0:00
- Hey everybody, Bobby Deen here,
0:02
on Love and Best Dishes,
0:03
I'm filling in for my mom,
0:05
and I'm doing some recipes
0:06
that are really simple and delicious,
0:08
and that Mom would definitely be proud of,
0:10
these are some of her favorite things.
0:12
And the one we're gonna do right now
0:13
is black pepper bacon.
0:17
Oh boy, is this good.
0:18
We're gonna start out with some thick-cut bacon,
0:21
and I've got it sort of displayed here
0:23
on a rack for you to see.
0:26
brown sugar and fresh black pepper,
0:29
The amount that I've got here
0:31
is for a full pound of bacon,
0:33
but there are only a few of us here,
0:34
I'm just gonna make three pieces,
0:36
so, I'm only gonna use some of this,
0:38
all right, not all of it.
0:40
So, I'm gonna take maybe a third of our sugar,
0:45
and about half of our black pepper here,
0:50
and just sort of mix it together.
0:54
if you're familiar with our restaurants,
0:58
the Paula Deen Family Kitchens,
1:00
we've got some really great restaurants
1:02
in Tennessee, (bowl clinking)
1:05
and in Alabama, (bowl clinking)
1:08
we're really growing and expanding,
1:10
and I'm proud of 'em,
1:11
these restaurants are really, really good,
1:12
they've got great traditional Southern dishes in there,
1:18
and we do a version of the black pepper bacon
1:21
in our Paula Deen's Family Kitchens,
1:23
but they go even a little bit further with theirs,
1:27
and make it a little more delectable
1:29
by adding maple syrup,
1:30
and oh boy, are they so, so good,
1:34
they do 'em on little closed pen racks
1:39
in the Family Kitchens.
1:41
And golly buddy, is black pepper bacon with maple syrup
1:47
So, I've got our sugar (spoon clinks)
1:51
and our pepper combined.
1:53
I'm just gonna put it out here
1:54
on a shallow bacon dish, (bowl clinks)
1:59
and just dredge our bacon in it.
2:06
Just sort of make sure
2:07
I get a little bit all over it.
2:14
Nothing like brown sugar and bacon.
2:18
Ain't that right, Theresa? - Yeah.
2:21
- [Bobby] Who don't like it?
2:24
I don't wanna be your friend if you don't.
2:26
(Bobby chuckles) - This is literally
2:28
one of my favorite things they do
2:29
at the restaurant. - It's so good.
2:31
Yeah, if you haven't visited our Family Kitchens,
2:39
and it is just a wonderful restaurant,
2:44
and people come from far and wide
2:46
to visit up there in Pigeon Forge,
2:51
on the island in Pigeon Forge,
2:53
not too far from Dollywood and Ober Gatlinburg,
2:56
it's just a beautiful area of the country,
2:58
if you've never been there,
2:59
what a great vacation spot, - It is
3:01
- you know. - a great vacation spot.
3:02
- And super family-friendly,
3:05
so, it's a great place to bring your kids,
3:07
it's a great place to eat,
3:09
it's just a beautiful area of the country,
3:12
Great Smoky Mountains, (buzzer buzzing)
3:15
it's nice in the summer,
3:16
spring, winter or fall.
3:23
- [Theresa] I love the Nashville one too.
3:24
- [Bobby] Yeah, and Nashville,
3:26
I mean, we're everywhere.
3:27
Well, we're not everywhere,
3:28
but we're growing, that's for sure,
3:29
we're in Nashville, Myrtle Beach,
3:33
Panama City Beach, Florida,
3:34
- Branson, Missouri. - Branson, Missouri,
3:36
and they're all very well-received restaurants.
3:42
so, our thick-cut bacon is now covered
3:46
in our brown sugar pepper mixture,
3:49
and I'm just gonna drape it over this rack.
3:58
I'm just gonna take this rack,
4:00
and pop it into the air fryer.
4:05
And things cook pretty quick in an air fryer.
4:08
You know, my mom's got her own brand of air fryer out there,
4:14
and I use mine at my house
4:19
they're so convenient
4:22
and they cook fast, (tray clinks)
4:26
So, we're gonna use this one right here,
4:30
I'm gonna use the part of my hand
4:31
that doesn't have bacon on it,
4:34
and I'm just gonna remove this rack
4:37
and pop it right into, (drawer clunking)
4:43
Sits right down on that little staging area.
4:46
Thanks, Theresa, (air fryer beeps)
4:47
I appreciate that. - You're welcome,
4:48
I know your hands are-- - Yeah.
4:52
- I'm gonna do it on bake. (air fryer beeps)
4:55
And we're gonna start-- - Let's go 375 maybe?
5:01
- You wanna go up? - 350,
5:03
try 350 for a few minutes, (air fryer beeps)
5:04
and maybe we'll turn it up to 375,
5:06
right for the last couple of minutes.
5:08
- And I'll put it for 10? - Yeah, 10 minutes.
5:10
So, we'll come back and check it in 10 minutes,
5:11
I'm gonna wash my hands,
5:14
The bacon looks phenomenal.
5:17
All right, so, we did this in the air fryer,
5:19
we put this bacon on a rack in the air fryer
5:22
at 350 for 10 minutes,
5:25
checked it, and it looked really, really nice,
5:27
and then we turned the heat way up to 400 degrees,
5:30
and we let it go for about three more minutes,
5:32
so, 13 minutes total on this bacon,
5:35
the recipe is thick-cut bacon,
5:39
brown sugar, and fresh black cracked pepper,
5:43
and it (chuckles) looks so good,
5:46
and it came out (plate clinks)
5:48
it came out caramelized,
5:49
so, you see that it's a little stiff,
5:52
and you know, it's caramelized.
5:56
I don't eat a lot of bacon,
6:05
I should eat more bacon.
6:07
(plate clinking) Oh my God.
6:11
(Bobby clears throat)
6:12
So, that's wonderful.
6:14
If you like bacon, (Bobby chuckles)
6:16
make this cracked black pepper bacon
6:18
from my mom's recipes,
6:22
(hands chafe) It'll be a great side
6:24
for your next breakfast.
