- Hey, y'all, today is a very special day for me.
0:04
If you watched the introduction video
0:07
to the people that are benefactors
0:13
of the homes that we build for them, the wounded warriors,
0:17
if you watched the introduction video,
0:20
I promised y'all that I was gonna grab these guys
0:23
one at a time and bring them in the kitchen
0:26
and cook with them.
0:28
This is Travis Strong,
0:31
and he lost both legs,
0:38
in Baghdad?
0:40
- Baghdad, yes, Iraq. - In Baghdad.
0:43
What year was that?
0:44
- 2006.
0:45
- 2006, so you've been at this a good while, haven't you?
0:49
- A little bit, yeah a little bit.
0:50
- But he has made the most of it, y'all.
0:54
Look at this man.
0:56
Show 'em, show 'em your muscles.
0:58
Holy Cannoli!
1:00
I wouldn't wanna get in a fight with him.
1:03
- No.
1:04
- So he is in the process of being a recipient
1:09
of one of the homes that we build for wounded warriors.
1:14
Just for a little thanks of them doing what they do
1:19
for the rest of us in this country.
1:23
And these homes are designed to match
1:26
whatever disability they came back with.
1:30
You know, some are blind, some are triple amputees,
1:34
some are just a single amputee, double amputees,
1:39
fire, have been real badly burned in fires.
1:44
So it's just wonderful, wonderful,
1:49
that we can do that for Travis.
1:56
And he loves to cook so he's even designing
1:59
his own kitchen in his home.
2:02
When are they expecting you to be in it, Travis?
2:05
- They're talking hopefully,
2:06
around Thanksgiving to Christmas timeframe.
2:08
- Perfect, just in time for you to cook your heinie off.
2:10
- Yep, exactly.
2:11
- For everybody.
2:12
- Yes, it's gonna be good.
2:13
- And you're gonna, yeah,
2:14
and you'll have so many friends show up.
2:16
- Yes.
2:17
- So I had asked Travis earlier in conversation
2:25
do you like savory or sweet stuff
2:29
and what do you prefer cooking?
2:32
- I can cook anything.
2:33
I like to cook all kinds of stuff
2:34
but I'm really kind of a sweets person.
2:35
I love sweet stuff.
2:36
- That's all I had to hear, honey.
2:38
That's all I had to hear.
2:40
So I checked with him and said,
2:43
"How does an angel chocolate mousse pie sound?"
2:47
And you said that was-
2:49
- That sounds great. - That sounded good.
2:50
- Really good.
2:51
- And you know, chocolate pie, it's one
2:52
of those American foods. - Yes.
2:54
- Like mama's apple pie, chocolate pie.
2:58
So that's what we're gonna make today.
3:01
And you know, the other day when I came up
3:04
with this recipe, I didn't realize
3:06
that it was gonna be rain, rain, rain,
3:09
and more rain, Travis,
3:10
because meringue usually will not make on a rainy day.
3:17
- Mm, well.
3:18
- And at five o'clock it was raining cats
3:19
and dogs this morning.
3:21
- [Eddie] It's not real humid,
3:22
so you may have a chance.
3:23
- Yeah, so that's what I'm hoping, Eddie.
3:25
- Alright. - Alright.
3:27
So we've got three egg whites
3:30
and instead of having a regular crust, Travis-
3:33
- Yes.
3:34
- This crust is gonna be made from the meringue.
3:36
- Gotcha.
3:37
- Okay, and I tell you what, let me see if I can slide down.
3:44
If you could toast those pecans for me-
3:46
- Okay.
3:47
- That would be great.
3:51
And you have to watch 'em.
3:52
Is that uncomfortable for you?
3:53
- No, that's fine, it's all good.
3:54
- Yeah, just throw 'em in there
3:56
and nuts will burn real quick like.
4:01
- Alright, I'll watch 'em.
4:04
- So here we go.
4:05
We're beating our three egg whites
4:10
and then we're slowly gonna add the cream of tartar.
4:17
We're slowly gonna add the sugar
4:19
and the cream of tartar, and hopefully,
4:21
this cream of tartar will guarantee a stiff meringue.
4:28
- All right, so seems to be working, Eddie.
4:32
(mixer beating)
4:38
And that was a half-a-cup of sugar
4:41
(mixer beating)
4:49
and a teaspoon of cream of tartar.
