I am gonna make a recipe and share with y'all today,
0:04
one that I made, it's been a few years ago,
0:09
because my dancing partner
0:13
on Dancing with the Stars,
0:15
was Louie Van, come on, help me.
0:21
Van - [Female] Amstel.
0:22
- Amstel, that's right.
0:24
It was a hard name for me to pronounce and remember.
0:27
But he was of Dutch descent,
0:30
and he had come here to start working with me
0:35
and preparing me to begin our dances.
0:41
And he said something about,
0:43
he liked Dutch Babies.
0:45
And I said, well, it just so happens that,
0:49
at the Southern table, I have a recipe for Dutch Babies.
0:53
And that recipe is more like closer to a sweet,
1:06
Now I have another recipe
1:08
for a savory Dutch Baby in the bake and cook book.
1:12
And it calls for all kind of herbs, and things like this.
1:18
So this would definitely be a savory one.
1:21
And this is more toward sweet.
1:24
Although that one does call for brown sugar.
1:27
But you are gonna need a 10 inch cast iron skillet,
1:33
which this is a 10 inch,
1:36
and I'm gonna put a half a cup butter,
1:42
And we are gonna need to pour our butter into a hot skillet.
1:46
So I'm gonna put the cast iron skillet with the butter,
1:50
in the oven and get the skillet hot,
1:54
and melt the butter at the same time.
1:56
So I'm gonna start with three eggs,
2:05
you can do this with a hand mixer.
2:07
You can do it with a food processor,
2:09
or you can do it in a blender.
2:14
But I'm gonna do that with my little.
2:21
My little electric beater.
2:24
Okay, so that's three eggs.
2:29
So we're gonna beat that, the eggs and the milk,
2:36
until they're, nice and smooth, and well incorporated.
2:50
Okay, just right over here.
2:57
And I'm gonna go ahead and add the milk,
3:01
All right, that's nice and smooth.
3:03
Now I'm gonna add a flour,
3:07
and we're gonna process that until it's full.
3:15
Now I'm gonna go ahead and my sugar.
3:21
Now I'm gonna add some lemon zest.
3:25
And would you believe we are,
3:26
these are lemons from our yard.
3:28
We're still getting lemons.
3:30
All right, and we are gonna get us about a teaspoon,
3:40
Oh my gosh, that smells so good.
3:52
We still got a lot of grapefruit
3:53
on the trees too, Eddie.
3:56
- And we got grapefruit over there in the bowl
3:57
that we hadn't eaten, don't we?
4:01
So to get a teaspoon of zest,
4:06
it will probably take the, one whole lemon.
4:18
So this is gonna be so good.
4:24
And this is kinda being compared to,
4:32
oh my gosh, what is it?
4:36
because it's, it has a texture kind of a Yorkshire pudding.
4:41
And I don't know if y'all have ever had one,
4:43
but it's that, it looks like a big roll,
4:47
and you open it up and it's hollow in the center.
4:50
And Yorkshire pudding is usually served with like beef,
4:59
Our butter is way melted,
5:04
and we are just gonna take,
5:06
pour our butter right into the skillet.
5:13
We wanna get all that zest in there.
5:23
And I can't wait for y'all to see this,
5:25
if you've never made a Dutch Baby
5:30
I can't wait for you to see what it does.
5:35
Okay, so here we go, back in the oven,
5:39
and this is gonna cook,
5:42
it'll cook for like 12 minutes,
5:44
cause we're cooking it in a pretty, pretty hot oven.
5:49
For those of you that have never seen a Dutch Baby,
5:56
they are so cool looking, so cool looking.
6:05
look at that butter in there now.
6:11
I'm gonna let it cook for a couple more minutes.
6:15
And did you see how it was all humped up in one area?
6:25
So this is the way we're gonna serve it.
6:31
What is Lulu all worked up about?
6:52
So what do y'all think?
6:55
Y'all like a Dutch Baby pancake?
7:00
And you remember that lemon I zested?
7:09
and I'll squeeze a little lemon juice on it.
7:16
I wish Louis was have to eat some of this, y'all.
7:24
What you think Eddie?
7:25
- [Eddie] Looks good.
7:26
- It does look, doesn't it?
7:29
Now, sprinkle this with confection sugar,
7:33
and then squeezed a little lemon juice on it.
7:35
So if you feel like you need more of either of those.
7:39
- Have you tasted it yet?
7:41
- No, I'm standing up here swallowing hard though.
7:55
Now I know that I need a little bit more of that.
8:05
Okay, now go back and get me some more too.
8:08
Eddie, oh, you hadn't tasted yours, have you?
8:13
Yeah, like I said, you can do 'em sweeter savory.
8:17
So the sugar I put in there,
8:21
it also kinda looks like an egg custard pine,
8:26
- My dad loved egg custard.
8:29
- You can taste the lemon zest in it.
8:32
- Mhm, mhm, mhm, plus.
8:38
- The lemon that you poured over the top.
8:40
- Mhm, don't agree on that one.
8:45
- That was good and easy.
8:50
That's like lemonade now.
9:16
That's a wonderful recipe for brunch,
9:19
or another Sunday night dinner, or just.
9:26
- I could take a big old thing of whipped cream.
9:27
- I know. - And put it over it,
9:30
- Just cause you want a Dutch Baby dammit.
9:32
- Fruit compound of some kind.
9:36
- That, (claps) loving best dishes.
