- I have been outside the last few days

to pick some tomatoes that we've got on the vine out there.

And Michael and I have had some of those homegrown tomatoes

the last two nights in a row, Eddie.

And they're so good.

So Vidalia onions, it's definitely Vidalia onion season.

So I'm gonna make a cheesy vegetable casserole.

That's gonna be a great side for whatever

I plan to make for the center of the plate.

And it's real simple.

It's just, you start out with a little olive oil y'all.

And you cut four Vidalia onions

into a quarter of an inch slice.

That's a lot of onions, but I promise they'll cook down.

And four beefsteak tomatoes,

or whatever kind of tomatoes you're growing

or whatever you've gotten from the store.

Salt, pepper, oregano, cheddar cheese,

3/4 of cup of bread crumbs.

And two tablespoons of melted butter

to mix with those bread crumbs.

It makes 'em so good.

All right, now I got our skillet on.

Let's see what I have it on.

I have it up there pretty good.

All right, I'm gonna go ahead and put our tomatoes in.

I mean, our onions in.

I had to pull out the big boy this morning y'all

to be able to hold all the onions and tomatoes.

so we are just gonna cook these

until they're kind of nice soft and tender.

You know it's not like we're gonna be making

French onion soup with them where you have

to really sweat them down for 45 minutes to an hour.

So I'm gonna start putting our casserole together.

I'm gonna start by, and I've got my dish buttered here,

and I'm gonna add about half of the tomatoes...

Now these have been cooking good for about five minutes.

It cooked the most beautiful pan of a black skillet
