yeah, it don't need nothing but my teeth.
7:37
- All right, I'm gonna put this over here.
7:40
And here's here's the pretty thing about this.
7:42
- [Paula] Yes, scrape out all that goody stuff.
7:43
- [Lisa] Yep, not only is this pretty and tasty,
7:46
but if by chance,
7:48
you're going to leave this out for a cookout,
7:50
you ain't got to worry about no safety,
7:52
as far as mayonnaise, sour cream,
7:54
and look how beautiful.
7:56
- [Paula] It's beautiful.
7:57
- [Lisa] And you know what?
7:58
- [Paula] Now you don't have tomatoes in there, do you?
8:00
- [Lisa] No, but you could put them in here, for sure.
8:02
- [Paula] Ooh, some little cherry tomatoes.
8:04
- [Lisa] Yes, you could make this so many different ways,
8:07
but now you got to taste this
8:08
because I need an expert opinion.
8:10
- [Paula] Look, look what I'm gonna use to taste it.
8:14
- Do it, do it.
8:16
How is it?
8:19
Is it slap your grandma good?
8:24
Mmm.
8:29
Is it Paula worthy?
8:30
- Mmm hmm.
8:31
- It's Paula worthy?
8:33
- I love, did you bring that corn from your field?
8:35
- Mmm mmm, they shopped for it here.
8:38
- Uh uh.
8:39
- They did.
8:40
But if you come to my house this time of year,
8:42
we'll have you some fresh corn.
8:44
- This is so good.
8:46
- Mmm hmm, I love it.
8:47
- I'm double-dipping.
8:47
- And delicious and economic.
8:50
I mean, it's not an expensive dish, right?
8:53
And beautiful.
8:55
Can you see how beautiful that is?
8:57
- I love, the glory of this is,
9:04
all the different things you can do with it.
9:06
- Mmm hmm.
9:08
This would be good beside a fish.
9:11
Pork.
9:12
Or just as a snack.
9:13
I would just eat a bowl of this.
9:15
- This would be great at a fish fry.
9:16
- I cannot thank you enough for having me down here for,
9:20
in your kitchen.
9:22
On your show.
9:23
- Lisa, it's my son's kitchen.
9:25
- Oh, that's right, I forgot.
9:27
Are we gonna get to see his pretty face?
9:29
- If you don't come visit me
9:31
when I move in to my house.
9:32
- I would love it.
9:33
- We're down to like eight days.
9:35
- I would love it.
9:36
- I don't know if we're going to make it, y'all.
9:39
- I would love it, but I've had so much fun
9:42
doing these recipes.
9:43
- How long's it been since we've seen each other?
9:45
- It's three years.
9:46
- Oh, get out.
9:47
Get out.
9:48
- At Myrtle Beach, at the book signing.
9:51
- It's been three years.
9:52
- It has, it has.
9:53
- Well, I just love you to pieces.
9:55
- I just love you too.
9:56
- And all my friends out there
9:57
that are not aware of you,
9:59
they're gonna fall in love with you too.
10:02
- You are so sweet.
10:03
And I just appreciate it.
10:05
I can't thank you enough.
10:06
I really.
10:07
- I got corn all in my teeth here.
10:08
- I think I got corn in my teeth too,
10:10
but I got some floss,
10:11
we'll floss after this.
10:12
- Oh I got floss, I keep flossing.
10:13
- Girl, yes.
10:14
- Love y'all.
10:15
- See ya.
10:16
- All the best dishes from Georgia and.
10:18
- [Both] North Carolina.
10:20
- That's right.
10:21
See ya.
