- [Paula] So, I have wound up with an overabundance
0:04
of apples, y'all.
0:06
So I have delegated Michael, my husband,
0:10
and Don, my cousin, to peel all these apples for me
0:15
because you know what,
0:17
I'm gonna try one more time to make an apple crisp
0:21
that Michael will say, "Oh my goodness,
0:23
"this is good as my mama's.
0:26
- I will this time because I get in trouble
0:28
(Paula laughing)
0:29
because last time I told the truth and it was not as good.
0:33
So this time I must say hers is better.
0:37
- Run. - [Paula] No, listen,
0:38
one of the things you've always been, Michael, is truthful.
0:41
Even if it hurts you, you tell the truth.
0:45
So you keep on telling the truth, okay?
0:48
Because if my apple crisp is not as good as your mother,
0:52
it gives me something to reach for.
0:55
- That's right.
0:56
- [Paula] Okay?
0:57
- I learned my lesson.
0:59
(Paula laughing)
1:00
It's better already. I'm going to say it right now.
1:02
- [Eddie] You know what he told me,
1:04
- [Paula] What?
1:04
- [Eddie] He said it was his mother's pear crisp so-
1:07
- [Paula] Oh, pear.
1:09
- Pear crisp. - [Eddie] So pear and apple
1:10
are two different things.
1:11
- [Paula] Well, I didn't buy too many pears,
1:13
I just bought apples.
1:14
- Well I didn't like the apple part anyway.
1:16
(Paula laughing)
1:17
It was a crisp part I always really cared about.
1:20
- [Paula] He's full of- - [Eddie] Are you saying
1:21
this one is for the topping.
1:22
He wants just the topping.
1:24
- [Paula] Yeah, that's all he wants,
1:25
it's the butter
1:26
and the brown. - Yeah, that's what you
1:27
need to work on, the topping part.
1:28
- He likes it crispy.
1:31
- I just got a couple of pears.
1:33
The rest was ice cream and crisp.
1:35
(all laughing heartily)
1:36
- [Eddie] (indistinct) brown sugar and oatmeal.
1:38
- Yeah.
1:39
I just make that off.
1:41
Might just take a butter and put two cups of brown sugar,
1:47
a cup of oats.
1:49
- See you need more brown sugar,
1:50
I think that's where you screwed up.
1:52
- There you go.
1:53
- Okay, the guys did a good job, y'all.
1:57
Peeling these apples and now Don and I...
2:01
Oh, oh.
2:03
- Oh, oh, that's Michael.
2:04
And I have had to fuss at him.
2:08
He left a lot of bow ties on these apples.
2:11
- He did.
2:11
- Uh, huh.
2:12
- Well, we're slicing them up
2:16
and I'm gonna cook them down.
2:18
We'll stew them down, and they'll be ready for apple crisp,
2:21
but I got to cook them though.
2:23
I'm gonna stew them down, like I said.
2:25
I said that, didn't I?
2:26
- Yes, you did.
2:28
You gonna do what?
2:30
- I'm gonna cook them down.
2:31
I'm gonna stew them. - Okay.
2:32
Okay.
2:33
- With sugar.
2:36
So they will be ready for apple pie and apple crisp,
2:42
apple cobbler.
2:45
So I've put some water in my pot
2:49
and now I'm sweetening my apples.
2:52
I think I put two cups of sugar for all of those apples.
2:57
And we're just gonna stew them down.
3:01
And they're gonna be wonderful.
3:04
Oh, I kinda like that spoon.
3:08
So I used the pot filler, Eddie.
3:13
So I don't know how much water I put in there.
3:17
I didn't put much.
3:21
- [Eddie] I mean this is just a general large recipe.
3:24
- Yeah.
3:25
(water trickling)
3:31
No, I don't want them too juicy
3:35
because a lot of juice is gonna come out of these apples.
3:44
So is not let your apples turn brown or your pear,
3:49
whatever fruit you're using.
3:51
There is a product at the grocery store called Fruit Fresh.
