0:01
the recipe I'm sharing with y'all today
0:04
is from Deen brothers,
0:07
So maybe they were thinking about their mama
0:11
when they made this stuffed tomato dish.
0:17
they were going to make it for me for Mother's Day,
0:19
maybe for a light lunch
0:21
and then cook me a big dinner later.
0:23
(laughing) Am I dreaming?
0:29
this is a wonderful, wonderful
0:34
It's almost too big for an appetizer,
0:36
so I would consider it a meal,
0:43
we actually used to do these on, "The Bag Lady",
0:47
and people really liked it, especially during the summer
0:50
when the summer tomatoes were in.
0:52
So as I'm mixing this up for my boys,
0:55
I'm thinking about you mothers out there.
0:57
This is something simple and easy
0:59
that your children could fix for you,
1:01
or your husband, your partner, whatever.
1:07
we never have liked a lot of ingredients
1:10
in our chicken salad.
1:11
We really like for the chicken to be the star
1:15
and not fill it up with a bunch of stuff.
1:18
So I'm going to start with
1:22
my two hard boiled eggs.
1:25
Look at that, boiled perfectly.
1:27
Do you see a perfect egg
1:30
has no brown line around the yoke.
1:34
Did you boil these Theresa?
1:36
She said, "No, I didn't".
1:39
- [Theresa] I could have lied, but I didn't.
1:40
- I didn't. (Theresa laughing)
1:41
It's never good to lie, even if
1:44
you look like a turd.
1:53
Yeah, I felt a little bit of shell.
1:55
So you picked these up from the deli?
1:58
- [Theresa] Yes, ma'am.
1:58
- And I tell you what- - Single two pack deli.
2:06
and they have boiled them perfectly.
2:10
So I'm just going to mash those up.
2:14
And I think I'm going take my knife
2:16
and just cut it a little bit smaller.
2:19
I don't want them so big, because
2:22
there's not much room in that tomato.
2:28
so I don't want to scoop it in there
2:30
and it be all egg or all celery
2:33
or all something besides chicken.
2:40
This bowl is a little deep.
2:42
And I have to tell you,
2:43
usually I do this with my hands,
2:46
because I find that my hands do a better job
2:52
what I'm doing right now.
2:57
I have two chicken breasts here
3:03
and I'm going to add this.
3:04
Now this will stuff four large tomatoes.
3:19
What was in that? Oh, some more chicken.
3:22
All right, I've got a stalk
3:29
I am going put about a eighth of a teaspoon
3:34
of garlic powder in it.
3:36
I'm going to put a little salt,
3:45
and that's basically it.
3:48
That's the way we really like our chicken salad.
3:54
Calls for a fourth of a couple mayonnaise but.
3:59
I thought my boys liked mayonnaise like I do
4:01
but apparently they don't.
4:03
'Cause a fourth of a cup of mayonnaise is,
4:07
to me, going to leave it wanting a little bit.
4:11
(indistinct background chattering)
4:15
There's some things that I just
4:20
Girls got to do what a girl's got to do.
4:25
I'm a little under the weather today y'all so
4:27
I hope I can get my brain to working for ya.
4:31
Let's see what'd I do? Oh here it is.
4:43
Like I said, this will do four large tomatoes but
4:47
I'm just going to do one to share with y'all
4:56
on, "The Bag Lady", route.
5:03
when I'm doing it at home, so.
5:08
I love butter lettuce, y'all.
5:16
to me, the most delicious of all the lettuces.
5:31
it's not dense like iceberg lettuce.
5:36
And I've always had a fear,
5:42
told me one time, an RN, and she said,
5:44
"Do you know what the number one food is
5:46
that people choke on?".
5:47
And I said, "Well, Steak".
5:49
She said, "No, it's lettuce".
5:54
Because it becomes almost
5:58
translucent and almost acts as like
6:03
a plastic wrap or something.
6:05
(indistinct background chattering)
6:06
And it will. (indistinct chattering)
6:09
And listen, she told me this when
6:11
Kari was a little girl.
6:14
So naturally Kari wanted a salad before every meal
6:17
and I would sit there like this watching her.
6:19
I couldn't eat just watching her eat that salad.
6:22
But I sometimes wish she hadn't have told me that,
6:26
'cause it got in my head, you know?
6:29
But even though this lettuce is not dense like iceberg,
6:37
I just don't have any fear when I'm eating butter lettuce.
6:42
All right, so what I'm going to do next is
6:46
core out this tomato.
6:50
Like I said, this is so good
6:52
when those good old Georgia tomatoes come in.
6:55
- [Theresa] We're just about what, a month away from that?
7:04
This almost cut like a
7:10
You know, heirloom tomatoes,
7:14
they have like a core in the center of them.
7:18
And I don't know if I'm going to be able to get it out
7:20
It has a hard core in there
7:26
you have to just cut that out.
7:29
An heirloom is just different
7:36
Now I'm going to slice a little bit of this off so I can
7:44
and then I'm going to hull out what I can
7:48
to make room for that delicious-
7:52
That knife went right through there twice.
7:58
So you'd probably want to
8:03
sit it on the counter so you won't do that.
8:09
Yeah, they're just not quite as easy to work with as
8:17
But they sure are delicious.
8:19
I mean, and that core goes all the-
8:21
That hard center goes all the way
8:24
to the bottom of that tomato.
8:33
And I'm just going to dig till I get it out.
8:38
You would actually want to do this ahead of time y'all,
8:47
it comes out of that tomato.
8:49
So you'd want to do this early,
8:53
sprinkle a little salt on the inside of it
8:58
and that salt will pull out the water
9:09
And I'm going to even help it along
9:19
So like I said, early in the day
9:24
you would just sprinkle a little salt in it
9:26
and turn it upside down
9:33
and let that water get out of it.
9:36
So that's my advice for that.
9:41
We'll see if I can get a little bit more out.
9:57
So I'm going to need some crackers for this,
10:07
would definitely want a good,
10:09
good quality cracker
10:15
to eat along with this chicken salad.
10:24
(indistinct background chattering)
10:25
Oh, and those are wonderful gifts,
10:27
those are wonderful.
10:31
I love these crackers, I
10:33
pulled them out the other night for Michael and I,
10:35
to have along with our dinner.
10:41
"I've never seen those crackers before".
10:45
Michael don't open my door to find anything,
10:48
that's why he has not seen them.
10:56
They're so good and so crispy.
10:58
(crackers clattering)
11:08
this is the way I would serve that.
11:13
It's perfectly yummy, y'all.
11:20
And if you really wanted to cheat,
11:24
you could just get you a chicken,
11:26
a rotisserie chicken from the grocery store.
11:33
There is nothing like
11:36
a simple chicken salad.
11:39
Nothing, nothing, nothing.
11:47
this summer when the tomatoes start coming in real good,
11:51
I do hope that y'all will treat yourselves to one of these.
11:55
So I'm sending y'all love and best dishes this Mother's Day.
11:59
I hope it turns out to be a wonderful day for you mothers.
