- Hey y'all, I'm Jamie Dean back in Mama's Kitchen.
0:02
You know, I'm gonna share delicious easy recipes with y'all.
0:05
And today I'm doing three of my favorite things
0:08
all combined. Chicken, cornbread, casserole.
0:12
I love all three of those things.
0:14
And this is really simple for you busy folks at home
0:17
'cause it's basically just a dump
0:19
and put everything together.
0:20
So in this bowl I'll go down the list for you.
0:22
We've got, this is a can of diced tomatoes
0:25
with green chilies in it.
0:26
You can find it at your grocery store.
0:28
You could get it, this is original, or you could go medium,
0:30
or you could go spicy hot if you'd like.
0:32
We got some lime juice,
0:34
some chicken that's already been pre-cooked.
0:36
Some, a purple onion.
0:38
We've got some jalapenos, some sour cream, and some cheese.
0:43
So all this stuff is gonna go into our first bowl.
0:46
Now you can either save leftover chicken for this
0:49
or you can boil your own chicken
0:51
or you can roast your chicken
0:53
or you can use a rotisserie chicken.
0:55
There's no wrong way to do this when we're busy at home
0:59
with our families. Also have cilantro.
1:02
So if y'all have watched me
1:03
you know where I'm gonna put the cilantro.
1:06
I appreciate Teresa giving me the opportunity
1:07
to tell y'all about it, but I don't care for any dish water
1:11
in my chicken cornbread casserole.
1:15
So I'm gonna not use the cilantro.
1:18
But I would love for y'all to, if that's what you like.
1:22
Also, our seasoning going in here
1:24
one of my favorites, cumin.
1:27
Cumin gives it, cumin is a funny,
1:34
funny ingredient for me
1:35
'cause I cannot make a bowl of chili without cumin.
1:39
Cumin tastes like chili to me
1:41
but when we put it with this chicken
1:45
it lends itself to a Southwest flavor.
1:49
So we're gonna stir all this up.
1:53
And it could be that your chicken is already seasoned.
1:55
I know any chicken that's been cooked here
1:57
at mom's house that we use has already got
2:00
the salt and pepper treatment to it.
2:01
So it's not super heavily seasoned
2:04
but it's got all those delicious flavors in there.
2:09
That looks really good.
2:10
One of my other favorite things is a box of corn muffin mix.
2:14
So easy, you can have cornbread at the house.
2:18
The hard part is finding the good cane syrup
2:22
but you can do that as well.
2:23
So the instructions on the box, it's just milk,
2:26
our dry powder and our egg.
2:29
And I'm gonna whip this together.
2:32
See how easy this is.
2:34
While I'm doing this I'm gonna tell y'all
2:35
it's starting to be spring here in Savannah
2:37
and we are really excited downtown at the restaurant.
2:41
We're getting everything ready for our busy season.
2:44
And soon I'm gonna have
2:47
some exciting news to share with y'all.
2:51
But I'm working on something. Something's cooking downtown.
3:01
Now we're gonna stir these two things together.
3:06
You see what's going to happen,
3:08
we're gonna take our cornbread
3:12
and instead of a corny cornbread
3:14
or a Spanish cornbread or a Mexican cornbread,
3:19
we're really gonna load it up
3:23
with all of this good stuff.
3:27
I'm telling y'all, my mind is just spinnin'
3:30
'cause you know what else I would do in here?
3:33
I would put together some sloppy Joe's
3:35
with some fresh red peppers
3:37
and stir it into this cornbread mix and make it here.
3:39
And I would have a cheese burger cornbread casserole.
3:42
Or you can do pot roasts.
3:47
This is a great recipe.
3:48
I'm gonna use it for a lot of different things.
3:50
So I'm putting it into a shallow dish here.
3:52
If you find yourself with overage
3:54
you could always use a deeper
3:55
but I'm pretty sure that we're gonna fit right in here.
4:07
Y'all break out the tortilla chips.
4:09
We got a chicken casserole cornbread coming right up.
4:18
Look at our chicken cornbread casserole.
4:23
And it's set up so nicely.
4:25
I'm gonna try to cut it like a pie
4:28
and see if I have any luck.
4:29
And if it doesn't cut out like a pie
4:32
we'll change our plate for a bowl.
4:35
I don't know what this tool is.
4:38
It's some kind of grater
4:40
but I'm gonna use it as a little spatula.
4:44
You know, the first piece is always ugly.
4:47
That's why the cook gets the first piece.
4:49
Ooh, I'm gonna like this.
4:55
Put a little point on it.
4:58
Doesn't this look good, y'all?
4:59
Now this has got lots of good stuff in it.
5:02
This would be a really good weeknight meal for you.
5:05
And this is the fun part.
5:08
You can put some sauce on top of it.
5:13
I'm gonna put a little bit of little sour cream right there.
5:21
And there are very few things in this world
5:22
that I like better than a fresh avocado.
5:39
Get us a little avocado on here.
5:46
Oh, isn't that pretty?
5:49
I bet it's gonna be good too.
5:50
Okay, now just to finish it off,
5:53
get you two or three big, beautiful pieces of cilantro
5:59
and throw it on the floor.
6:06
Get a little bit of that avocado.
6:21
The avocados, the cilantro.
6:24
We do not miss the sauce in the sour cream.
6:27
Couldn't be easier, y'all.
6:28
Thanks for tuning in today.
6:30
Y'all eat good food and I'll see you around the kitchen.
6:34
I'm gonna finish this.