4:54
And the recipe doesn't call for vanilla, but just a drop,
5:01
'cause vanilla is good in everything.
5:05
Alright, so the key, uh-oh,
5:10
the key to making this meringue, Travis,
5:16
is it's ready when you can pick those beaters up-
5:18
- Okay.
5:19
And now the egg white falls back in the bowl.
5:21
- Gotcha, never made a meringue before so
5:23
that's good to know.
5:25
- I love like, meringue cookies, they're so good.
5:31
Okay, that's probably been a few minutes, isn't it?
5:33
- Yep, yep.
5:36
- I think that'll be good.
5:37
So we're gonna go back down here
5:42
and we're gonna make this,
5:48
we're gonna put this crust and oops, in our dish.
5:54
So tell us a little bit about yourself.
5:56
Where do you live?
5:57
- Right now, I'm living down in Dallas, Texas.
6:01
- [Paula] I love the state of Texas.
6:02
- Yes.
6:03
- [Paula] I don't like the heat-
6:04
- It is hot.
6:05
- But I feel such a kinship with the Texas women.
6:09
It's like we're cut from the same cloth.
6:11
- Yeah, they're all-
6:11
- [Paula] But, so anyway, tell us all about it.
6:13
- Well, I moved down to Texas.
6:15
I used to live up in Colorado,
6:17
and I moved down to Texas to be with my fiance
6:22
and then also to be a part of a gym that's down there.
6:25
It's a nonprofit gym.
6:26
- [Paula] Um-hmm.
6:28
- It's called the Adaptive Training Foundation.
6:30
- [Paula] Uh-huh.
6:31
- And we teach, we help people who have
6:35
any kind of a disability-
6:37
- Yeah.
6:38
- Whether it be limb loss or neurological conditions
6:42
or spinal cord injuries or anything kinda like that.
6:47
We train them, we train them both physically
6:50
and mentally and try to get them strong
6:52
and get them mentally strong.
6:54
- That's wonderful, and so is that one of the ways
6:57
you have found like, you could handle
7:03
what happened to you in Baghdad?
7:06
- Well, I think with what happened to me,
7:08
it puts any of us that have been injured
7:11
into a unique position to where now
7:13
that we can help other people who are kind of struggling.
7:16
- Yes.
7:17
- I mean, I was injured, close to almost 20 year ago.
7:21
It's been going on like, I think like, 17 years-
7:24
- No.
7:24
- And so for me to be able to help some
7:27
of these guys that are- - Yeah.
7:29
- Just recently injured- - Yeah.
7:30
- Where they feel like they're just struggling
7:32
and they're like, they don't know what they can do.
7:34
They don't know how they can do things.
7:36
- Right.
7:37
- And then here I am, I can come-
7:38
- You come in and show 'em.
7:39
- And show them life's not over, right?
7:41
- That's right.
7:42
- There's still's tons more stuff that you,
7:43
- That's right.
7:44
- That you can do.
7:45
And that's, that's why I just love doing it, doing that.
7:47
- That's wonderful.
7:49
Another way that you give to mankind.
7:54
- Yes.
7:56
- Okay, so our nuts that you roasted for us.
8:01
- I have cooled down, so I think it'll be safe now
8:03
to add 'em to our meringue.
8:05
If you want to just take that spatula
8:08
and I'm gonna just pour 'em in.
8:10
If you'll fold that in, then we're gonna make our pie crust.
8:16
And you see the way he's doing it y'all?
8:18
The fold, you go down, over, down and over.
8:24
Especially when you're working with things like,
8:26
doesn't that look like divinity?
8:27
- Yeah it looks so good.
8:29
- I could eat it right now.
8:32
- Oh yes.
8:34
- Yes, yes, yes.
8:38
- How much do you?
8:38
- Perfect, that's good they just mixed in.
8:41
So if you wanna go ahead and put 'em in our,
8:49
on top of everything that's good in Travis's life,
8:53
he also has a fiance.
8:57
And his fiance has a 10-year-old son named Gabe?
9:01
- Gabe, yep.
9:01
- His name's Gabe? - Yes, it is.
9:02
- And, that he just loves.
9:06
So I think everybody should be institutionalized.
9:14
So I'm glad to hear that you're gonna join the institution.
9:18
(Paula and Travis laughing)
9:20
- Yep.
9:21
- Okay, darlin'-
9:22
- Soon here, soon.
