0:01
- I have made
0:05
this recipe or a facsimile
0:07
of this recipe several times on the show
0:11
but it's funny how people request, send in requests for me
0:16
to make certain dishes.
0:18
So someone asked for recipe
0:22
for banana bread.
0:25
Now notice I didn't put in the word nut
0:27
because this is just banana bread.
0:30
Personally, my favorite is banana nut bread.
0:34
I like a lot of nuts in it.
0:37
The crunch that it gives
0:38
and the flavor is just so very good.
0:41
But I'm filling like I said, a request
0:46
for this recipe today, and that was just for banana bread.
0:51
What did I do with my sifter?
0:54
Where did I put my sifter, Eddie?
0:55
- [Theresa] It's right next
0:56
to you. - [Eddie] It's right there.
0:58
- Is it this big thing sitting right there?
1:02
It's getting scary, y'all.
1:05
These eyes, they getting scary.
1:08
All right, we're gonna start with two and a fourth cups
1:11
of all purpose flour.
1:13
And this is important
1:17
for me to say this.
1:19
The recipe calls for two and a fourth cups,
1:22
all purpose flour comma sifted.
1:26
So that means that you measure your flour before sifting
1:33
because after you sift it, it becomes more airy
1:38
and it will measure more.
1:40
But if a recipe calls for two and a fourth cup
1:44
of sifted all-purpose flour
1:50
then you wanna measure it
1:52
after it's been sifted.
1:52
Am I making sense, Eddie?
1:55
Does that make sense?
1:56
- [Theresa] Yes.
1:59
- So it's important the way that formula reads.
2:03
So I'm gonna put
2:07
my flour.
2:08
We are fixing to be in for a storm.
2:12
- [Theresa] Come on Gus.
2:13
- The two big dogs were out at Eddie's.
2:17
Because you'll see, Max is wearing a diaper
2:21
because he comes in
2:22
and he wants to pee everywhere he smells Pumpkin the cat.
2:26
So, the biggest of our babies is so afraid of thunder.
2:33
He cannot see straight
2:36
and that big old thing jump up in your lap
2:38
and he'll just quiver.
2:40
So Eddie brought him down here so we could put our hands
2:43
on him.
2:45
And it's been a while since you've seen those dogs.
2:48
And I know everybody loves it when they have an opportunity
2:51
to see them.
2:53
Look at scary cat right there, right under Eddie's feet.
2:58
All right.
2:59
So I've got two and one fourth of cups of flour
3:03
that we're gonna sift.
3:04
I've got a teaspoon of salt.
3:07
I've got a teaspoon of baking soda and I've got one cup
3:12
of white sugar.
3:17
So we're just gonna sift all of our dry ingredients.
3:18
This is so easy to make muffins
3:23
and these kind of breads.
3:25
You don't wanna over beat them so you don't have
3:27
to pull out any electric devices which is great.
3:32
You can just stir them together and have them in the oven
3:34
before you can say Jack Rabbit.
3:41
(sifter bangs)
3:46
This sifter is getting a little age on it.
3:53
(sifter bangs)
3:55
All right.
3:56
Now you'll hear, you hear that.
3:57
That is my salt.
4:02
So I'm just gonna dump that in because that's my kosher salt
4:06
and it's got a bigger grain.
4:08
So it doesn't want to go through the sifter.
4:11
All right.
4:12
So I'm gonna set that aside
4:13
and in this bowl, I'm gonna take my two eggs
4:20
and give those a little beat.
4:23
(whisks eggs)
4:27
And this is the way I like to mash my bananas.
4:33
I like to mash them
4:40
in their peeling first.
4:41
Just helps making mashing them a little bit easier.
4:46
Kind of pre mash them some and you want
4:49
to use real, real ripe bananas
4:53
because the ripe bananas will give you that flavor
4:57
that you're going to want to need for your bread.
5:02
So you see, I'm just mashing, mashing, mashing, mashing.
5:05
So all I have to do is take the fork
5:09
but like I said, even this bread, these two bananas,
5:13
Theresa are a little too ripe.
5:17
- [Theresa] Really?
5:18
- Yeah, I mean, you need
5:19
to let them get really, really ripe.
5:24
When you're ready to throw them away,
5:27
they are ready for some banana bread.
5:31
All right.
5:32
So see these, they still got a little green on them.
5:36
So they're not going to have nearly the flavor
5:39
that those have.
5:52
But if I'm going to eat a banana, this is
5:55
about the right rightness for me.
6:02
Okay, come on.
6:05
There's a little brown spot in that and I'm gonna leave it.
6:15
I'm just take my little whisker and mash that up.
6:24
Uh-oh.
6:26
How did that peeling get in there Paula?
6:32
That would give it a lot of flavor, wouldn't it?
6:36
(mashing banana)
6:39
So you can make variations of this kind of bread.
6:41
Like I said, I like nuts.
6:44
If you want raisins, you can put raisins in it.
6:48
Some people even like chocolate chips in it
6:53
but I'm just a banana and nut girl.
6:58
So that's my favorite.
7:01
(whisk bangs)
7:05
Come on out of there.
7:07
All right.
7:10
I'm gonna mix these two ingredients together
7:18
(spoon hitting bowl)
7:19
and I'm gonna go ahead and add me about a teaspoon
7:22
of vanilla.
7:29
And I made something the other night.
7:33
It was something I don't usually put vanilla in.
