- Hey friends, I'm here to jog your memory
0:06
and help you think about little Christmas gifts
0:11
for your friends or your family that won't break the bank
0:17
and it shows that you are giving your friends
0:22
something from your heart.
0:25
Like most of us, if we want or need something,
0:29
we go out and get it, right?
0:33
Most of us don't need another thing.
0:36
So I love giving a gift that...
0:43
The most valuable thing that I have
0:46
outside of family and friends is my time.
0:51
We always seem to need more time for something.
0:54
So I love to give a gift of my time to my friends.
1:01
So I love gifts from the kitchen.
1:05
So I'm gonna make and suggest to y'all
1:09
different kinds of butters.
1:11
I adore butter, y'all all know that about me.
1:15
And I simply adore compound butters.
1:19
And a compound butter is nothing but your butter
1:24
and whatever ingredients you wanna put in it.
1:28
Now, I've got blackberries, I've got strawberries,
1:32
I've got even some black raspberry.
1:38
Why don't I put on my glasses?
1:41
Where are my glasses?
1:45
We've got some black raspberry preserves.
1:50
We got strawberry preserves.
1:52
We got fresh strawberries, fresh blackberries,
1:56
we have honey, we have lemons,
1:59
we've got onions, we've got garlic,
2:01
and we've got dill, rosemary, sage, thyme and basil.
2:07
So you just have to decide
2:10
do you want to make a sweet compound butter
2:13
or a savory compound butter?
2:15
To me, there is nothing any better
2:20
than a charcoal-grilled steak with a pat of herb butter
2:27
sliced and put on top of it.
2:29
And you know what we use to serve when my brother was here
2:34
and when he was operating Uncle Bubba's Oyster House?
2:39
We used to serve a stuffed flounder,
2:43
and we made a crab butter.
2:48
And we mix crab meat, a little old bay.
2:54
I can't remember exactly to the T what we put in it.
2:59
But anyway, you wrap it in wax paper.
3:01
Most compound butters, you roll up into logs in wax paper
3:08
and refrigerate them or put them in the freezer.
3:11
So right as that dish went out,
3:15
we would take a slice off that crab butter log
3:18
and put on top of that stuffed flounder.
3:24
I can't tell you what it did to it, it made it even better.
3:29
And people loved it.
3:31
So decide, do you want to do a sweet or savory,
3:35
or a sweet and savory and give to your friends.
3:40
So I'm gonna start...
3:43
Let's start with a sweet one.
3:45
And it's like a vanilla honey butter.
3:53
So I'm gonna start with one stick of butter,
3:56
and this is all unsalted.
4:01
Normally, I use salted.
4:03
But all we have right now is unsalted butter.
4:09
So you can use either one.
4:11
And I'm putting like almost a heaping tablespoon
4:15
of powdered sugar.
4:19
I'm going to put a squirt of vanilla flavoring.
4:26
How much you think, Teresa?
4:28
- [Teresa] (indistinct) of a tea spoon.
4:30
- Yeah, I think that's about what I did.
4:33
And I'm gonna add some honey to it.
4:36
Maybe let's see how many tablespoons I'm gonna add.
4:44
Yeah, that'll fit.
4:47
I'm gonna add, let's start with two tablespoons.
4:57
Okay, that's one, and it sure is sticky.
5:03
And there's so many honeys out there.
5:07
Savannah is home to Savannah Bee Company.
5:13
And oh my goodness, does he ever have some good honey.
5:18
I love Tupelo Honey.
5:20
What about y'all?
5:24
You don't like one?
5:25
- [Teresa] I like all kinds.
5:25
- All kinds.
5:27
Well, that Tupelo is so good.
5:30
All right now Teresa, what else were we talking about
5:33
putting in this?
5:34
- [Teresa] Cinnamon.
5:35
- A little cinnamon, okay.
5:38
Do I have the cinnamon, yes.
5:39
- [Teresa] Yes. Ma'am.
