- Hey everybody, it's Bobby here
0:01
and I've got another great recipe for you today.
0:04
You may or not know this, but there's two things
0:06
that I'm very, very good at in the kitchen.
0:08
I make great desserts, I'm a good baker.
0:10
And I make really good salads.
0:13
Not the only things I do well,
0:14
but I really make really good, I mean cheese,
0:17
I make great egg salad, I make chicken salad,
0:19
tuna salad, all those things
0:20
I've really got a good hand for.
0:23
So I've got for you a pimento cheese recipe today.
0:26
Super basic and simple. You can make lots of changes to it.
0:30
It's actually really ready for you
0:34
to add things to it differently if you want to.
0:36
But as we always say around here,
0:38
go exactly by the recipe the first time
0:40
and then after that, make it your own.
0:41
So if you want to add bacon or prawns
0:44
or any other thing to your recipe, you certainly may.
0:48
I'm gonna start out with some cream cheese that's softened,
0:51
which just means that it's been
0:52
sitting out for a little while.
0:57
See how quickly that.
0:58
Now, if you pull a cream cheese out,
1:00
a block of cream cheese out of the refrigerator
1:01
and try to do this right away, it's not gonna happen
1:05
because it's just so cold and hard.
1:07
But yeah, that's already soft.
1:09
So we'll add to our cream cheese
1:12
a little bit of mayonnaise,
1:19
and we will cream these two together with the mixer.
1:24
And when we get a little bit further afield,
1:29
So our mayonnaise, cream cheese.
1:39
I am going to go ahead right now
1:40
and add a little pinch of pepper to that.
1:42
(pepper mill squealing)
1:49
in our mayonnaise cream cheese mixture.
1:58
Great, those are combined.
2:01
Now to that I'm going to add my pimentos
2:10
and cheese, shredded cheddar.
2:15
If you wanna use a blend of cheese, you can.
2:20
I mentioned it already, but man, do I really like
2:22
to cook some bacon, some nice crispy bacon
2:26
and crumble it up and fold it in there also.
2:29
Olives are really good in pimento and cheese. Green olive.
2:33
- [Cameraperson] Now he's no longer making it light.
2:36
Yeah, that's right. She's right.
2:38
Okay, so I'm just gonna use my spoon
2:40
and mix everything together here.
2:42
We're beginning to get what looks like a good
2:47
Not a real large amount, just some,
2:52
I don't know what vehicle you like
2:54
for your pimento and cheese.
2:55
Sometimes people just like sandwiches.
2:59
I like celery sticks. So I've got some celery sticks there.
3:05
This is folded together nicely.
3:07
Let's give it a taste and see if it needs anything.
3:08
Maybe I need to add a pinch of salt
3:11
or maybe even a little bit more.
3:12
Oh, do you know what we forgot? Little bit of onion powder.
3:17
Calls for a pinch of onion powder. That's a pinch.
3:25
My mom's got some great measuring spoons here.
3:31
It goes all the way down to a dash. A pinch and a dash.
3:35
So there's the pinch.
3:37
Onion powder's pretty strong,
3:38
so you gotta be careful with that.
3:42
Don't want to overdo it.
3:50
And I don't see the pepper in there
3:53
the way that I would like to.
3:54
So one more little shot. (pepper mill squealing)
4:00
Mmm. It smells good too.
4:04
Let's give it a taste.
4:11
Wonderful. Do you like pimento and cheese? I do.
4:19
That's enough. All right, let's chow down.
4:31
Doesn't need anything else.
4:32
It's great exactly like it is,
4:34
but you have my permission to change it any way you want to.
4:39
So until next time, pimento and cheese.
