0:00
- Hey everybody, it's Bobby here
0:01
and in honor of St. Patrick's Day,
0:03
I'm gonna make a wonderful potato salad
0:06
that you've probably not seen before.
0:08
This comes from a favorite book of mine,
0:11
that my brother and I did together, called Y'all Come Eat,
0:13
and it's sausage potato salad.
0:16
It's perfect for the Irish
0:18
and for everybody who wants to be Irish today.
0:20
'Cause there's a little bit of green in it.
0:23
Okay, so we're gonna start with a little oil and a skillet
0:31
I'm just gonna brown this sausage to a perfect golden
0:39
and that'll take a couple of minutes.
0:42
So let me do that and we'll come right back
0:44
and finish up the recipe.
0:46
The sausage looks and smells so wonderful.
0:52
I'm gonna go ahead and transfer that
0:54
to a paper towel lined plate and let it drain a little bit.
0:59
Even though my mom will probably get mad about that.
1:01
What'd you do with all that flavor, boy?
1:08
There's a lot of flavor in fat.
1:16
Okay, now let's get to the potato salad.
1:24
This is Bobby's favorite potato salad.
1:26
But I'll tell you what my favorite potato salad truly is.
1:28
My daddy, God rest his soul,
1:32
My daddy used to make the best potato salad.
1:35
He used to cook the potatoes
1:38
and let leave them hot on the stove in a pot
1:42
and he would add nothing but mayonnaise
1:45
and eggs and salt and pepper.
1:49
No filler, no celery, no nothing else at all,
1:53
just potatoes, mayonnaise, salt and pepper, and eggs.
1:57
And that was the best potatoes salad
2:00
you've ever eaten in your life.
2:03
Okay, so we're gonna make a little simple dressing
2:06
to go with our potato salad.
2:07
While our kielbasa drains on the paper towel lined plate.
2:12
We're gonna use red wine vinegar
2:14
and I'm just gonna eyeball it.
2:15
Maybe a teaspoon and a half, two teaspoons.
2:21
A little Dijon, Dijon.
2:25
Let me make sure that this is shaking.
2:26
So, that we don't get...
2:29
You know that first little bit of mustard that comes out
2:31
or ketchup and that's just watery and just gross looking.
2:37
Hey, I shot mustard all over myself.
2:42
And maybe a tablespoon of mustard, little garlic.
2:55
That smells good already.
2:57
That's a good combination of ingredients.
3:09
and to it I'm gonna whisk in a little bit of olive oil,
3:14
after I've gotten this combined.
3:18
That's the right color and smell.
3:30
Nothing like a homemade vinaigrette.
3:34
I love it on my salad too.
3:37
It's reminds me of my aunt Peggy.
3:39
When I was growing up,
3:40
my Aunt Peggy used to make the most wonderful vinaigrette.
3:47
Just so, so, so good.
3:50
That smells like Albany, Georgia in the 1970s.
3:56
All right, go ahead and pour our dressing over the potatoes.
4:02
And to it I'll add all the dry ingredients as well.
4:08
What are all the dry ingredients, Bobby?
4:10
Well, they are the aforementioned celery.
4:15
Some people like celery in their potato salad, tuna salad,
4:18
what have you, some don't.
4:21
I can take it or leave it.
4:25
And I'm gonna use my undersized cutting board here,
4:30
to cut some green onion.
4:34
Not that one, this one.
4:40
We didn't have a bigger cutting board, Teresa?
4:42
- We do, but I thought the cute little one.
4:46
- I was gonna test your skills.
4:47
- So cute. Hey, I got 'em.
4:50
I learned... I learned something over the years.
4:53
- Yeah a lot... I mean a lot of training.
4:57
- Yeah, well a lot of time...
4:58
- A lot of experience.
5:00
- A lot of time in the kitchen with my mom.
5:07
We'll use the Paula spoon.
5:10
So cute, my mom's got some spoons that are awesome.
5:13
Just got one with every family member on it.
5:18
I'll go ahead just give this a toss.
5:20
I'm gonna try not to beat up the potatoes
5:22
'cause we're not making mashed potatoes,
5:25
we're making potatoes salad.
5:26
So, you just fold it in.
5:27
You've heard me and many other people
5:29
talk about this time and time again.
5:41
And last but not least our kielbasa is draining.
5:47
Go ahead and pat it dry
5:53
and add it to the potato salad.
6:02
Look at how wonderful those things look together.
6:10
- I know, Teresa's salivating back there.
6:14
Put a little in a plate.
6:25
and this, is good old fashioned sausage potato salad.
6:34
If you've never seen it, I hope you enjoy it.
6:36
If you have seen it, I hope you like this version of it.
6:41
If you're potato salad...
6:42
It's hard to go wrong with potatoes and sausage though.
6:45
- That's a little bit?
6:46
- A little bit. For you and me, Teresa.
6:52
Let's see, let me make sure I got a sausage and a potato.
7:03
Yeah, that's just a little bit.
7:09
So happy St. Patrick's Day
7:11
and enjoy some sausage potato salad.
