- Right now, here in Savannah y'all, the shrimp are running.
0:05
And so, I'm gonna share with y'all
0:08
how to make a coconut shrimp in your air fryer.
0:12
So, the first thing we're gonna do, is make us a batter.
0:17
Where is my batter bowl?
0:19
Let me get a bowl for the batter.
0:21
Hold on one second, I thought I had everything.
0:27
We are gonna start with our flour and that is half of a cup.
0:36
And then we're gonna add our baking powder.
0:42
That's a half a teaspoon of baking powder,
0:47
and we're gonna add one teaspoon of salt
0:52
and I'm just gonna whisk that together.
1:00
And then I'm gonna add my water.
1:05
And you want this to sit for about 15, about 15 minutes.
1:14
And if for some reason you don't have water,
1:19
(Paula laughing)
1:21
beer makes a wonderful, wonderful, batter.
1:24
So, you can always substitute your water, for beer,
1:29
it doesn't have to be cold,
1:33
just pop it in and the yeast from the beer
1:37
does terrific things.
1:42
So, we're gonna beat this until it's
1:44
as smooth as we can get it with the whisk.
1:53
And we want this thin enough
1:57
for us to be able to dip our shrimp in it.
2:04
So, while we're waiting on this to sit,
2:09
there's other things we can be doing.
2:13
Now, I'm using
2:18
a Japanese breadcrumb,
2:21
calls for half a cup of breadcrumbs
2:24
and I'm gonna add to my breadcrumbs,
2:26
about two tablespoons of flour.
2:34
There we go.
2:35
And I'm gonna add maybe a cup of coconut,
2:40
let's see what it calls for, two cups, yeah.
2:48
I'm just gonna mix that up real good,
2:52
because we're gonna dip our shrimp first in our batter
2:56
and then into our coconut breadcrumbs.
3:02
All right, I'm gonna give this a quick stir.
3:05
Again, I didn't put quite all that water in there,
3:09
'cause I felt like it was thin enough.
3:14
Okay.
3:17
So, now we're just waiting on our batter to sit
3:20
and while we are waiting on that,
3:24
I'm gonna come over here and I'm gonna make us
3:27
a yummy, yummy dipping sauce.
3:30
And I'm gonna start with
3:32
like a half a cup of orange marmalade.
3:35
I love this.
3:37
Almost every morning I eat a bagel and cream cheese,
3:40
or half a bagel, and cream cheese
3:43
and this wonderful orange marmalade, it's so good.
3:47
Now, I'm gonna add a half a teaspoon of red pepper flakes.
3:51
So, that's gonna kick it up just a little bit.
3:56
And then I'm gonna add,
4:00
I think it's four teaspoons of rice wine vinegar.
4:05
Let me double check my measurements.
4:09
Yes, it's four teaspoons of rice wine vinegar.
4:14
So...
4:19
I'm gonna mix that up real good
4:21
and we got our dipping sauce.
4:26
So easy.
4:29
Easy peasy.
4:34
Alright, I'm gonna...
4:40
Oh, it's so tart, - Tangy, tangy.
4:43
- it's tart, tart.
4:46
Tart, T-A-R-T, tart.
4:50
- [Eddie] And this recipe's
4:51
in your air fryer cookbook, right?
4:54
- Yes, it is Eddie,
4:55
thank you for reminding me to tell everybody.
4:58
It is in my air fryer cookbook
5:02
and I understand that they're kind of hard to find,
5:05
but I think Amazon has 'em, is that right, y'all?
5:11
Theresa!
5:12
- [Theresa] Yeah?
5:13
- You can find these at Amazon, on Amazon?
5:16
- [Theresa] Yes Mam.
5:17
- Okay, great.
5:19
So, there's a picture of our coconut shrimp,
5:24
so hopefully ours will turn out that pretty.
5:29
I am gonna cook them in them in the air fryer,
5:32
since the recipe is in the air fryer cookbook.
5:38
It's been close, close to 15 minutes, so.
5:44
I'm gonna go ahead.
5:46
We're gonna cook these on 400 degrees y'all
5:49
and I'm gonna go ahead and preheat our oven,
5:54
just so it'll be nice and hot and ready for our shrimp.
5:58
Okay.
6:01
So, here we go.
6:06
And normally you would use a jumbo shrimp,
6:11
for your coconut shrimp, but surprisingly they did not,
6:15
they did not have any jumbo shrimp
6:21
at the market, so there we go.
6:24
Oh, and I meant to tell y'all
6:27
to help them give 'em a little bit of a browning agent,
6:31
I'm gonna stir in a little paprika, that is paprika right?
6:37
I'm so afraid that I'd grabbed...
6:39
- [Eddie] Cinnamon or something.
6:40
- No, no hot, cayenne pepper.
6:44
(Paula laughing)
6:45
I'm so afraid, so that paprika will just help 'em brown,
6:51
you know, a little bit.
6:55
So, just a little, just to help the browning process.
7:03
Okay.
7:07
I'm embarrassed about these shrimp,
7:08
but if you ain't got 'em, you ain't got 'em.
7:16
- [Eddie] I always thought, you know, our local shrimp,
7:20
I mean, they're,
7:21
- they are so good and sweet. - Oh gosh.
7:23
- [Eddie] I think they tend to be on the smaller side.
7:27
- Oh yeah, Michael said his mother used to say,
7:33
used to claim that she always liked the T90 shrimp,
7:37
'cause she said they were so sweet,
7:38
of course the boys would go out
7:40
and they could catch those tiny shrimp, all day long.
7:47
I'm trying to dig through here and find enough,
7:49
big enough to...
7:53
I'm not having much luck.
7:58
Now, you'll wanna press that,
8:01
those breadcrumbs and that coconut into your shrimp.
