hey y'all welcome to another episode of
0:02
what's cooking with Paula Deen and you
0:04
know I'm sitting here with a smile on my
0:06
face because the recipe that I want to
0:09
talk about today I served it to a god
0:13
that I had so much fun with I asked if
0:18
he wanted to come to a cooking show with
0:21
me because I found out that he lives
0:24
like Hilton Head or somewhere very very
0:28
close so his name was Tom Berenger and
0:31
I'm sure y'all know who I'm talking
0:34
about he he really made his mark in some
0:38
older movies that were huge hits and
0:43
what would the name of the movies
0:45
Clifford the Big Chill yeah and another
0:49
one what did he do that was so so gosh I
0:55
can't remember
0:57
yeah the Vietnam movie what in the world
1:03
I can't remember y'all but y'all will
1:07
recognize Tom because I want to show
1:10
y'all a little clip from that show I had
1:13
such a good time with him he's a
1:15
character
1:16
so I decided to cook Tom a steak in fact
1:22
I cooked him a flank steak so I want to
1:25
just share with y'all how I did it now I
1:31
started with like a three to five-pound
1:33
flank steak and I salt and peppered it
1:37
and I just put it on a plate and put it
1:39
in the refrigerator for about an hour
1:42
but to see it and give it time to soak
1:45
up all those seasonings and you can cook
1:48
this on like a grill pan inside or you
1:52
can cook it over charcoal outside on
1:56
your grill you'll want to cook it total
2:02
time will probably be about 10 minutes
2:05
from medium-rare steak and if you're
2:09
gonna do it on a griddle pan you'll want
2:13
to
2:13
sear it and then rotate your steak one
2:17
time so that it has like the crisscross
2:22
patterns on the steak like you have when
2:25
you go to a fancy restaurant has those
2:28
grill strips on it so like I said about
2:32
10 minutes total cooking time maybe 5
2:36
minutes per side and you'll want to do
2:39
the same thing when you flip it over and
2:42
sear the other side of that steak you'll
2:46
want to rotate it so on the back you'll
2:48
have those grill marks on it like I said
2:52
a total of ten minutes for medium-rare
2:58
so what makes this steak so incredibly
3:00
good is the brown butter sauce that
3:04
we're gonna pour on top of it after it's
3:07
set for 10 minutes and we have it
3:09
plaited up and sliced on the bias
3:12
flank steak can be a little tougher so
3:15
you'll want to make sure that you slice
3:17
it against the grain but in the meantime
3:20
we have gonna prepared our brown garlic
3:23
butter by melting a stick of butter six
3:27
cloves of diced garlic together and
3:31
we're gonna cook that on low very slow
3:35
until your garlic and your butter has
3:38
turned to a nice golden brown after
3:42
we've got reached the light golden brown
3:45
set after we after we have come to that
3:52
light golden brown color we're gonna add
3:55
in 1/2 a cup of fresh chopped parsley
3:58
and we're gonna pour this over our
4:02
sliced flank steak and you would think
4:07
that you're enjoying filet mignon this
4:11
steak is so delicious and you know what
4:15
it's not nearly as expensive as that
4:20
filet mignon

5:08
call one eight hundred six five nine
5:12
3300 that's one eight hundred six five
5:15
nine 3300 I'm getting so close to
5:22
feeding you so I don't know if I talked
5:25
about this or not Tom said he thinks I
5:27
did but we Tom and I have a mutual
5:30
friend
5:32
his name is Phil and he made the
5:37
introduction to Tom and me and I'm so
5:40
thankful that he did because you know I
5:43
have so many acquaintances Tom but I've
5:46
always since I've been living in
5:48
Savannah all I've done is work so you
5:53
know making friends is kind of been ya
5:56
get shelved a little sometimes yes and I
5:59
miss that because I think friends are
6:02
one of the most important parts of one's
6:06
life you know I think your friends yeah
6:09
and I it's sort of like my son asked me
6:14
once he goes what's it like what do you
6:16
think I go nobody ever asked me that bud
6:20
sometimes lonely he goes lonely I went
6:23
yeah I mean it I go think about it if
6:27
you're AB and you're with these guys all
6:29
the time
6:29
so you maybe you almost go crazy yeah
6:31
you know like a family but I said but we
6:35
we could go 5 6 7 8 10 years 12 years
6:38
without seeing each other again or never
6:41
again yeah yeah yeah this one this away
6:52
because you know the center party your
6:55
grill Tom's off there's really no light
6:57
on that Center now how do you eat your
7:00
meat I forgot to ask you
7:02
medium rare yes if you just said well
7:05
done I'd had to come over there and give
7:07
you the one I my mother and my mother
7:11
would do that take her out to dinner and
7:13
she goes I want it well done and she'd
7:15
go well if they don't do that to the
7:21
steak just have a hamburger I know but I
7:26
would cringe it I know and if it was a
7:29
French chef they'd probably come out and
7:30
throw it at oh they would refuse yeah
7:37
they would say you need to leave it on a
7:47
little longer
7:48
yeah I'll make up my trip and I'm gonna
7:50
go ahead and see what this is doing
7:56
pretty good red colour that's beautiful
7:59
yeah you want to taste that little piece
8:01
that I just could you tell me what you
8:05
think
8:09
hmm is it good oh yeah yeah yeah yeah
8:12
you think I want to take this up yes I
8:17
think I'll kind of put it to the side
8:18
like that mm-hmm mmm well honey we got
8:22
it together oh it's perfect so you got
8:24
the register yeah am i cutting it enough
8:27
on the bias do you think well on a
8:31
tougher piece of meat yo you want to cut
8:35
it against the grain because if I cut it
8:39
this away the way it looks like you'd
8:41
like to cut it cuz it's got those lines
8:43
it would be so tough that you couldn't
8:46
eat it with George Washington's wooden
8:47
teeth so that's why we're doing it this
8:54
away and I think that looks slapped
8:57
could damn perfect in fact I'm gonna
9:01
take this other one and get it off the
9:04
grill and put it right there well let me
9:07
tell you what I got to go on top of this
9:08
I got a brown butter sauce just butter
9:14
in garlic butter
9:18
mo butter I kind of had to remelt it but
9:21
here we go a little parsley in there
9:27
yeah a little parsley it's butter garlic
9:35
and that's it
9:37
mmm gosh my eyes are watering my mouths
9:42
watering and my nose is running well why
9:47
don't we bring Laura inion we've been
9:51
talking about we've been talking about
9:54
her and nobody has met her yet exist was
9:58
it nice or bad I was saying how
10:04
beautiful you are
10:06

10:07

10:11

10:14

10:16

10:41

10:48
