- Hey, y'all welcome back to Mama's Kitchen.
0:02
And today we're using one of the most delicious fall fruits
0:06
that there is, butternut squash, which I love.
0:10
I've got a fantastic recipe
0:12
for a butternut squash fall salad in my cookbook,
0:16
Jamie Dean's Good Food.
0:17
If you wanna check that out.
0:18
But today we're doing a simple
0:22
Let me tell you what this is.
0:24
Corn and butternut squash side recipe.
0:27
Now to get this started
0:28
I've got probably two pieces of bacon
0:30
that I've cooked in here, and I'm gonna add in our onions.
0:36
So I just cooked the bacon before y'all got here
0:38
'cuz that's kind of boring,
0:39
and I'm gonna cook these onions down
0:40
for just about two minutes.
0:42
But first of all, let me tell you about today.
0:44
My son Jack Dean, drove himself to school.
0:48
I ain't here for none of it.
0:52
Of course, I followed him the whole way
0:56
He's a lot of mergin' and traffic and stuff.
0:59
And Jack's only three years old.
1:00
How is he driving himself to school?
1:07
He's a good driver and he's earned it.
1:09
Any of y'all out there got kids
1:10
that are starting to drive right now?
1:13
I was just getting comfortable with everything.
1:15
Oh, and my two-year-old
1:17
filled up a diaper yesterday like a champion.
1:21
And then I've got my kids saying dad, where's my car keys?
1:25
y'all say a prayer for me.
1:27
I've got these onions cooked down for just a second.
1:33
tablespoons of butter to this.
1:35
You think golly, you got bacon grease in there
1:37
and then you're gonna add all that butter?
1:39
'Cuz butternut squash is such a dense vegetable, a gourd.
1:44
It's gonna take a little bit of time for that to put down.
1:47
So once this butter gets, it's going pretty good, now.
1:50
I'm gonna add our butternut squash.
1:54
Now, this y'all is gonna take about 20 minutes
1:57
for it to brown up and soften up.
1:59
And I'm not gonna subject y'all to this,
2:01
unless you'd like to stick around for 20 more minutes
2:04
and hear me complain about my son driving his car.
2:07
How about we take a quick break and we come back,
2:09
this will be done and I'll be
2:11
a little bit more relaxed, okay?
2:14
We're back in the pot.
2:15
Now, you see how this is brown?
2:17
Man, that looks fantastic.
2:19
To this, I'm gonna add a little bit
2:29
Now, all I have to do with this corn is heat it up.
2:32
So just a few minutes in the pan.
2:35
Let's start back over where we started
2:37
now we got some butter, some bacon,
2:39
we got our acorn squash.
2:42
And it's cooked down pretty good,
2:43
so I'm gonna be very gentle with this.
2:46
It's like when you're making potatoes salad
2:48
if you're not careful, you'll be making
2:50
a bowl of mashed potatoes instead of potatoes salad.
2:54
So I don't want to beat these acorns squash
2:57
up too much to where they cream out on me.
2:58
I want want 'em to keep, to hold their consistency.
3:01
So that's it for stirring as far as this goes.
3:04
This corn is gonna heat up really quick for me.
3:08
Y'all this is gonna be good.
3:10
Now this is interesting part of this.
3:12
I've got dry mustard,
3:15
but we're gonna add our dry mustard in here.
3:18
And the very last thing that I'm gonna add
3:22
is some fresh cut basil.
3:25
We have built a dish here that has
3:27
so many different flavors.
3:29
I really can't wait to try it.
3:33
With our fresh basil turned in here, now.
3:35
Look how pretty that is.
3:37
This is a really neat side dish
3:39
that you can serve any time of the year,
3:41
but it really does spring and fall.
3:48
I'm gonna use the slotted spoon
3:49
because we did start with a good bit
3:51
of lubrication under there.
3:54
And if there is any remaining butter
3:56
or bacon grease I want to keep
3:58
that out of my serving dish.
4:01
So pretty with the colors and all the texture.
4:05
Corn, bacon, and acorn squash.
4:09
Fall really holds a lot of my favorite things.
4:13
Memories from when I was young,
4:18
Love, love, love all the taste of fall.
4:22
No, it's not an episode with me,
4:24
unless I burn my mouth.
4:35
It's so hard to describe all the flavors
4:39
This is really a home run dish
4:42
that I hope y'all will try at home.
4:44
I'm Jamie Dean and this is good food.
4:46
Thanks for tuning in.
4:47
We'll see y'all around the kitchen.
