hey y'all I'm Jamie Dean and today I'm
0:08
working with two of my favorite things
0:10
butter and leftovers we're at the end of
0:13
picking season here in Savannah and I've
0:15
got some gorgeous blackberries now we're
0:18
going to be doing compound butter today
0:19
and it's as simple as this I'm just
0:22
going to pour them into my butter and
0:24
I'm going to use a potato masher these
0:26
are a little soft but it doesn't matter
0:28
cuz I'm going to mash these up in this
0:31
butter this is going to incorporate it
0:34
into this butter and it is going to be
0:36
so good got the creamy kind of salty
0:41
flavor of the butter and the sweet fresh
0:44
Berry flavor I've also got some herbs
0:46
left over today so I've got this fresh
0:49
dill which is so perfect for fish and a
0:53
little bit of lemon just going to zest a
0:55
little bit of this you know all the
0:57
flavor of a lemon can be found in it
1:00
zest really big flavor here so I'm going
1:02
to just take the Rind from one lemon cuz
1:06
I love lemon on my
1:09
fish smells so fresh and I'm going to
1:12
chop up a little bit of this
1:19
Dill I'm going to work this in with a
1:28
fork this is so pretty we come right
1:31
over here to my wax
1:38
paper now what I want to do with
1:40
this after I put it in the freezer I
1:43
want to be able to cut off pieces that I
1:45
can use for my
1:54
dish it's as easy as that my Blackberry
2:04
I'm going into the freezer with this
2:07
you're going to want to let it at least
2:08
go overnight but it'll keep for a good
2:10
long
2:15
while these are two that I've done
2:17
before that are ready to go now come
2:22
here check this
2:25
out oo ooh
2:32
look at this beautiful fillet that I've
2:34
done in my Grandmama's cast iron skillet
2:36
right on top of
2:47
this this is our look how beautiful that
2:49
butter is fresh blackberries compound
2:53
butter right here on
2:57
top I'm going to let that mount there
3:00
just about the time I get finished
3:02
