- Hey, my friends!
0:01
Come on in the house, come on in the kitchen with me.
0:04
Because I'm trying to do,
0:07
I get a lot of requests for certain foods, y'all.
0:10
And so, I got a lot of requests for fried okra
0:15
done in the air fryer, or just fried okra, Theresa?
0:20
Did we get a lot of requests?
0:25
- [Theresa] We'd get a lot of things for air fryer
0:28
and because okra's indigenous to the south.
0:30
- It's in season, yes!
0:34
- [Theresa] So that's why we're doing it.
0:35
- Okay.
0:36
- [Theresa] Because some people don't know how to cook okra.
0:37
- Well, you know, I love my okra deep-fried,
0:43
but that can be a challenge for people
0:45
that don't like to make a mess in their house, you know?
0:48
'Cause you have to put it in deep oil
0:52
if you're gonna fry it on top of the stove,
0:55
but I'm gonna share with y'all my recipe for air fried okra.
1:00
And I'm gonna start by adding.
1:03
The recipe that we're putting up, y'all,
1:05
I'm actually halving that recipe.
1:08
So I got my cornmeal,
1:11
I've got my flour.
1:13
(bowl clinking)
1:15
So, my house seasoning
1:18
and my Cajun seasoning.
1:20
So, just know, that
1:25
this is not gonna. - [Eddie] It's got a kick
1:28
- Yeah, hopefully it's gonna have a kick.
1:31
But this looks different from the recipe
1:34
that you'll be getting, because like I said,
1:37
we just halved this recipe.
1:41
So I've got my okra right here and Theresa prepped it.
1:46
And look how nice and thin it is.
1:49
So I'm just gonna toss it in a little buttermilk.
1:56
Just a wee little buttermilk.
2:04
And like I've said before, y'all,
2:06
I've got some nice accessories for my air fryer,
2:10
so we'll put it in this basket when it's ready.
2:14
But I suggest to y'all
2:20
line a cookie sheet with parchment paper.
2:26
And that little bit of buttermilk
2:29
is gonna help our mixture stick to that okra.
2:37
So we're just gonna toss that
2:42
and then we just gonna layer it on.
2:44
You know what, let me do a favor to me.
2:49
I'm gonna do me a favor.
2:52
(chuckling)
2:58
- [Eddie] You know, a lot of people
2:59
may not know what okra is.
3:02
Myself, and I know they have it,
3:05
because I've seen it in the grocery stores.
3:07
- [Paula] I remember you telling me the first time
3:10
you ever had it.
3:12
You were at school.
3:13
- [Eddie] And when I was in college,
3:14
that was my very first meal.
3:17
- [Paula] And where did you have it?
3:19
- [Eddie] At Oglethorpe House at SCAD.
3:21
- [Paula] Uh, huh, at SCAD.
3:23
- [Eddie] I knew it was a fried vegetable.
3:24
- [Paula] So you had to ask a buddy.
3:26
- [Eddie] Well, no, I didn't even ask anyone.
3:27
I mean.
3:28
- [Paula] You just bravely took it.
3:29
- [Eddie] I knew it was a fried vegetable
3:32
and I didn't recognize it.
3:34
So it kind of came out a little quicker than it went.
3:37
(laughter)
3:40
- [Paula] What do you mean it came out quicker
3:41
than it went in?
3:43
Oh, you.
3:44
- [Eddie] I mean, oh, you, you took it out
3:45
of my mouth real quick.
3:46
- [Paula] Oh.
3:47
(laughter)
3:48
- [Eddie] 'Cause I couldn't quite figure out what it was.
3:51
Yeah, but no, I mean, I love it.
3:53
I love it stewed.
3:54
I love it over rice.
3:56
- [Paula] Oh gosh.
3:57
Any way I can get okra.
3:58
I love it just bald.
4:00
- [Eddie] Yeah.
4:01
- [Paula] You know the whole pods,
4:02
but some people don't like it cause it's slimy,
4:06
but that didn't bother me a bit.
4:08
- [Eddie] Yeah, well it's not so slimy when it's fried,
4:11
but boiled yeah.
4:13
Definitely, definitely.
4:15
- [Theresa] I like a tomatoes,
4:17
I don't know if y'all already said that.
4:18
- I love okra and tomatoes too, yeah.
4:20
That's just what we were talkin' about Theresa, over rice
4:24
It is so good.
4:28
All right.
4:29
So we had our seasoning, you know, in our flour mixture.
4:33
So, and this is just an easy way to, to dust off
4:40
your okra.
4:43
Like I said, I'm going to try to put that
4:45
in a single layer
4:47
and this has got to go into the refrigerator for one hour.
4:53
So while that's chilling
4:58
I'm done to make a Thai sauce
5:03
for our okra.
5:04
And I'm starting with mayonnaise,
5:06
I've got Thai chili.
5:10
Thai garlic, let me see so I can make sure
5:14
I say this right to you.
5:16
I've got one and a half tablespoons
5:18
of Thai sweet chili sauce.
5:22
All right.
5:23
Let's see.
5:24
That would be this one.
5:26
And ooh, I like that.
5:29
I'm like that at the Asian restaurants that we'd go to.
5:34
And then I've got a half a tablespoon
5:40
of garlic chili sauce and you can see the garlic in that.
