How To Make Tomato Pie - What's Cooking Wednesday

Join Paula in cooking up a delicious tomato pie topped with basil, scallions, and cheese. A perfect recipe year-round and any day of the week.
INGREDIENTS
1 unbaked pie crust, 9-inch
3 beefsteak tomatoes, ripe
1 pinch salt
10 fresh basil leaves, chopped
1/2 cup chopped scallions, white and light green parts
1 pinch ground black pepper
1/2 cup shredded mozzarella
1/2 cup shredded cheddar cheese
1/2 cup light sour cream, (or regular)
1/4 cup light mayonnaise, (or regular)
PREPARATION
Preheat the oven to 350 degrees.
Dust a work surface with a small handful of flour. Roll the dough into a 12-inch round about 1/4 inch thick. Use it to line the 9-inch pie plate, folding over the excess edges of the dough and crimping them if you'd like. Chill in the refrigerator for 30 minutes or up to overnight (cover lightly with plastic wrap if chilling for more than 2 hours). If you are using a prepared piecrust, skip this step.