3:55
And all I do is put some Fruit Fresh in a bowl of water
4:01
and drop my apples down in there
4:03
until I get them sliced up and ready.
4:06
And that will make them retain that pretty,
4:11
what color is that?
4:13
Maybe a pale yellow.
4:16
Anyway, they won't be brown.
4:18
So make sure, and some people just use lemon juice,
4:22
but I really like the Fruit Fresh product.
4:31
Y'all,
4:33
I don't know how many years later,
4:35
but I'm still trying to make an apple crisp or a pear crisp.
4:40
Michael said his mother always made pear crisp.
4:43
I don't know if y'all saw the show years ago,
4:46
but it was a show about your favorite things
4:51
that your mama made.
4:53
And Michael said, his favorite thing was a pear crisp.
4:55
So I said, I can make you one just as good.
4:59
Well, I did make one,
5:02
and when it came time to taste it, he said, "no, Paula,
5:06
"my mama's was so much better.
5:09
So all these years later,
5:10
I'm still gonna try to make that man happy
5:13
with an apple crisp.
5:15
So
5:19
while I was putting things together,
5:21
Eddie was writing down what I was doing.
5:24
So this recipe is nowhere to be found except in this book.
5:29
So here we go.
5:31
Start with four cups of peeled, cored, sliced, thin apples.
5:41
And this is in a sauce pan.
5:43
And when you're slicing them up,
5:46
make sure you drop them in a little bowl of water
5:50
that has Fruit Fresh in it,
5:51
and that will keep your apples from turning brown.
5:54
So you'll drain the Fruit Fresh water off your apples
6:01
after you've peeled, cored and sliced them thin,
6:05
into a sauce pan,
6:07
you'll put those four cups of sliced apples
6:11
along with a 1/4 of a cup of water
6:14
and about a cup of sugar.
6:18
So if you think that's too much,
6:19
you can use like half a cup.
6:21
Anyway, half a cup to one cup of sugar,
6:25
depending on how sweet you like them.
6:28
So this is what I have from my four cups of raw apples.
6:36
And I'm just gonna pour them into my,
6:39
it looks like an eight by eight dish,
6:45
and I'm just gonna spread those out.
6:48
Michael likes more crust
6:51
than the apples or pears.
6:55
All right, so I made the topping
6:58
and this topping is very similar
7:00
to the topping that you would use
7:03
on Aunt Peggy sweet potato casserole.
7:06
So in this, I have a half a teaspoon of vanilla,
7:10
a half a cup of packed, light brown sugar,
7:14
3/4 a cup of all purpose flour,
7:18
a teaspoon of cinnamon,
7:20
a 1/4 of a teaspoon of nutmeg,
7:23
one cup of old fashioned oats
7:26
and one stick of softened butter.
7:30
And you'll just want to put all that in your bowl.
7:34
And I did mine between a fork and my hands.
7:39
So we're just gonna crumble this,
7:45
spread our crumbles up on top of our apples
7:53
and hope it will measure up.
7:57
I can't wait to see what it tastes like.
7:59
We may have to just throw this recipe out
8:01
and start all over again, y'all.
8:03
Who knows.
8:04
But nothing ventured, nothing gained is what I always say.
8:10
This is gonna have lots of good old topping on it.
8:20
Looks good, doesn't it Eddie?
8:21
- [Eddie] Yeah.
8:22
I mean, hey, sugar, apple, butter.
8:24
How can you go wrong?
8:26
- How can you go wrong?
8:28
You know what? Probably the only thing I would do,
8:33
I would add to this is a might would add some nuts,
8:37
but it's too late now.
8:39
'Cause I just thought about it.
8:41
All right, so I'm gonna put this in the oven at 350
8:45
and I'm gonna bake it.
8:49
I may lower the temperature
8:52
and bake it for 30 to 40 minutes
8:55
until it's kind of nice toasty brown and crispy.
9:01
So we will see what we have when it's through.
9:07
Okay, y'all.
9:08
I just brought it out of the oven now.
9:09
I cooked this one for 30 minutes on 350.
