- Okay, y'all.
0:02
You are seeing this recipe on "Fat Tuesday."
0:08
Is when we're airing this for you to see.
0:11
Well, you probably know what "Fat Tuesday" is, right?
0:15
It's the last day that Catholics can eat something
0:19
really, really, really fattening
0:21
because tomorrow is gonna be Lent
0:24
and they're gonna be giving up things.
0:26
Now I am married to a Catholic,
0:29
but I'm a Baptist.
0:32
So, I may (laughs), but no matter what religion I am,
0:37
I should be more well-versed than what I am, y'all.
0:43
But that's all right.
0:44
I'm not well-versed in a lot of things.
0:46
But so, anyway, I am gonna share with y'all
0:50
this recipe for a king cake.
0:54
So to start off, I've got an 8-ounce package
0:58
of cream cheese, and I've got one cup of dark brown sugar.
1:04
So, I'm just gonna blend that together.
1:08
Really good.
1:14
So, did y'all know that this cake,
1:20
the king cake, started back in the medieval days
1:24
- [Theresa] Middle ages.
1:25
- In the middle ages. - Yeah.
1:27
- Ah, wow, that was a long, long, long, long time ago.
1:31
- [Theresa] Do you know why
1:32
they had to have this kind of cake?
1:34
- [Paula] No, why?
1:35
- [Theresa] 'Cause one person needed to be king for the day.
1:38
- Oh, (laughs).
1:39
- [Theresa] So they put a pea in it.
1:41
- And who decided this?
1:42
- [Theresa] I'm not sure about that.
1:43
But they put a pea in it.
1:45
- [Paula] Yes, back then,
1:47
and I'll show you what they put in it.
1:53
Okay, I think that's good enough.
1:58
- [Theresa] Yeah, I'm already sold.
1:59
- I know, I'm so hungry.
2:05
Want it to get all off.
2:08
I'm still working, woop.
2:10
(Paula laughing)
2:11
- [Theresa] I went somewhere the other day,
2:12
and it's kind of funny.
2:13
- I'm still working with them.
2:15
- [Theresa] It was a bakery
2:16
and she had her bowl left from the cookies.
2:20
And there were still like a little bit of dough,
2:22
and I so wanted to say, "If you were with Paula Deen,
2:26
you would not be having that dough."
2:29
- She left dough in the bowl.
2:31
Why? - Well, not a little dough.
2:33
But you know what I mean,
2:34
like how you go all the way around the edges and get every.
2:37
- [Theresa] She did not do that.
2:38
- Alight so, back in medieval days,
2:45
they made this king cake.
2:49
But they would put like a dried pea in there.
2:54
And Theresa tells me that they did that
2:58
so that whoever got that pea would be king for a day.
3:06
I don't know how, I don't know, did this include children,
3:09
or just adults?
3:11
I don't know.
3:13
Do you know Theresa?
3:14
- [Theresa] No, but it sounds like fun.
3:15
- It does sound like fun.
3:16
I wanna be king for a day.
3:20
In fact, I used to love that show "Queen for a Day."
3:23
In fact, I tried for years, y'all, to get somebody
3:28
to produce a show, the "Queen for a Day" show.
3:35
Oh, I wanted to do it so badly.
3:38
I said, I would used to come home from school
3:40
every afternoon and watch "Queen for a Day,"
3:43
and I'd squall like a baby when those women baked.
3:46
And this is what it was like back then, y'all,
3:49
in the '50s.
3:54
Their gift would be a washing machine
3:59
or an iron and an ironing board.
4:01
Something that they could do more work with.
4:05
They certainly were not giving gifts for a queen.
4:08
I said, "Work harder, work longer, women."
4:10
- [Theresa] But to be honest, back then,
4:12
those were like, those made life simpler.
4:15
- Yes, and it was who had the saddest story.
4:20
And then I think the audience voted
4:22
on who was gonna be queen.
4:24
And they didn't give away cars and things like that.
4:27
It was, like I said, a washing machine, or a dryer,
4:30
or something like that.
4:31
But so anyway, I never could get anybody
4:34
to go along with me.
4:36
But that's all right.
4:39
I've enjoyed it in my head.
4:42
So this is so good.
4:44
Now to this filling, I'm gonna add a half a cup of pecans,
4:51
and a half a cup of raisins.