8:15
And we're gonna spray these y'all
8:21
and toss them into the air fryer
8:24
and we're go and let 'em cook for not very long now,
8:29
especially these T90 shrimp.
8:31
It's not gonna take long for them to cook,
8:35
but the recipe calls for five minutes per side.
8:39
But, I don't know if we don't be able to
8:43
cook 'em, cook these that long, or not,
8:46
'cause we don't want them to wind up like an eraser.
8:51
And by putting that flour in with our coconut
8:57
and our breadcrumbs,
8:59
that little bit of flour just helps them stick.
9:05
All right, I'm gonna do one more.
9:12
And when you're doing coconut shrimp,
9:15
you wanna really, really butterfly.
9:19
And when I say butterfly, you'll wanna take your knife
9:24
and go down the back of the shrimp
9:28
and so that it makes a true like butterfly
9:35
and that'll make some appear bigger
9:37
than what they really are, too.
9:40
But when you butterfly 'em,
9:44
they're gonna cook even faster
9:48
than they would if you did not butterfly.
9:52
Al right, so let see if our oven is hot enough.
10:03
All right so, we're gonna spray our shrimp
10:06
and this will help them brown and get crispy.
10:13
I think I'm gonna go ahead and turn them on over now
10:15
and go ahead and spray the other side,
10:16
rather than waiting 'till they've cooked.
10:25
Okay.
10:35
I'm just gonna put a little bit more
10:36
in case I lost any, in all the turning.
10:42
Okay.
10:44
I will turn that off.
10:47
And I'm gonna give this a quick spray,
10:50
it's nonstick, but, I don't want any,
10:57
any of these bad boys to try to stick on me.
11:19
Okay.
11:22
There we go, five minutes.
11:25
(air fryer ticking)
11:29
And then if they're done, we're just gonna eat 'em.
11:31
But if they're not done,
11:33
we're going to turn 'em
11:34
and cook them for a little bit longer,
11:36
but like I said, these are so small,
11:38
they're gonna cook very, very, very quick.
11:40
(water running)
11:43
These are right pretty.
11:46
(shrimps sizzling)
11:49
(air fryer pinging)
11:50
Okay y'all, our coconut shrimp are ready
11:53
and while those were cooking,
11:55
I put our marmalade on the stove
11:59
and I simmered it for the 10 minutes
12:02
that the shrimp were cooking.
12:04
So now, I'm gonna put it back in our serving bowl,
12:08
so it's gonna be nice and temperature hot.
12:15
So, here we go, here's what we've got y'all.
12:26
They look delicious.
12:29
- [Eddie] They do, really puffed up.
12:31
- Don't they look good?
12:34
- [Eddie] It smells good, too.
12:35
- Ah hah.
12:42
So much better than fooling with a deep fryer
12:46
for 'em, you know?
12:49
All right, who's ready to taste?
12:54
Am I the only one ready?
12:55
(Theresa laughing)
12:56
Theresa?
12:57
- [Theresa] I'm always ready.
12:58
- How come you had not (indistinct) down to get
13:00
- a bite of these shrimp? - I know.
13:01
(Paula laughing)
13:02
- They gonna be hot.
13:04
- [Theresa] I was gonna say, "'Cause they're gonna be hot".
13:06
- They're gonna be real hot.
13:09
Come on!
13:11
- You know, I can't stand... - That sauce is gonna be
13:12
- even hotter.
13:13
- Uh huh, you know I can't stand to eat alone.
13:17
- [Theresa] I see steam.
13:18
- You see steam?
13:19
(Paula laughing)
13:20
- [Theresa] Uh huh.
13:21
- Uh huh?
13:24
Yeah, 'cause that's been on the stove now for ten...
13:26
I see steam coming all off your shrimp, too.
13:28
- [Theresa] Isn't that crazy?
13:34
- [Paula] Ah!
13:35
- You burned your mouth?
13:36
- Uh hm.
13:37
(Paula laughing)
13:38
Ooh and the coconut.
13:41
The coconut's so crunchy, innit?
13:42
- [Theresa] Hm hmm.
13:46
- The red pepper flakes, gives it a little bite.
13:49
- [Theresa] Hm-hmm.
13:50
- So, you might wanna, if you're,
13:52
you might wanna ask whoever you're feeding these to,
13:55
if they like a little heat.
14:00
Hm!
14:02
- [Theresa] They're good.
14:04
- Hmm!
14:07
The sweet from the dipping sauce
14:10
and the sweat, and the shrimp and the coconut.
14:17
The sweetness that it lends, it's just good.
14:20
- [Theresa] It is that.
14:22
- So, I hope y'all will prepare these, one day.
14:27
- [Theresa] They're easy.
14:28
- Hm-hmm, it's so easy.
14:31
If you don't have an air fryer,
14:33
you can always fry 'em on top of the stove.
14:36
- Bake 'em.
14:38
- Yeah, yeah.
14:39
You could bake them.
14:40
Hm, that coconut is insane on that.
14:44
- [Theresa] Eddie's watching just to make sure
14:46
there's still one left for him.
14:47
(Paula laughing)
14:49
- All right, this is gonna be my second one, y'all.
14:51
- [Theresa] I had my second.
14:52
- You've had your second,
14:53
does that mean Eddie gets four?
14:55
- [Theresa] No! (Paula laughing)
14:57
I tried to do like three a piece, did I not do that?
15:01
No, I didn't, I'm one shy.
15:04
All right so, I don't want y'all to see
15:06
an ugly fight going on
15:07
while we're fighting for that third shrimp,
15:09
so I'm gonna say,
15:11
"Ola", no I'm gonna say, "Ciao".
15:13
(Paula laughing)
15:16
Hm-Hmm.
15:19
Hmm, hm, hm, hm.
