- Hey all, it's Jamie Dean.
0:01
I'm here at mama's house today.
0:02
Sharing another recipe with you.
0:06
We're doing twice baked potatoes.
0:08
And look, you have got to be careful
0:12
not to go too far to the edge.
0:15
You really wanna make sure
0:17
that you leave some potato here.
0:19
This is a lesson that I learned the hard way.
0:23
You think you can get all the potato out,
0:25
but you wind up tearing up the jacket
0:26
and you don't wanna do that.
0:28
Thanks for tuning in today,
0:29
we're doing twice baked potatoes.
0:32
It is a really way to kind of make a simple food
0:35
a little bit more elegant
0:37
and the possibilities are endless.
0:39
I've seen it done with broccoli and shrimp,
0:42
steak and cheese twice baked potatoes.
0:44
We used to sell those
0:44
at a place I worked at in college.
0:46
Today we're doing bacon with chives,
0:49
a little bit of cheese, and some fresh butter.
0:51
This is so simple, y'all.
0:52
We have got four potatoes that we've cooked off
0:56
and I've scraped these out.
0:58
And see if you, like this one I got a little close
1:01
and you can poke through the bottom of this jacket
1:04
and you really don't want to.
1:05
All of this is gonna combine together
1:08
so do not worry about, in fact, you must leave a little bit
1:12
of potato on the skin, or it'll never hold together.
1:16
So, one of the secrets for our twice baked potatoes
1:18
is just like, well this is just a fully loaded baked potato
1:22
I'm gonna add some sour cream to it.
1:27
Maybe, that's probably a quarter of a cup.
1:32
- [Woman] Jamie, one thing I didn't put out
1:34
- [Jamie] Oh, that's okay, I'll get the salt.
1:39
I've got a half a stick of butter here
1:41
that's kind of really nice and soft.
1:46
and I'm gonna reserve a little bit of this for the top.
1:51
We've got our cheese that I wanna get mixed up in there.
1:54
I tell you, I've made these so many times
1:57
for my family and through our business and everything.
1:59
I'm really not checking the recipe.
2:01
So, the recipe that you see down there there
2:03
doesn't match up with the one that I'm doing
2:05
or maybe they'll fix it to look like exactly what I'm doing.
2:10
I will change a recipe in a hot second.
2:13
And as long as it stays true to what the recipe is,
2:17
if you wanna add some onions in here,
2:20
oh onions will be so good down in there.
2:22
I love onions in my potatoes.
2:26
Or whatever you wanna do.
2:27
Pinch of salt, pinch of pepper.
2:31
Now I wouldn't take, if you wanted to, you could,
2:34
but there's no sense in breaking
2:35
out your hand mixer for this, y'all.
2:36
We're gonna mix this up.
2:39
This almost looks like a creamed potato
2:41
if I added a little bit of warm milk.
2:45
So you choose, what do you wanna do?
2:47
Do you have any leftover steak?
2:48
Do you have any leftover chicken?
2:49
Do you have your vegetables?
2:51
You got something fresh coming outta your garden.
2:53
Anything that you can eat with a potato?
2:55
My mom's secret potato sauce is half sour cream,
2:58
half mayonnaise, with raw onions, with Vidalia onions.
3:05
Anything you want, but today this is how we're gonna do it.
3:09
Now you just fill this baby up.
3:14
See how simple that is.
3:16
The hardest part's waiting around and scooping 'em out.
3:22
And not just because you wanna be careful not to go too deep
3:25
into the jacket, but because they're gonna be hot.
3:28
Y'all want to scoop your potatoes out
3:31
while they're still warm from the oven
3:33
'cause if it cools off they'll just come out
3:36
So, I've got two out of my eight.
3:38
Y'all come right back and we'll be done.
3:41
Okay y'all, look here.
3:45
So, I saved a little bit of bacon.
3:46
So I'll put just some on the top just to kind
3:50
of give it a little texture and color.
3:51
Not too much 'cause we worked it all on the inside.
3:54
Let me give you another little tip
3:55
about making your bake potatoes special.
3:58
Rub 'em down with olive oil and then put some kosher salt
4:03
It makes the skin so good.
4:06
So, you rub 'em with oil, kosher salt,
4:08
wrap 'em in foil, put 'em in the oven.
4:10
We got our little bit
4:11
of vegetables 'cause you cannot live on starch alone.
4:17
This will add a little bit of flavor
4:18
and it also adds that really pretty color.
4:21
This is basically a jacked up potato skin I guess.
4:25
It's better than a potato skin.
4:26
It's a twice baked potato, y'all.
4:29
We going in the oven.
4:30
We coming out of the oven and we going in my mouth.
4:37
Now we've already cooked them.
4:38
So remember when you put these back into the oven,
4:40
you just wanna reheat everything
4:41
and get your cheese melted.
4:43
So, it's only 10 or 12 minutes probably in the oven.
4:46
So if you want more cheese on here,
4:47
if you see how there's plenty of cheese in here
4:50
but you can see the chives, you can see the bacon.
4:53
I don't really like to cover it
4:55
with the orange shredded cheese 'cause it just looks
4:57
like a pile of cheese on top of a potato.
4:58
I really like to see what I'm getting.
5:00
So if you want, you can add more cheese to it.
5:04
If this is up to me, I'm eating.
5:06
These are twice baked potatoes, y'all.
5:09
Thanks for joining me today in the kitchen, ooh.