9:14
So I'm gonna whistle for the big dog,
9:17
see if he'll come in and taste it
9:21
and tell me what he really thinks.
9:24
I think all our measurements were perfect,
9:31
but now I haven't dug into it yet.
9:37
Oh, Eddie that couldn't get anymore perfect, could it?
9:43
Nice and crisp,
9:48
and it's not sitting in a whole lot of juice.
9:52
The topping is sitting right on top of those apples.
9:55
- [Eddie] Cinnamon is kicking up the-
9:57
- Yes.
10:00
So I can't wait to see what Michael says.
10:03
Can you see?
10:06
See in there, Eddie.
10:24
I think it tastes very good,
10:26
but we're going to have to listen to what the big dog says.
10:29
Here he comes.
10:32
- I was working on my grill.
10:34
- I know you were working on your grill.
10:37
All right, so I want you to taste this.
10:40
- [Michael] Oh good.
10:41
- Michael, I formulated just a whole new-
10:44
- Hey y'all.
10:46
- All right, so I want you to taste it
10:47
before I put the ice cream on it.
10:50
And I want you to give me your honest, honest opinion.
10:58
Am I getting close?
11:01
- You are.
11:02
- Yay.
11:04
- Or that was getting so long, I can't remember.
11:05
(both laughing)
11:08
- [Paula] That's my bad.
11:10
How long has it been?
11:12
- Oh my God.
11:13
- 17 years, 16 years?
11:15
15.
11:16
- Since I've tasted my mother's.
11:18
- I know that,
11:19
but it's been like probably 15 years
11:21
since I've tried to make one that you liked.
11:30
- That is good.
11:32
It was like more brown sugar or something on them.
11:35
- Your mama's?
11:36
- Yeah, but it's still great.
11:37
I mean,
11:41
the best I've had. - [Eddie] I bet your mama-
11:43
I bet your mama probably didn't measure.
11:45
She probably just scooped things into-
11:46
- I don't know,
11:47
probably did.
11:50
- I hate that I didn't get your mother's cookbook.
11:54
Got a little recipe box.
11:56
- I think Michelle's got it.
11:57
- Oh yeah, I think Michelle came in and snatched that,
12:00
which I certainly don't blame her.
12:02
- Yeah, but she'll share with you.
12:11
- I don't think I've changed a thing, Eddie,
12:13
about the actual formula.
12:17
- It's good.
12:20
- I think so too.
12:25
- See how that's right there?
12:28
It was more like that,
12:29
and then it was the crispy things were different.
12:33
- [Paula] The crispy things were different?
12:34
- [Michael] Yeah.
12:35
- [Paula] How?
12:36
- [Michael] I don't know, they were just baked different.
12:39
- [Paula] Baker?
12:41
- [Michael] Mm hmm.
12:42
- Okay, maybe I juiced it up too much.
12:47
- It's good though.
12:48
- You want some more?
12:53
- Yeah, a little bit,
12:54
I'm on a diet. - I hear that crunchy.
12:56
When did you start a diet?
12:58
- I just made it up.
12:58
(Paula laughing)
13:02
- You hear that crunching?
13:04
Ouch. - It is good.
13:06
- And you know what, it really is so easy.
13:11
Once you get your apples
13:14
peeled and cored and sliced.
13:16
- I was gonna say that's 'cause I peeled the apples.
13:19
- Yes, and I tell you what,
13:22
if you hadn't done that,
13:23
if you and Don hadn't had done it,
13:24
I'd still be walking all around those apples.
13:30
- Eddie, you want to try some?
13:31
Oh, that's good.
13:34
Would you like to try some, Eddie?
13:35
- [Eddie] No, thanks.
13:37
- Well, I think the verdict is
13:42
delicious.
13:44
- [Michael] You did good.
13:45
- [Paula] Thank you.
13:46
- [Michael] Perfect.
13:48
- It's just because you haven't tasted your mama's
13:50
in so long.
13:55
Oh my goodness.
13:56
Well, love and best dishes, y'all.
13:59
Let's just keep on trying to up our image
14:04
to our husbands' mothers.