4:55
Now if you want your raisins plump,
4:58
I could have set them in real, real, real hot water
5:03
and let 'em plump up.
5:04
But, I'm eliminating that step because I kind of like 'em
5:10
a little on the hard side, you know, for things like this.
5:15
So there we go, that's all mixed up
5:17
and it's delicious, y'all.
5:20
Okay, so now the cake part.
5:25
We're making this simple y'all.
5:27
We, I say "we."
5:29
Theresa went to the grocery store, y'all,
5:33
and picked up some frozen bread dough.
5:39
And you just let that thaw.
5:44
And I'm gonna sprinkle.
5:48
This is my favorite cutting board 'cause it's got my
5:51
pie circles, I love this.
5:55
This came out years.
5:57
- [Theresa] I've given this as gifts.
5:58
- Yes, years ago. - To people
5:59
and they love them.
6:01
- Love it, love it, love it, okay.
6:07
So.
6:12
- [Theresa] The bread dough came in a big pack of like five.
6:15
- Oh, it did? - So that's why,
6:17
I have it, that's why I have it in a Ziploc bag.
6:21
'Cause I didn't need all five.
6:23
- No.
6:27
All right, okay.
6:31
So we got our dough out pretty close to a 10x18, y'all.
6:37
And now that wonderful filling that we made
6:40
a little while ago,
6:42
we're gonna put it in here, and we're gonna spread it
6:46
within a inch of its sides.
6:53
Later on, down the way, in a more Western world,
7:02
the pea got changed to a baby.
7:06
And that baby was
7:11
in there, he represented our love for our baby Jesus
7:17
that we had.
7:18
So, that was why we changed it to a baby
7:22
at some point in history.
7:25
- [Theresa] Well, you know, Paula, I'm Catholic.
7:27
So. - Yes, you are Catholic.
7:29
And you're very staunch Catholic, aren't you?
7:31
- [Theresa] I try to be, sometimes.
7:33
But the thing that we were taught with the king cake
7:36
was it was a baby Jesus. - Yes.
7:38
- [Theresa] But that it was done around the time
7:41
of what we call the Epiphany,
7:42
which is the 12th day after Christmas,
7:45
which is January 6th,
7:47
when the Wise Men found the baby Jesus.
7:50
- Jesus, yes, because he was two weeks old,
7:55
wasn't he, by the time the Wise Men
7:57
followed the star. - Right.
7:59
- To his stable where he was living.
8:03
- And so that's why they, and then,
8:05
so they changed it to a baby.
8:10
To represent Jesus.
8:12
- All kind of information isn't it?
8:15
Today.
8:17
I'm gonna cut that dough off a little bit.
8:22
I'm gonna cut this one off.
8:24
All right, and we're gonna roll this long ways.
8:31
Just like this.
8:37
This is gonna be so good, y'all.
8:42
All right, now what we wanna do now,
8:45
is now that we can, do you wanna come around here?
8:48
- Certainly. - And take a picture
8:51
of it this way? - Eddie does a much better job
8:55
at cameras, and I realize that, so.
8:57
- No, you are doing fine.
8:59
So we just wetting that edge with a little water.
9:11
So it will stay sealed.
9:14
And now we're gonna do the same thing over here.
9:22
And we're gonna pinch that together.
9:27
- Look at that. - Yes, we don't want
9:29
that piece 'cause it doesn't have any filling in it.
9:34
- We won't tell anybody. - No.
9:37
- Just gonna seal it with a little water.
9:41
Now I'm gonna push some filling in there.
9:44
- [Theresa] And, Paula, a lot of what bakers do now.
9:47
- Now how am I gonna get this on the cookie sheet (laughs)?
9:57
I should have put it on my baking sheet first.
10:04
Okay, y'all, before I rolled it into a circle,
10:09
I should have put it on my cookie sheet, but I didn't.
10:13
But I was actually able to just pick it up
10:17
and transfer it my cookie sheet, which I've sprayed lightly.
10:23
And now we're gonna spray
10:27
our king cake with this spray.
10:30
And hopefully that'll turn it a real pretty shiny.
10:35
- [Theresa] Could you do an egg-wash on that?
10:36
- Huh? - Could you do an egg-wash?