9:23
- Let's see, we'll kinda,
9:28
that's wonderful, so you'll have your new home.
9:31
- Yes.
9:32
- [Paula] And have a place to bring your family.
9:40
And little Gabe is so lucky to have you-
9:43
- [Travis] He's an awesome kid.
9:44
- [Paula] As a role model.
9:46
- Yeah, he is a very, very good kid.
9:50
- That's wonderful.
9:51
So he's one of those that's easy to love.
9:53
- Yes, oh, definitely.
9:57
- Okay, I'm gonna kind of just,
9:59
this is going to puff all up, but when we pull it out
10:03
and as it cools, it'll deflate.
10:06
- Okay.
10:07
- We're gonna put this in the oven
10:11
on 275 and we are gonna bake it for one hour.
10:14
- Gotcha.
10:15
- Recipe calls for two cups of whipping cream, whipped.
10:21
- [Travis] There you go.
10:23
- So to me, I like to sweeten my whipped cream.
10:28
So I usually use to a cup of heavy cream,
10:32
a fourth of a cup of sugar, so
10:34
- That's gonna be good.
10:35
- This is a third of a cup, so I'm not gonna make it
10:38
quite as sweet as I normally would, but.
10:42
We just gonna whip, whip, whip.
10:49
And Teresa has got our chocolate chips, a 12-ounce package
10:54
of chocolate chips and with six tablespoons of water.
10:59
And she's melting that in the microwave.
11:01
We're gonna let that cool.
11:03
And we gonna fold it into our whipped cream
11:06
and our pie's gonna be ready.
11:08
- Nice, sounds good.
11:11
- This is perfect.
11:13
You want a finger?
11:14
- Oh yeah, uh-huh.
11:16
- Tell me if that's sweet enough.
11:19
- Oh yeah, that's good.
11:20
- Okay. - Yep.
11:21
- So we'll put this back in the refrigerator.
11:25
Alright, you strong man with the big muscles.
11:27
- [Travis] Just fold it in, huh?
11:29
All right.
11:31
- [Paula] You want to fold will that in.
11:46
Yes, looking good isn't it?
11:52
- Yeah, it's looking really good.
11:56
- Yes.
12:02
It's important though that you let that chocolate cool
12:05
before you go to fold it in to your whipped cream,
12:10
'cause you don't want that whipped cream to break down.
12:12
Look how chocolatey that's getting, Travis.
12:15
- Yeah, it's gonna be good.
12:17
- Frost pie, baby, frost your pie.
12:21
- All right, just put it on?
12:23
- [Paula] Well not all at one time,
12:25
but just try to make it pretty.
12:29
Can you make it pretty?
12:31
- [Travis] I can try. - [Paula] I know you can.
12:33
- [Travis] I will try.
12:34
- [Paula] I know you can.
12:37
Yes.
12:38
- [Travis] Alright, so-
12:39
- [Paula] Here, you want me to give you room to...
12:50
- [Travis] Just spread it across?
12:51
- [Paula] No, I'll just kind of do this with a knife.
12:52
- [Travis] Gotcha.
12:53
- [Paula] And you just keep digging it out
12:56
and putting it on.
12:57
- [Travis] Okay.
13:00
- [Paula] It definitely separated
13:01
from the pan, so perfect, perfect, perfect.
13:17
Yes.
13:24
Come on baby, sock it to me, sock it to me.
13:41
I hate it shrunk from the pie pan
13:43
'cause it doesn't look as pretty.
13:45
- [Travis] Yeah but, it's all going down the same place.
13:48
- [Paula] I was gonna say-
13:49
- [Travis] It's going down.
13:52
- [Paula] Yum, this is really moussey.
14:04
- [Travis] Alright.
14:05
- [Paula] Thank you darling You have done a fabulous job.
14:07
Let me help you get that off.
14:14
And you have done A wonderful job.
14:16
- [Travis] Cool.
14:18
- See that's pretty, just take a knife,
14:22
kind of swirl it in.
14:23
- Okay.
14:25
- Isn't that pretty?
14:27
- That's gonna be good.
14:28
- And then, we're gonna sprinkle it with a few more nuts.
14:35
- Okay, that's good, that's good.
14:38
- And it's gonna go in the fridge.
14:42
Ain't that pretty?
14:45
Travis does pretty work.
14:47
(Paula and Travis laughing)
14:48
- Yes, I do, I do.
14:49
- Yes you do.
