- Hey, y'all I'm Jamie Deen I'm in mama's kitchen.
0:02
I'm bringing you delicious easy recipes.
0:04
Again, today we're doing barbecue chicken.
0:07
My brother and I shot a television show called road taste.
0:10
We traveled all over the country
0:12
and we put together a cookbook that was inspired
0:14
by all the different flavors that we were able to taste
0:17
from Tennessee, we took away barbecue,
0:20
fantastic barbecue in Tennessee,
0:22
and every good barbecue starts with a sauce.
0:24
So if you can't get the Dean brothers barbecue sauce
0:27
which is the absolute best barbecue sauce in the world.
0:30
you can start here next.
0:33
A traditional Southern sauce is gonna have ketchup,
0:36
and it's gonna have brown sugar
0:38
and we've got our dry mustard, our Paprika,
0:40
some liquid smoke, Worcestershire,
0:41
and orange juice is a great ingredient to barbecue sauces.
0:46
Now some sauces are more mustard based, which I love.
0:51
Dean brothers has got a mustard based sauce too.
0:53
But, if you're talking about traditional Southern
0:56
it's gonna be brown sugar and ketchup.
0:58
So I've got brown sugar
1:00
and ketchup uh oh that are going together.
1:04
I mean, it's been a Monday y'all
1:06
which is not good because today's Thursday.
1:08
Hm we've got our Paprika.
1:11
No, this is our Caen pepper,
1:13
little bit of heat, dry mustard.
1:16
It's not gonna make it a mustard sauce
1:18
but that mustard that little bit of tang I really
1:21
like a lot. liquid smoke.
1:24
So we're doing this in the oven
1:25
inside in just a tiny little bit, one quarter
1:28
of a teaspoon, a liquid smoke will give you
1:31
the flavor that the grill gives you outside.
1:34
Worcestershire sauce, which I love so much.
1:38
It's such a good flavor,
1:40
and it's perfect layer for our barbecue sauce.
1:44
And then this is what I really like the orange juice
1:47
which gives it citrus.
1:49
And it brightens it up a little bit.
1:51
Gives it a little bit of tang we're going two
1:53
tablespoons orange juice here.
1:56
Now let's whip this up.
1:59
Now my mom used to do a sauce where she would cook this
2:02
down and then we would put it onto our chicken later.
2:05
But what I like about this recipe is
2:07
that I don't have to do anything ahead
2:09
of time with this sauce other than whip it up
2:12
cause we're gonna cook this in the oven on our chicken.
2:16
We're using an eight way chicken.
2:17
Y'all been to the store lately?
2:20
You might think your chicken's been mislabeled filet mignon.
2:23
I saw a fryer chicken
2:25
one whole chicken in the grocery store the other day.
2:29
And the fryer chickens used to be
2:32
the ones that you could afford to
2:36
All the prices are going higher,
2:38
but chicken is always gonna be a good
2:40
good resource for y'all
2:43
cause it stays relatively affordable and everybody likes it.
2:47
I'm gonna hold back one third of this sauce.
2:51
I'm just gonna put it
2:52
in our kitchen container, our catcher container.
2:58
let's take this chicken,
3:00
and we're gonna run it through our sauce.
3:03
I've got an eight way here.
3:05
Two breasts, two wings, two thighs and two legs.
3:15
I'm just gonna turn it all to get it nice and coated.
3:19
And then the third of the sauce that we say
3:21
I'm gonna brush that on right towards the end.
3:24
Now, if y'all want to do this outside, you can.
3:26
It's certainly grilling season.
3:28
It is fire hot down here.
3:31
And if you're doing this for dinner, you might not have time
3:34
to, to man your grill.
3:36
So you've got a good barbecue chicken that we can do
3:40
I'm gonna lay these out.
3:49
These are gonna go into the oven for about 45 minutes.
3:53
You know, I want this to be 165, so I'm definitely
3:56
gonna check the temperature before I pull 'em out.
3:59
But I'm gonna start with 30 minutes.
4:01
We're gonna go in there about probably 350, 375.
4:05
You've got oven baked, barbecue, chicken y'all.
4:08
And if you want to, surround all this with potatoes
4:11
and cook it at the same time, we'll see you in 30 minutes.
4:15
Okay, y'all I've been in the oven for about 20 minutes.
4:21
My temperature's doing good.
4:22
The last bit of sauce that I had reserved.
4:26
I'm gonna cover this chicken with it and we're going back
4:29
into the oven. Maybe 10 minutes.
4:31
Keep an eye on your temperature.
4:33
165 is a safe temperature for us to eat.
4:36
This smells delicious and it's gonna be delicious.
4:40
All right. See you in 10 minutes.
4:44
Inside barbecue chicken y'all.
4:48
Really, really easy and delicious.
4:52
If it's raining one day or too hot or too cold outside now
4:55
you know, you can have barbecue chicken inside.
4:58
This is good chicken.
4:59
We'll see y'all around the kitchen.
