- Well it's a new year.
0:04
The first week of the new year.
0:08
And, uh...
0:11
I guess y'all are doing what I'm doing,
0:16
or I'm doing what y'all are doing.
0:18
It's time to lose weight.
0:21
It's time to cut back on what we've been eating,
0:24
right, Teresa?
0:26
- [Teresa] Do we have to?
0:27
- Do we have to? No, we don't have to. (laughs)
0:30
But, what we don't do about them extra pounds,
0:33
we put on over the holidays.
0:35
And all of the bacon I did, and cookies,
0:38
and...
0:39
cakes,
0:40
and...
0:42
potatoes.
0:43
Don't forget the potatoes.
0:45
I love 'em. So this whole week,
0:50
the videos are gonna be about air frying.
0:54
Because that's a great way to have your cake,
0:58
and kinda eat it too.
1:00
So...
1:02
our first recipe for the new week of 2022,
1:08
is gonna be fried pickles.
1:10
Everybody loves fried pickles, don't they?
1:12
Even if they don't want a pickle, they like pickle.
1:15
I know Paula Deen's Creek House,
1:18
they order those fried pickles like no tomorrow.
1:22
That's the first thing little cloudy of orders,
1:25
when we all go to Creek house.
1:27
- I love fried pickles. - Fried pickles...
1:29
You say, can we have some fried pickles?
1:32
So it's so very simple y'all in the recipe.
1:35
Should you happen to have my air fryer cookbook?
1:39
The recipe is in there.
1:42
And,
1:43
so Teresa did the prepping today,
1:46
and look, this is very smart, what she did.
1:50
We're using spears rather than slices,
1:55
and you would drain those good.
1:59
And we're gonna use a half a cup,
2:00
of the Lady and Son's hot sauce, which is so good,
2:06
a half a cup of buttermilk and a teaspoon of garlic powder.
2:12
And we're gonna mix all that together and marinate them.
2:17
And you can see, she put them back in the pickle jar,
2:20
which I think is a great way to marinate them,
2:23
because it goes all the way through.
2:26
Now I'm gonna need a fork,
2:29
so I can pull them out.
2:36
So this is what we're gonna mix together to batter on with.
2:42
And I've got, what does that... Hey, look up. Let's see.
2:47
One and three fourths cup of self-rising flour.
2:50
That doesn't look like a... - [Teresa] It's a little less,
2:52
because we're only using a 16 ounce jar.
2:55
- Okay. So good.
2:57
But if you were making this whole recipe, y'all.
3:02
- It'd be a 24 ounce bar... Jar.
3:05
- Yeah, it'd be a 24 ounce jar and this is a 16 ounce jar.
3:12
Yeah. So yeah, cause we don't need all that.
3:15
So but the recipe is a 24 ounce jar of dill pickle spears,
3:21
or slices, whichever you prefer.
3:23
A teaspoon of garlic powder,
3:26
a half a cup of the Lady and Son's Signature hot sauce,
3:34
a half a cup of buttermilk,
3:36
one and three fourths cup of self-rising flour,
3:40
and a fourth of a cup of self-rising white cornmeal,
3:45
one teaspoon of salt and a half a teaspoon of pepper.
3:49
So like Teresa said, we're not cooking this many,
3:53
so we don't need quite as much. But in goes our flour,
3:59
and in goes our corn meal, and our salt and our pepper.
4:09
So just wanna stir those together.
4:14
And then we'll take our pickles out,
4:19
and cook them real good,
4:23
in a flour and cornmeal mixture.
4:31
And then, when we put them in our Airfryer,
4:36
we're gonna spray 'em,
4:41
so that they'll get crisp by spraying them,
4:45
that just, like I said, it just helps them brown,
4:48
and get some crisp.
5:01
You know what I cooked last night,
5:03
before I started my... (laughs)
5:06
Trying to cut back.
5:08
I fried chicken and I just fried it on top of the stove,
5:13
and it was so good.
5:17
So the next time I eat,
5:20
fried chicken, it'll be done in the air fryer.
5:24
- [Teresa] This is kind of a good recipe too Paula,
5:26
because it's not a total shock to your system,
5:28
if you've been eating.
5:30
There's atleast still some of the fun flavours.
5:32
- Right, right. Because...
5:35
No, no.
5:37
Because you just it's, it's very hard if you just...
5:43
It'll send your system into shock,
5:45
and it'll do, won't it Michael?
5:50
- [Michael] Yeah. I'm getting trained.
5:53
- All right, am getting him trained.
5:54
He said yeah, whatever I say. - Yes dear.
5:58
- Yes dear (laughs)
6:00
Alright.
6:03
I'm frying pickles Michael,
6:04
but we're having them in the air fryer.
6:10
And, uh...
6:13
- (Michael) I can't wait. - I know.
6:16
Well, I was telling everybody,
6:18
this first week after Christmas, Michael,
6:22
everybody's kind of thinking about the same thing,
6:26
and that's trying to drop the weight,
6:30
that we put on over the holidays.