5:46
And we're going to put just to wee wee little bit.
5:51
The recipe calls,
5:52
if we were doing a full recipe,
5:54
it calls for a third of a teaspoon,
5:57
but I'm just going to put a smidgen
6:01
because I do want to be able to eat this.
6:06
And ground red pepper can be hot.
6:12
Okay, so I'm going to be, when an hour is up
6:16
I'm going to be putting this in the air fryer on 400,
6:22
Oh, gosh, whatever.
6:24
I just stuck my tongue under my thumb.
6:29
I think it, it, I'm trying not to let my
6:32
let my fingers get licked
6:37
'cause I'll be in for a shock.
6:41
All right.
6:42
So we'll put this in the refrigerator and let it
6:45
marry those wonderful flavors together.
6:49
And at the end of our hour.
6:51
I'm going to set our air fryer on 400 degrees
6:56
and I'm gonna cook it for five minutes, shake it,
7:01
cook it for five more minutes, shake it.
7:04
And then I'm going to cook it for about three more minutes
7:07
and I'm going to shake it and I'm going to eat it.
7:09
(laughter)
7:11
So I'll see y'all in one hour.
7:15
Our okra has been chilling in the refrigerator for, I know
7:19
at least an hour y'all and this is one of the accessories
7:23
that come with,
7:24
no, there they're ex extra accessories that you can order
7:30
to go with them.
7:31
And I do love this little basket.
7:33
So I'm going to cook these in the basket.
7:35
So I don't have to chase little pieces of okra
7:38
all around it.
7:39
Now I'm going to spray this because I don't want our okra
7:47
to sick to our basket.
7:52
I'm just gonna put this in.
7:56
And I'm going to try as much
7:57
as I can to make a single layer.
8:03
Because remember we just halved this recipe
8:08
and we're actually serving it as an hors d'oeuvres
8:15
because we gonna pull out some toothpicks
8:18
and we got our little bowl of chili sauce.
8:21
Now you want to make sure that you spray those good
8:28
because spraying them is going to make them crispy.
8:32
I've got it set on 400 degrees
8:35
and I'm going to put it on five minutes.
8:39
Okay, y'all, five minutes.
8:41
(machine clanking)
8:46
aND you just shake them up good.
8:49
And we're gonna spray them again.
8:54
Shake, shake, shake.
8:57
We're going to let them cook for five more minutes
9:03
and then we'll shake them again.
9:06
Shake and spray.
9:08
Okay, I'm spraying that okra one more time.
9:15
Giving it a shake.
9:19
So I can get all that okra coated.
9:23
And for the last five minutes
9:25
I'm gonna go ahead ahead and turn it up to 430 degrees.
9:31
So here we go.
9:33
Five more minutes.
9:36
I actually wound up cooking these for five more minutes.
9:43
Ooh, and those handles, ooh.
9:46
Those handles are so hot.
9:49
But I wound up cooking them for five more minutes
9:52
instead of three.
9:55
Okay, ouch.
9:57
I can't get that second.
10:01
My depth perception y'all,
10:07
is so bad since I had my left cornea.
10:15
You know, died in my eye
10:18
my depth perception has just it's just shot.
10:22
So it's hard for me to judge.
10:26
But anyway, that's the story morning glory.
10:31
This looks so good.
10:34
So I wound up, I told y'all I was going to cook it
10:37
for five, five, and three
10:38
but I wound up cooking it for five, five,
10:41
and then the last five minutes I moved it up to 430
10:46
which some of the air fryers don't go that high.
10:50
But, mmm.
10:54
But because I was using the basket to cook 'em in,
11:03
they didn't cook quite as fast.
11:05
So I probably should have.
11:11
Oh, oh I'm double dipping my toothpick.
11:16
Teresa, come taste some of the okra baby.
11:22
- [Theresa] Look how pretty and little it is.
11:25
- [Paula] Mmhmm, you cut it so nice.
11:27
- [Theresa] The perfect size.
11:27
- [Paula] Just perfect to sit around
11:29
and have a drink.
11:31
- [Theresa] Well, or drink and just.
11:33
- [Paula] Uh, huh, and just nosh on the okra.
11:35
Well, when I said drink, I mean like diet soda.
11:39
(laughter)
11:40
- [Theresa] A good old fashioned coke.
11:43
- Annie, You're gonna have to come on around there
11:47
on this side of the table, watching here Eddie,
11:49
I'm dipping it for you.
11:53
There you go.
11:58
Cut a little on the small side
11:59
So you need to spear up three or four.
12:03
The Thai sauce is good, but so hot isn't it.
12:08
- [Theresa] It's got a little kick
12:10
- It's kicking me.
12:16
Delicious.
12:19
I'll tell you where you can get the best fried okra
12:21
in the whole entire world.
12:23
And that's it.
12:25
Paula Deen's Family Kitchen Restaurant
12:27
and the Lady and Sons.
12:28
Did I have it Creek House?
12:30
- [Eddie] I don't think Creek House.
12:33
- It's out of this world.
12:36
So if you're in one The Family Kitchens
12:39
or the Lady and Sons,
12:41
make sure you order the fried okra
12:43
because it will knock you out of your seat.
12:47
It's so good.
12:52
So I'm going in that good with a bath,
12:58
a good bye loving best dishes to all of you.
