- Hey, I'm Jamie Deen,
0:01
and back here in mama's kitchen
0:02
we're at the tail end of summer,
0:04
but it doesn't matter what season it is
0:06
for a fresh salsa, it's so good.
0:09
Today I'm making soap salsa.
0:10
I mean, black bean and corn salsa.
0:15
All I can smell is soap.
0:17
It's got cilantro in it,
0:18
and Theresa loves cilantro so I'm using it,
0:22
and I just tore the cilantro with my hands
0:24
before we got started.
0:25
And it smells like I'm doing a soap commercial here.
0:28
You know some people taste soap for cilantro,
0:31
and other people don't?
0:32
So I'm one of the people
0:33
that kind of stay away from that,
0:36
but I love the texture and the color.
0:37
So you can use an Italian Parsley,
0:39
or you can use an American parsley,
0:41
and that gives you the color
0:43
and the texture in your salsa
0:44
without the horrible, despicable flavor of cilantro.
0:49
Okay, we're gonna start with
0:50
a couple of things here, super easy.
0:52
I've got some frozen corn that we've thawed.
0:57
And we've got two cans of black beans.
0:59
Now we've drained these
1:00
'cause that juice is beautiful,
1:02
and there is a place for it,
1:03
but it's not in my salsa bowl.
1:05
I make a lot of different salsas.
1:08
Yeah, I know I'm really bad
1:09
about telling you what I'm making,
1:10
and I tell you how you could change it,
1:12
I'm not gonna do that today.
1:14
Black beans and corn.
1:16
We've got some tomatoes here,
1:17
and I'm afraid, let's see, we'll go with our onions first.
1:22
This is enough onions for everybody.
1:25
So I'm gonna use just a tiny bit of those.
1:28
I'm gonna drain these tomatoes off today
1:31
because I have a different liquid going in here.
1:34
Now these red tomatoes,
1:35
we have really chopped
1:36
and chopped them up fine.
1:39
That's enough for me.
1:40
Now while I've got my tomatoes there
1:42
I'm gonna salt those,
1:43
and I'm gonna pepper these a little bit too.
1:47
Now what makes this salsa different and unique,
1:49
we're gonna add a tablespoon
1:59
Now for me really the star of any,
2:01
any salsa, I love, love, love avocados so much.
2:08
So I have two avocados here
2:10
that I'm just gonna split up.
2:11
There's a couple of different ways
2:12
that you could do avocados.
2:15
If you want to, if you're really doing something,
2:17
you could take the tip of your knife,
2:18
and you can slice this way.
2:23
You push it out, you get these little wedges
2:28
that you can lay across your dish if you'd like.
2:31
Or you can go up and down, criss cross.
2:37
And then when you pop it out,
2:38
you can get some cubes.
2:42
and I'm really just gonna mash everything up
2:45
rather than fooling with any of that.
2:48
I just kind of squeeze the avocado down in.
2:53
I'm gonna mash it up anyway.
2:54
Be careful doing that.
2:55
You should not use a knife to remove an avocado pit.
3:00
Now the thing about it is
3:01
as much as I love avocados,
3:03
when they hit the air they have a tendency to turn
3:06
a not fantastic shade of tan.
3:10
Hold on one second y'all.
3:18
Didn't have a towel close by.
3:19
So as soon as our avocado is exposed to air
3:22
it's gonna begin to brown.
3:24
Don't even try to crack open an avocado,
3:26
or make any salsa whatsoever without some lime juice around.
3:31
So I've got some fresh lime juice
3:32
that we're gonna add to that.
3:33
And that's really it.
3:34
Now this is the part, while I'm stir it
3:36
I can tell you everything else
3:38
wonderful you can do with this salsa.
3:40
Pineapple salsa I love.
3:43
Put your jalapeno peppers in here.
3:45
You can put bell peppers,
3:49
There is no rules for salsa.
3:50
Anything that you like
3:52
that you wanna eat you can put it in here.
3:56
And speaking of things that I love to eat,
4:00
and ruin the whole thing with a giant dash of soap.
4:07
No, I'm gonna put my cilantro on top.
4:10
I'm gonna push it around a little bit,
4:12
but you see how pretty that is?
4:15
There's lots of different ways
4:16
that you could serve this too.
4:17
If you really wanna take your time,
4:18
which I did not, when you do your avocado,
4:21
save your little cup.
4:23
I do this with avocado chicken salad sometimes.
4:27
I'll make chicken salad,
4:28
and I'll put avocado chunks in it.
4:31
And then you can serve it
4:32
in this cute little boat right here.
4:41
And, of course, the easiest idea,
4:43
look how dirty my cutting board is,
4:46
just keep you a bag of chips around.
4:48
Turn this into an omelet.
4:51
No rules salsa, that's what this is.
4:54
I'm soap, that's good soap,
4:56
we'll see you around mom's soap next time.
