- Hey, I'm Jamie Deen back here in mama's kitchen.
0:02
I'm gonna share a delicious, simple recipe with y'all.
0:05
We're getting into summer and so we always want
0:08
good things to have outside.
0:10
We're having parties, people are coming over.
0:13
Let's do potato skins, you want to?
0:16
And this first little tip I've got for you
0:18
is something that I use for all my potatoes.
0:20
We're doing air fryer today, but regardless,
0:23
if you go in the air fryer,
0:25
or if you go into your standard oven,
0:27
take time to coat your potatoes with olive oil,
0:32
or we're using a spray here today, and season 'em up.
0:36
Season up your skins.
0:37
So I usually stick mine in the oven,
0:40
'cause that gives me enough time
0:41
to get all my other work done.
0:43
So I had to go olive oil and salt, but Mom has recommended
0:47
that we use house seasoning on these potatoes.
0:50
If you're not a big potato skin fan,
0:53
trust me, when these cook up and it's got the flavor
0:56
on the outside of it, you're gonna love it.
0:58
I'm gonna put these into the air fryer for, Theresa?
1:03
40 minutes. - [Theresa] 40 minutes.
1:04
- This is gonna go for 40 minutes at 400 degrees.
1:08
Both of these potatoes are gonna be full cooked through.
1:12
Y'all grab one second
1:14
and I'll be right back with done potatoes.
1:16
Okay, so these have gone for 40 minutes,
1:18
but I've also let 'em cool.
1:20
They're still a little hot,
1:21
but we're gonna be handling these.
1:23
We're gonna cut 'em into two little boats.
1:27
Now, you wanna be very careful
1:29
when you're scraping these out,
1:30
'cause you don't want to go too deep.
1:32
It's important that we keep the skin boat intact on these.
1:36
We have served twice baked potatoes at our restaurant.
1:39
We started with the bag lady
1:41
and it took me some trial and error to be able to scoop out
1:46
a potato satisfying to my mama.
1:48
Not too much, not too little, just the right amounts.
1:52
Like everything else, there's a way to do it.
1:55
So I like to come in on the side, kinda go half moon here.
1:58
I'm not gonna go super deep
2:00
'cause we're gonna take all this potato
2:02
out of here, except for the little boat,
2:06
and we're gonna use it for something else.
2:08
I'd say that the meat of these potatoes are not far away
2:13
from seeing some kind of breakfast hash.
2:16
So see, don't scoop 'em all the way out.
2:18
You don't wanna tear up your skin.
2:21
Just enough, like a little canoe.
2:25
Now, you can put anything that you want
2:27
inside of twice baked potatoes.
2:29
A twice baked potato from here,
2:32
I would take the inside of these potatoes
2:35
and mix in some mayonnaise or some sour cream, some cheese.
2:39
I've done steamed broccoli with steak.
2:42
You can really stuff a potato with anything that you like.
2:44
But today, the skin is the star of the show
2:50
and that's why we really wanted to season it up well,
2:53
'cause folks are gonna be able to pick these up
2:55
and eat 'em with their hands.
2:59
So once you get to this point, I really wanna
3:01
firm these up a little bit.
3:03
So these skins are gonna go back into the air fryer
3:05
at 400 degrees for five minutes.
3:11
Hey, y'all, we're getting close, but it takes time
3:13
to make good food like this.
3:14
So our potatoes were, we canoed 'em out, put 'em back in
3:19
for five minutes, and now we get to the fun part.
3:23
We're gonna fill our little boats with cheese.
3:28
And of course what goes
3:30
with cheese and potatoes better than bacon?
3:35
Oh, I know, sour cream.
3:36
We'll get to that part.
3:38
So we've got our bacon here.
3:39
I'm just gonna fill our little bit of boats
3:42
with some bacon and some cheese.
3:45
Now, these are gonna go back
3:46
into the oven for five more minutes.
3:48
Only one more time and then I promise you we're gonna eat.
3:51
My mouth is watering, these look delicious.
3:54
As much or as little bacon as you want.
3:57
I really like bacon so I'm gonna cover the tops here.
4:01
This is gonna melt down
4:02
and it's gonna be a boat of goodness.
4:06
Don't go ashore on me now, y'all.
4:08
Five more minutes and we'll be eatin'.
4:10
Woo y'all, look, look at our little cheese bacon boats.
4:14
How delicious does that look?
4:17
There's a bunch of folks hanging
4:19
around the old TV set today.
4:21
The last thing that we're gonna do for this, y'all,
4:24
is a sour cream horseradish that we're gonna put on top.
4:29
So I'm just gonna eyeball.
4:30
I need a cup of this.
4:33
I trust myself on the cup.
4:36
I trust myself on the teaspoons, too.
4:39
I'm gonna, bet this will fit in here I think, nope.
4:42
I need two of these, nope.
4:47
First thing I'm gonna need is a smaller spoon.
4:51
And into this sour cream, I'm gonna put two tablespoons
4:59
Now, that's two teaspoons, and then about a half.
5:04
And into this, let's see,
5:05
am I missing anything that goes into this?
5:07
Oh, we're gonna put some chives in here.
5:11
So this will give us a little bit of flavor,
5:13
give us a little bit of color,
5:15
give us a little bit of texture in there.
5:19
I'm gonna do some more of that, that's pretty.
5:23
So I really like the horseradish in this
5:25
because it takes the sour cream
5:26
and it just adds another little mwah
5:30
that's so good with the potatoes.
5:32
My brother is not a fan of horseradish,
5:34
but my mom and I like it.
5:37
And it's just like everything else, in moderation.
5:40
You get too much and it will light you up.
5:43
But just enough in the sour cream is gonna balance out
5:45
all the flavors that we have in our potato skins.
5:48
And Peeps just wandered into the room
5:50
and he's sitting awful close too.
5:52
Everybody's smelling potatoes here today.
5:56
And right on top of this, I'm gonna
6:01
finish with some green onions.
6:04
Now, it was a couple of steps to get here,
6:07
but I promise, y'all, a ride in this canoe is worth it.
6:12
I'm Jamie Deen, this is good food.
6:14
We'll see y'all around the kitchen.
6:17
P.S., y'all, don't forget the tomatoes, hee hee hee hee.