5:40
- And we're gonna just do a teeny tiny tad
5:44
of cinnamon, right?
5:45
- [Teresa] Yes.
5:47
It really tells you to sort of use-
5:49
- Yeah, I'm putting about an eighth of a teaspoon in.
5:56
You can play around all of these and decide what you like.
5:59
Now, I can't remember, is there lemon juice in it or?
6:02
- [Teresa] No.
6:02
- No lemon?
6:03
- [Teresa] No lemon.
6:04
- So you think I've got about everything in it?
6:07
- [Teresa] I think you do.
6:10
- I really like making my compound butters
6:14
in my food processor.
6:17
In fact, I've got a small food processor
6:20
that I use to make...
6:22
Almost all I'm make in it is my tartar sauce.
6:26
But I like to get my onions and my pickles
6:29
really minced up good.
6:31
And you're not gonna make a huge amount.
6:34
So, I really liked those.
6:37
Whoa, whoa, back down sister.
6:47
Wow, I've got it on the lowest setting, look at it go.
7:02
Okay, you wanna make sure that your butter
7:05
has been out on the counter for a couple of hours and has...
7:12
All right, come on, let's get off,
7:15
sling my butter off.
7:24
Okay.
7:28
And this could be like on a yeast roll.
7:33
This could almost like take you to heaven, couldn't it?
7:38
So, let's taste and see what we've got.
7:50
Come taste this Teresa and see what you think.
7:54
See if it needs something else,
7:58
or a little bit more of something.
8:00
So see, this is really something that you play around with.
8:08
I think it could take a little more honey,
8:10
don't you?
8:13
- Or a little bit more cinnamon.
8:15
- [Teresa] A little bit more cinnamon.
8:16
- I think so too.
8:17
- [Teresa] I would say powdered sugar.
8:19
- Okay.
8:20
Well, we'll do that too.
8:23
Okay, so a little bit more cinnamon.
8:29
So that would have put us at like a fourth of a teaspoon
8:33
of cinnamon.
8:37
Yeah, this weren't real sweet,
8:39
even though we had the honey and the powdered sugar in it.
8:46
- [Teresa] (speaking faintly)
8:48
- Yeah, we gonna add just a little bit.
8:50
- [Teresa] Well, and the beauty of this
8:51
is that if you get it too much of one way,
8:54
all you have to is add more butter.
8:55
- Add another stick of butter, it ain't no big deal.
9:04
Okay.
9:07
I'm getting honey rom all over my...
9:11
- [Teresa] I don't think (speaking faintly)
9:12
- I don't think so either.
9:16
So see, you can't do anything wrong with this.
9:22
Just make it suit your tongue.
9:26
Or if you're giving it to a real good friend
9:28
and you know her tongue,
9:31
make it suit her tongue, or his tongue,
9:34
who's ever tongue you're working with.
9:41
Oh!
9:44
- [Teresa] Are you okay?
9:45
(mixer drowning out speaker)
9:47
- No, I just cut my thumb in those beaters.
9:51
And let me tell you something,
9:53
this mixer don't play around.
9:56
That finger nail may very well turn black.
10:02
All right, (indistinct)
10:03
Uh, I'm scared of you mixer.
10:11
That hurt.
10:18
That's what happens when you do live TV.
10:21
(laughing)
10:23
You got to take the bad with the good.
10:28
- [Teresa] (speaking faintly)
10:29
- This is better?
10:30
- [Teresa] Mm-hmm.
10:31
- Okay, good.
10:32
So Teresa, St. Teresa's messed it.
10:37
She likes it.
10:41
So Teresa, would you do me a favor please?
10:45
- [Teresa] Get the camera from Eddie?
10:46
- Yes.
10:47
- [Teresa] So he can help you decorate?
10:48
- Yes, so he can help.
10:51
So, I won't take your whole afternoon away.
10:57
So Paula, one of the reasons
10:58
that I gave you all these ingredients
11:00
was just to really show people
11:02
how much different stuff you can work with.