7:35
Oh, I know what it was.
7:38
I made rice crispy treats for us to all have something sweet
7:44
to turn to and I've added just vanilla extract
7:48
to that recipe.
7:50
And it made all the difference in the world.
7:54
So much better.
8:03
To me, vanilla flavoring is just, that and almond.
8:11
Okay.
8:13
(spoon clanking)
8:16
So after I get this mixed, we're going to add it
8:20
to our flour mixture and we're gonna be ready to go
8:24
in the oven.
8:25
We'll be having banana bread before you know it.
8:31
(thunder)
8:32
Did y'all hear that?
8:34
Gus, you all right, buddy?
8:38
Gus Buster.
8:41
God love him.
8:44
And I've got a stick of melted butter
8:47
and after you melt your butter, you'll want to let it cool.
8:54
So that's nice and melty and cool.
8:59
- [Theresa] I know Lou, are you scared too?
9:01
- Yes, Lulu in her old age, Theresa,
9:05
she gets more frightened too.
9:07
- It's okay, I'm right here.
9:08
- It's like she tells me go sit on the sofa
9:11
so I can curl up next to you and hide my face.
9:17
Okay.
9:19
So in the bowl that goes.
9:25
Max.
9:26
Oh, okay buddy.
9:28
(laughs)
9:30
I know it.
9:36
Okay, so like I said, no beating.
9:38
You wanna stir that up Theresa?
9:39
- [Theresa] Certainly. - Let me go wash my hands.
9:41
- [Theresa] Can drop
9:42
that in the - [Paula] Yeah.
9:43
I just touching was touching Gus.
9:47
Even though he's clean.
9:53
You going to have to wash the doggy off of me.
9:57
Oh, don't do it.
9:58
No, no.
9:59
Don't no jump like that, Max.
10:00
It hurts.
10:05
He is my girl parts height.
10:09
When he jumps on me it hurts so bad.
10:11
- Have you already put in the vanilla?
10:14
- I've done everything.
10:17
Oh, that's I got spray this.
10:19
- Okay.
10:19
- And then they're ready to go in the oven.
10:21
And it's a 325 degree oven for,
10:26
I can't remember the time.
10:28
(can spraying)
10:35
So there we go.
10:37
It's in a nine by five loaf pan,
10:44
or if you like making the small loafs
10:49
that works out good too if you want to share it with folks,
10:54
You know you can get those little disposable loaf pans
10:58
at the grocery store.
11:01
So that's nice for the holidays
11:07
and whoops little banana nut bread
11:12
on my little arm.
11:25
We're probably going to need to cook this
11:26
for about 45 minutes but I'll have to check.
11:30
- [Theresa] I'll look for you.
11:32
- Okay, great.
11:39
- 50 to 60 minutes.
11:41
- Okay.
11:43
- At 325.
11:44
- So I'm gonna tell you 45 to 60 minutes to be
11:49
on the safe side because I don't know
11:51
how you're oven is calibrated.
11:55
- [Theresa] And ours cooks fast.
11:57
- You know what?
11:58
I just got a spatula caught in my bracelets.
12:05
I should have taken them off, but I just got
12:11
through sitting down and being shown
12:15
how my newest Paula Dean jewelry came out.
12:21
And I love these so much.
12:23
They're so feminine looking aren't they.
12:25
- [Theresa] They are pretty.
12:26
And this one, the wider one says you are my sunshine
12:29
on the inside.
12:30
- I'm gonna put this in the oven.
12:32
- But I just love these
12:32
but I swear they shouldn't wear bracelets or jewelry
12:36
or anything in the kitchen.
12:39
Look at that banana bread.
12:41
(pan whams board)
12:49
Look at that.
12:53
Just wonderful.
12:54
I'm gonna let that cool for just a couple minutes
12:57
and I'm gonna see what I've got in my fridge tucked away
13:01
in the way of maybe some cream cheese.
13:05
- [Theresa] Mmmm.
13:06
- I love cream cheese on banana bread.
13:10
Our banana bread just turned out, appears to be perfect.
13:15
I couldn't find any flavored softened cream cheese
13:20
in my refrigerator.
13:23
So I just softened some butter
13:27
and cream cheese together.
13:33
You could add whatever flavoring you wanted to this.
13:39
I thought about adding a little cinnamon
13:41
but then I thought, well you're limited
13:45
on what you can use cinnamon butter on.
13:50
So you can't go wrong with just cream cheese and butter.
13:54
Look, I'm icing.
13:56
I'm icing that bread.
14:07
It's so good that I think I got a little too much butter.
14:13
Because butter will make things salty.
14:19
It's delicious.
14:21
Who wants some?
14:26
You all don't all speak to me at one time.
14:29
Okay.
14:30
- [Theresa] Eddie just raised his hand.
14:32
Like they can see you.
14:33
(Paula laughs)
14:36
- I do, I do, I do Eddie?
14:44
Yum, yum to my tum.
14:47
- [Theresa] Is it good Eddie?
14:48
- [Eddie] Um-hmm.
14:51
- Theresa - [Theresa] I'm gonna
14:53
have some in a moment. - [Paula] would you like some?
14:58
Oh.
14:59
Gus is giving me that look like gimme some.
15:05
I think y'all will love this.
15:10
It's a good, quick, easy breakfast
15:13
for the children to have before school.
15:18
So good.
