- Hey everybody, it's Bobby here,
0:02
and today I'm doing recipes for you
0:04
that are all about the big game.
0:06
It's that time of year,
0:08
those of you who love football and sports,
0:11
it's just a glorious time of year.
0:14
I do enjoy the big game myself.
0:17
and all that kind of stuff.
0:24
I'm gonna make a cheesy pretzel dipping sauce.
0:28
Cheesy dipping sauce.
0:29
No, I'm not making a cheesy pretzel sauce.
0:33
I'm gonna do pretzels, big delicious pretzels
0:37
with a cheesy dipping sauce.
0:38
The cheesy dipping sauce is the part that I'm making.
0:40
The pretzels I bought at the store.
0:45
but they're just boxed and frozen.
0:47
The cheesy sauce is what's gonna make
0:49
those pretzels really come alive.
0:52
So anyhow this recipe is from Deen Brothers cookbook,
0:57
and it's based on a television show
1:01
that my brother and I did called "Road Tasted,"
1:03
seems like a gazillion years ago now,
1:05
but we traveled all over the United States of America.
1:10
They paid dummy number one
1:12
and dummy number two to travel all over
1:15
the United States of America,
1:16
and just eat food, glorious food.
1:18
And we did it sort of by,
1:23
state by state, sort of what they do there.
1:27
And I don't remember where
1:30
the cheesy dipping sauce came from,
1:33
but I'm gonna guess that it was Wisconsin.
1:37
I remember Jamie and I went to Wisconsin,
1:40
we went to a place called Beechwood Cheese Factory,
1:45
It was out in the country. (timer dinging)
1:47
Oh, that's my pretzels.
1:48
I've got the pretzels in the air fryer.
1:51
So the pretzels are ready,
1:53
this will be ready in a few minutes,
1:55
We went to Beechwood Cheese Factory,
1:57
and we had such a great time,
2:00
and Wisconsin is beautiful,
2:02
so those of you that live there,
2:04
we were there in, I think it was July,
2:08
so it was summertime.
2:09
And that's probably the best time to be in Wisconsin.
2:11
I don't think that December
2:14
or January or February might be the time to be there.
2:17
But we went to Beechwood
2:18
and we went to a place called Sprecher Brewery
2:22
in Racine, Wisconsin,
2:24
and we had a great time,
2:25
and we shot a great show.
2:26
So quickly I'm going to bring to a boil
2:30
my milk and my butter,
2:32
and this is only gonna take some,
2:35
just a couple of minutes.
2:38
So I'll whisk this butter into the milk,
2:40
we'll get that bolling,
2:41
and as soon as we get a good boil going
2:44
I'll reduce the heat.
2:46
Into the butter and milk mixture
2:48
I'll add eight ounces of cheddar cheese.
2:51
Do y'all like cheese?
2:54
If Theresa weren't filming me right now with that camera,
2:57
I could just wolf down every bite of that.
3:01
I love cheese so much.
3:03
And I like a cheesy dipping sauce.
3:04
And I also like cream cheese
3:05
which is another ingredient in the cheesy sauce,
3:09
and I also like sour cream,
3:11
which is another ingredient in the sauce.
3:12
And to that we're gonna add a teaspoon of mustard,
3:16
and a little bit of hot sauce.
3:18
So it's super simple,
3:20
and really, really quick.
3:27
Almost boiling, almost boiling.
3:32
The milk and butter have come to a boil,
3:34
and I've reduced it to simmer,
3:36
and now I'm gonna add eight ounces of cheddar cheese.
3:41
Try not to splash that hot milk
3:43
and butter on myself.
3:46
And now we're just gonna melt that cheese down.
3:49
This'll take just a few minutes.
3:51
We'll let this do it's magic,
3:54
and then once the cheese has melted
3:55
we'll add in our cream cheese
3:57
and our sour cream, our mustard
4:01
So this is maybe two or three simple, quick steps,
4:07
but we'll take some breaks in between
4:08
so you don't have to watch cheese melt.
4:11
So we'll come back in just a minute.
4:12
So butter, milk, bring to a boil.
4:15
Add eight ounces of cheddar cheese,
4:22
It looks and smells wonderful.
4:26
And now to that we will add our cream cheese.
4:38
Oohie cream cheese and cheddar cheese,
4:40
that is quite a combination.
4:43
And I took a look at my pretzels,
4:46
and they were great, they're ready
4:53
Who you pulling for in the big game?
4:55
Man, I wanted to see Jacksonville win and go on.
5:04
Next year, Jacksonville.
5:07
So there's our cream cheese really coming together nicely,
5:16
That sour cream is gonna give it
5:18
just the right amount of tartness and creaminess.
5:26
And we're gonna add about a teaspoon of mustard.
5:37
It's a little less than a teaspoon,
5:39
and add a little bit more if it needs it.
5:42
Try to whisk without sloshing.
5:47
Just gently encourage it to come together for me,
5:55
Mm, smells really, really good already.
5:59
Smells like a big football game,
6:00
that's what it smells like.
6:03
What else would be good dipped in this cheese sauce
6:10
I guess really just pretzels.
6:13
Maybe some chicken wings.
6:16
- [Theresa] You could do vegetables.
6:18
- Some vegetables, yes, that would be good.
6:19
Oh yeah, okay, now you're thinking.
6:22
Some broccoli and cauliflower if you like such a thing.
6:24
- [Theresa] Crusty bread.
6:26
- Crusty bread, which is similar to a pretzel.
6:32
Okay, that's look nice.
6:40
Cream cheese has got a couple of lumps left in it,
6:42
but that's gonna smooth out here real quick.
6:46
And we'll add just a little bit of hot sauce
6:55
I gave it about 10 drops.
6:57
Probably won't even notice that.
7:01
Give it just a little bit of that color.
7:10
And there you have it.
7:14
Now all we gotta do is dip a pretzel in it,
7:19
So we'll come right back and do that.
7:22
Cheese sauce looks really, really good.
7:39
Smells good, looks good.
7:41
Let's see how it tastes.
7:44
And I will get the rest of that cheese sauce
7:46
out of that sauce pan, don't worry about it.
7:49
And, again, this recipe is from
7:51
"Recipes From the Road,"
7:52
a Deen Brothers book.