10:37
- Yeah, you could do an egg wash on this.
10:40
So this is gonna have to
10:47
sit for about 45 minutes to an hour
10:52
in the oven.
10:52
And what I did, 'cause it's really chilly.
10:55
It's a little chilly here in Savannah, so I cut my oven on.
11:00
And then I cut it off and hopefully that will,
11:09
that will be just about the right temperature.
11:14
So we're gonna cover this with plastic wrap.
11:19
And rise, baby.
11:24
Like Jesus did on a Easter Sunday, rise.
11:28
Okay.
11:30
I have no idea what the,
11:34
it's nice and warm in there, nice and warm.
11:39
I can't remember the temperature of what they say
11:42
for a warm spot
11:45
when you're rising,
11:47
trying to rise dough.
11:50
It's something I'll have to look up, y'all, I'm sorry.
11:52
I don't have that information on the top of my head.
11:55
- [Theresa] We can put that in the, we can add.
11:56
- I don't know if it's 85.
11:58
Yeah, I can't, I just can't remember.
12:01
But anyway, that's got to do its magic.
12:06
- [Theresa] And we'll be back.
12:07
- For the next 45 minutes.
12:08
Yes, and then the fun part comes in.
12:12
'Cause we gonna color and do all kind of stuff.
12:16
And you'll notice that I did not put a baby in the center
12:22
because I really don't like the idea of baking plastic.
12:26
So when we take it out of the oven,
12:28
I'll cut a little slit and stick that baby somewhere
12:33
in that cake, and whoever gets that piece is gonna be a king
12:37
or a queen for a day, right?
12:41
- [Theresa] Eddie and I will be fighting over it.
12:42
- You can be a queen too.
12:44
Not just the king, right?
12:45
- [Theresa] Yeah.
12:46
- Our king cake looks great, y'all.
12:50
And remember, I had it in an oven that had been warmed,
12:58
and then I cut it off.
13:00
So it rose really, really nice, didn't it, Eddie?
13:04
- [Eddie] Yes, it smells so good.
13:06
- Yes, smells like yeast rolls, so good.
13:09
There's nothing better.
13:10
So now we're gonna put this in the oven, y'all.
13:13
We're gonna bake it for 35 to 45 minutes at 350,
13:18
I believe it is.
13:20
Is that right, Theresa?
13:22
- [Theresa] Yes, ma'am.
13:24
- Okay, so I'm putting it in the top rack,
13:31
which is like the middle, the middle of the oven.
13:36
So I think I'm gonna set the timer for you, Theresa.
13:43
- Okay. - Because I am fixing to leave
13:48
to go to Jack's final play-off basketball game.
13:53
Because tonight the winner is the champ.
13:56
It's the city champ.
13:58
So again, he's real excited about that.
14:01
So I'm gonna run to his basketball game while that's baking.
14:06
And then we'll finish it up right after I get back.
14:11
Okay, look at our king cake, y'all, it turned out so good.
14:15
Uh-oh, I left a baby over here, I got a baby here,
14:19
I got a baby there.
14:21
Now I'm gonna just, I made me a little slit,
14:26
and I'm gonna stick that baby in right there.
14:31
Let me see if I can, there we go.
14:34
And hopefully the frosting will cover that up.
14:37
But I know that that baby is where I, where my seam is.
14:44
Okie-dokie, all right.
14:48
Now we're gonna make the icing.
14:51
And let me give you all the correct measurements,
14:55
a cup and a half a confectioners' sugar,
14:56
and three tablespoons of milk,
15:00
and one teaspoon of butter or vanilla flavoring.
15:04
So I'm gonna go ahead and get, uh-oh.
15:08
I'm gonna go on and get our teaspoon
15:13
of vanilla flavoring in.
15:19
All right, so I'm gonna measure out
15:21
three tablespoons of milk.
15:29
Okay, now we're gonna need to whip up our icing.
15:44
And the recipe says if you need more milk, just add it.
15:50
Now we've let our king cake completely cool, y'all.
15:54
So if we'd put it on there while it was hot,
16:01
it would have slipped, it would have melted all off.
16:04
So we don't want that to happen.
16:07
(electronic beeping)
16:09
And y'all's papa's home,
16:14
y'all's papa's home.
