It's 2023, and one of my favorite things

about the new year every year, big game football.

So we wanna do all sorts of great

maybe hand foods, finger foods, stuff to sit out

for all your friends to come over while you're screaming

what are you doing guys get the ball, right?

That kinda stuff.

Well, today I'm gonna show you how to make some

amazing meatballs and they're really, really simple.

And we're gonna start at the start.

Okay? So I've got a skillet going with some olive oil

and to the olive oil I added some white onion

and some pepper, green pepper.

And I'm also going to add some garlic.

All the usual suspects.

And the, the pepper

and the onion are just about translucent and ready.

And I added the garlic last

because like butter, garlic burns.

So I'm just gonna give that a little, little heat.

Here we go.

And we're gonna put it into a big mixing bowl here

and I'm gonna give it a few minutes to cook, to cool off.

And once that cools a bit, I'm gonna make my meatballs

with this as sort of the center of the meatballs.

Now the meatballs are going to be ground beef, ground pork

couple of eggs, evaporated milk, chili powder, pepper, salt

and just some bread crumbs.

Super simple but really delicious.

Okay. Our meatballs, we've done the hard part.

Saute the onions and the peppers and the garlic,

that's the hard part.

The rest of this is just fun and easy.

It's just putting everything together

and then we're going to just bake it off in the oven.

So let's go ahead and mix up our eggs,

You could just add the two, you know, eggs to the mixture,

Now my mom did, my mom has been

to the Kentucky Derby and my mom has thrown

out the first pitch at a Washington National baseball game.

And what else with sports with my mom.

One of my favorite memories, gosh,

one of my favorite memories is when we were

in Chicago many years ago, my mom, my brother,

my Aunt Peggy and me, we were in Chicago

to do the Oprah Winfrey show, I think.

But we were all there together

and we went to see the Chicago Cubs play

and we had really good, just, they were just perfect seats.

They were on the third base line

in the lower deck and they were just right.

They weren't right on the field,

they were just maybe, I don't know, 20 rows up.

And I looked at my left and there's my mom and my brother

and looked at my right and there's Aunt Peggy.

And it's just, you know even if you're not a big sports fan

Wrigley Field, Fenway Park, you know, there's some

some real cathedrals and that's just a great memory for me.

We had a really, really good time.

Okay, so I've got my beef

and my pork together really well combined.

You know, you got two different kinds of meat there

so you wanna blend them up.

You don't want, you don't want one meatball that tastes

like beef and one meatball that tastes like pork

and one meatball to have egg in it

and one meatball not to have egg in it.

You wanna make sure that everything's pretty

pretty well married.

Now my hands are clean before I started doing this,

but they're now, they're now they're cooking dirty.

But I'm gonna go ahead and, and go ahead and, and

and grab all these, these, these little bowls

and stuff with my dirty hands

and add in my seasons, my chili powder, my salt, my pepper

and we'll go back and wash our hands again

and clean our dishes.

And then I'm gonna add to that the breadcrumbs

and just sort of make everything it's even and as well mixed

as I can before I add my evaporated milk.

Now there's not a particular order to this.

We're gonna add a barbecue sauce over the top of 'em

You could form these meatballs and then freeze them

and they came out beautifully topped with barbecue sauce.

and like a cocktail meatball is that these are super sized.
