hey y'all I'm Jamie Dean and today I'm
0:07
going to show you what to do with those
0:09
old pieces of chicken that you don't
0:10
know what to do with you know Brook and
0:12
I are so busy at the house I go to the
0:14
grocery store and buy rotisserie
0:15
chickens a lot of the time and I'll kind
0:17
of break them down and we'll put it on
0:19
top of a salad or I I'll throw it in
0:21
with some pasta for Jack but I always
0:23
have big pieces of our chicken left over
0:26
I had these a couple of weeks ago and
0:27
I've thrown them in the freezer that's a
0:29
great thing this chicken for what we're
0:31
using it today Frozen is fine I'm going
0:34
to take both of these carcasses and I'm
0:36
going to put them in this big PT now
0:39
chicken stock is a great thing to have
0:41
around the house I love celery and
0:44
carrots and onions this is how my mom
0:47
always did it we're just going to chunk
0:48
this
0:50
out and the carrots I'm going to take
0:52
the tips off the ends
1:02
got Mr onions going
1:06
in want to be sure and remove this outer
1:09
layer I'm just going
1:12
to cut this into a couple of big
1:19
pieces and right into the stock
1:23
pot my onions my carrots and the
1:27
celery but to that I'm gonna add just a
1:31
few bay leaves about three I'm gonna add
1:35
a couple
1:37
of black
1:40
Peppers lastly I'm going to throw in
1:42
some fresh parsley just a couple of
1:45
pinches get a good look down in that pot
1:47
do you see that that looks like
1:49
Grandmama's garden and it's going to
1:51
taste like Grandmama's Garden too it's
1:54
one of my favorite things I'm going to
1:55
cover this with
1:57
water I'm going to bring this up to a
1:59
bowl I'm going to let let it really get
2:00
a rapid bowl and I'm going to turn it
2:02
down and I'm going to cook it slow I'm
2:04
going to back down on it you'll have
2:05
some stuff that rises to the top some
2:08
fat and different things that cooks out
2:09
of the chicken if you want to skim that
2:11
feel free to after 2 or 3 hours of
2:14
cooking down in this pot it's going to
2:15
render some of the biggest best flavors
2:17
that you can get out of a kitchen tastes
2:19
just like Grandmama's house thanks for
2:21