6:39
Okay, some of that came off.
6:43
So, like I was telling everybody Michael,
6:46
this is a good way to kind of have your cake and eat it too.
6:53
I'm still getting our fried food but,
6:57
not even Greeks. - [Michael] Yeah.
7:04
- [Teresa] It's pretty a good super bowl recipe.
7:06
- No, it's a little bit of ways from Superbowl, but yes.
7:11
Alright.
7:14
I'm really intrigued.
7:15
All right. Now we'll spray those real good.
7:21
I really prefer the slices versus the wages,
7:29
because... Alright, I've got it on 10 minutes,
7:32
and I've got it on 430 degrees.
7:36
So, let's see how long I told y'all it would take in the,
7:41
in the recipe that's in the air fryer.
7:46
Okay, we were supposed to refrigerate the pickles,
7:50
for 15 minutes. - [Teresa] We did.
7:53
- After frying. - Oh.
7:55
- After coating and I'm sorry I missed that.
8:01
- We got it mostly been in the refrigerator place,
8:03
think we marinated them for quite some minutes.
8:05
They've been in there for probably two hours.
8:07
So they should be good and cold.
8:08
- So it says to air fry for five minutes,
8:12
turn pickles and air fry for five more minutes.
8:17
But when you turn them,
8:19
you go wanna spray the other side.
8:23
So it's just that simple.
8:25
But I had forgotten about flouring,
8:27
and put them in the refrigerator,
8:29
and that would help your crust stick to this wet pickle.
8:33
- [Teresa] Oh, is that what it does?
8:35
- Yes.
8:37
So...
8:38
- Let's see how it turns out.
8:40
- We'll check it in 10 minutes.
8:44
Alright.
8:47
So I'm gonna flip,
8:52
and spray.
8:57
Okay, here we go.
8:59
I don't wanna burn myself,
9:01
cause this air fryer does get hot, hot.
9:06
Okay.
9:11
Wonderful. This doesn't have any calories, right?
9:17
Okay.
9:21
Back up.
9:24
Okay, so look at these y'all. How beautiful.
9:28
How beautiful those look and,
9:32
they're hot.
9:34
They're hot as fire.
9:38
So we can get our fried food gig going,
9:43
by doing this in the air fryer.
9:45
So, you know pickles don't have any calories,
9:48
cause it's a cucumber.
9:50
And, uh,
9:52
so I wanna bite that so bad,
9:56
but I know it's super, super hot.
9:59
But now, I have pulled out,
10:04
my cousin Don has his wife, Darlene.
10:08
She, God love her. She doesn't have any kitchen skills.
10:13
She said if it's got more than three ingredients,
10:15
she can't do it.
10:18
So the other day they stayed over here with us,
10:22
for about a month, this last time.
10:24
They just went Monday morning.
10:26
But Darlene said one day she came in here,
10:31
in the kitchen and said, "I am just so hungry for..."
10:38
I can't say it. Tzatziki sauce.
10:40
Eddie says it's wrong every time I say it.
10:43
So I don't... Is it got, its got the T on the front then?
10:48
Tzatziki - There you go.
10:51
- Is that what it is? (laughs)
10:53
Okay. Tzatziki sauce.
10:55
- Not ZD sauce. It's Tzatziki.
10:58
- Is there such thing as (mumbles) sauce?
11:01
- Uhm. Yes.
11:02
(laughs)
11:05
- Talk tomatoes. - Tomatoes.
11:08
Okay. Tzatziki. Did I say it right again?
11:12
- Yeah. - Okay. Yay.
11:15
I got this thing down y'all.
11:18
So, she phoned a friend that gave her this recipe.
11:24
Gosh, she said over 30 years ago.
11:27
And she's a little Greek lady,
11:30
and so Darlene went through step-by-step,
11:36
with the recipe, with her friend on the phone.
11:40
So Darlene made this and I fell in love with it.
11:47
So I decided to pull out the Tzatziki sauce,
11:51
and use it for a dip. - [Teresa] Be careful.
12:03
That burn off your mouth.
12:06
- No, it's tart. (giggles)
12:09
So this is a wonderful recipe.
12:15
But I would recommend using the slice pickles.
12:18
- [Teresa] You said it's easier to do only two sides.
12:20
- Yes. Yes. Because I was having to turn them and,
12:25
with the slices you just have two sides to worry about,
12:28
but where you have multiple sides to worry about,
12:30
are the spears. Plus there's a lot of liquid in the spears,
12:35
so they're not gonna get as crispy as the slices.
12:43
Holyshit.
12:50
Sorry. Where do you get the I?
12:53
So you can serve this with any kind of sauce you prefer.
13:01
A lot of people just serve it with ranch.
13:04
But any kind of sauce is legal, as long as you like it.
13:13
So that's the first recipe on to our plan,
13:18
of cutting some fats out. (giggles)
13:22
Happy new year.
