In this week's podcast, Paula talks about Macaroni and Cheese and her tips for cooking her famous Lady and Son's Macaroni and Cheese.
1. Cook your macroni noodles so they are soft and fully cooked
2. Make sure all the water is out of your noodles
3. Really toss the noodles with the cheese so the noodles are fully coated. Make sure the noodles are hot to get the cheese melted.
4. When you use cream cheese, pull it from the block cheese.
5. Use evaporated milk. It works GREAT in Macaroni and Cheese
6. Add Eggs last so you don't curdle the eggs.
7. Spray your pan with non stick spray as mac and cheese will stick.

see this is one of those things I really

cheese but I do I do start off by

measuring two cups of raw

noodles and I put them that in a pot of

water and it's important that you salt

your your water uh if you don't get

very beginning it's going to be a real

challenge to ever get them salty enough

so you want to pour your elbow macaroni

into that pot of boiling water and now

here is the best tip that I can give

y'all uh you know Italians say to cook

pasta El Dente well I I don't like my

pasta cooked El Dente I like my pasta to

cook kind of soft so here's the reason

it's important that you cook that elbow

macaroni until it's soft because if you

cook it El Dente and you go to mix it

with your wet

ingredients it's going to have to finish

cooking and it's going to soak up

that little bit of wetness that you got

but dried pasta so you'll want to cook