16:18
Okay, so I just wanna make sure I pull the lumps
16:20
out of there.
16:24
So I think that looks pretty, pretty good.
16:34
My milk spoon.
16:37
And I'm gonna come over here.
16:40
And I'm gonna start icing.
16:44
And let it run down the sides.
16:49
Okay, so we wanna quickly do this
16:54
because remember the colors of Mardi Gras.
17:01
Let's see, it's.
17:06
Golly bum.
17:11
One is for reverence, one color is for, gosh, Eddie,
17:18
do you remember?
17:19
- [Eddie] No, I was doing the giveaway when you and Theresa
17:24
were going over all that.
17:27
- Were talking about all that.
17:29
Gosh, now I can't remember.
17:31
But you can look it up.
17:35
- [Eddie] The three colors represent.
17:37
- [Paula] Yeah, what the three colors represent.
17:41
I'm thinking one of them was reverence.
17:57
I'll get every bit of this stuff out of here, y'all.
18:02
All right, so here we go.
18:05
- [Michael] Green, gold, and purple, representing faith,
18:07
power, and justice. - That's it.
18:09
That's it, y'all.
18:11
Faith, power, and justice.
18:14
So here's a little power.
18:21
- Think that was faith. - Okay, what's the purple?
18:26
- Purple is justice. - Justice.
18:28
Okay, we're gonna get some justice in here.
18:39
Well, hey, Lulu, you left her outside, Papa.
18:44
Alright, now here's some purple,
18:45
oh, I love that purple color.
18:50
Don't y'all like the purple?
18:53
I think the green, we just need some more green.
19:01
Okay, and what's the yellow for?
19:07
- Power. - Power, okie doke.
19:16
And if you find the baby, Papa,
19:20
you get to be the king for the day.
19:23
- [Michael] I had it last year and I didn't get anything.
19:25
- Yeah, yeah. - You got to be king.
19:27
- [Eddie] You don't remember being king?
19:29
- [Michael] No.
19:31
- [Paula] Well, that's too bad.
19:37
All right. - That's perfect for my diet.
19:40
- I know it is perfect your diet.
19:46
I love the purple color.
19:50
All right, now I'm gonna
19:50
try to scoop some of this icing up.
20:05
I think I would like to make a little bit more icing
20:07
next time (laughs).
20:11
- Imagine that. - 'Cause y'all know
20:12
I'm a condiment girl.
20:27
Okay, can y'all see where it needs anything else?
20:33
I think it's beautiful.
20:35
What do y'all think?
20:38
Do you think that's beautiful?
20:41
- [Michael] Yes.
20:43
- And there's a baby in there.
20:47
And if you find it, people.
20:52
- [Micheal] I'm not gonna eat any of it, so if I find it,
20:54
I gotta just get a knife and fork.
20:58
- All right, well, I'm gonna taste it.
21:02
- [Micheal] Watch you get the baby first.
21:04
- I know where I put the baby.
21:07
- [Micheal] That's not fair.
21:17
- I tell y'all, using that frozen bread dough
21:21
that you get from the grocery store, that is the ticket.
21:29
Because it made it so simple.
21:31
Look at our king cake.
21:37
It's so good, people.
21:45
You wanna taste it?
21:47
- No. - No?
21:49
- You won't taste it? - No.
21:54
- When he, when he diets,
21:58
he does not cheat.
22:00
He does not cheat, not one time.
22:03
You sure you don't want a bite?
22:04
- I'm not eating. - He ain't eating it.
22:08
- That's all right, then there's more for me and Eddie.
22:11
Hey look, that's a great way to get that icing outta there.
22:17
Mm-mm-mm.
22:21
You better eat it before Lent.
22:23
- [Micheal] Y'all should be bouncing me around.
22:28
- 'Cause you know, Michael, you eat this on "Fat Tuesday,"
22:33
'cause the next day is Lent.
22:36
So you can't have any when Lent gets here.
22:39
- [Micheal] I know.
22:41
- But on "Fat Tuesday," let's eat up.
22:47
I love them best dishes, y'all.
22:51
And when this airs,
22:52
it's gonna be your last day to be able to, well,
22:55
it depends on what you're giving up for Lent.
22:58
You may be giving up just milkshakes.
23:01
Right?
23:04
Love them best dishes, y'all.