11:04
- [Paula] That's right.
11:05
- [Teresa] Cause I really did go online
11:06
cause you said you wanted to do eight pound butters.
11:09
- [Paula] Yes.
11:10
- [Teresa] And there's not a lot of like full...
11:11
Like here's a dash of...
11:13
It's more of dash of this, touch of that.
11:15
- [Paula] Yes.
11:16
- [Teresa] But it was mixing all the ingredients together
11:17
that you like.
11:18
- Yes.
11:19
And you know, one of my favorite things to make
11:21
and give as a gift, which like is giving somebody
11:24
a little piece of gold, is your homemade vanillas.
11:29
But in order for it to be at its peak.
11:33
it needs to sit for like six to eight weeks.
11:36
So you could make it...
11:38
We're getting very close to the holidays.
11:41
But you could make it and put a little note on it saying,
11:45
"Merry Christmas, do not open me until February the 15th."
11:51
So it's not too late.
11:53
- [Teresa] And we show them that
11:54
in one of our YouTube videos.
11:55
- Right.
11:56
So, Eddie, I'd like for you to-
11:59
- [Eddie] (indistinct)
12:00
- Yes, I would like for you to taste this butter,
12:04
just here, right there on that edge right there.
12:09
Right there.
12:13
You right, you could taste that.
12:16
- You can taste the honey.
12:17
- Yeah, it's good, isn't it?
12:19
(indistinct)
12:21
This would be so stinking good with a yeast roll, or-
12:27
- [Teresa] Corn bread.
12:29
- Yeah, if you like sweet corn bread.
12:31
- [Teresa] I like sweet, I know you don't, I do.
12:33
- Well, I like all kinds of corn bread, but-
12:36
- [Teresa] Just even your morning toast.
12:37
- Oh gosh, yes, on a bagel.
12:41
You know what Michael and I love?
12:43
- [Teresa] Oatmeal.
12:44
- Well, we like oatmeal too, but we love...
12:55
What are the things we love?
12:57
- [Eddie] Bagels.
12:58
- No, I love bagels.
13:00
Michael's not crazy about a bagel.
13:05
- [Teresa] English muffins.
13:06
- English muffins, thank you, Teresa.
13:07
- [Teresa] Well, we were almost at the end of the list.
13:10
- I know.
13:11
- [Teresa] It didn't take much to guess that.
13:12
- But Michael and I just love English muffins.
13:18
Now I'm trying to get all the air out of this,
13:21
Eddie, so it's...
13:25
If you wanna be working on that.
13:30
And see one stick of butter will fill up all these...
13:37
What is this, a four ounce jar?
13:39
- [Teresa] Yes ma'am.
13:40
- Okay.
13:41
So you're gonna need a butter knife, Eddie.
13:46
- [Teresa] I think that only does two jars.
13:48
- [Paula] Here's something.
13:49
- [Teresa] I think a stick does two jars.
13:52
- Well, we're not gonna be able to get two jars out of this.
13:55
But here's something that you can go down
13:57
the side of it with, get all the air out.
14:01
And while you're doing that, I'm gonna...
14:05
So, that's one sweet butter.
14:10
But like I said, I have made...
14:14
For years, I've made strawberry butter,
14:17
and it is so delicious.
14:21
All right, so let's make...
14:25
Look how that stick of butter just stood
14:27
right up there for me.
14:29
So now we've made it sweet butter.
14:34
So now, I'm gonna make a savoury butter.
14:40
Now I've got some onions right here that I chopped up good.
14:45
I've got my stick of unsalted butter.
14:48
So the first thing I'm gonna do is salt my butter,
14:58
give it a little salt.
15:01
I'm gonna put in a little onions.
15:07
I'm gonna put in a little garlic.
15:20
I'm gonna put in a little lemon juice.
15:29
You know, these butters,
15:35
they're really just what ever you want.
15:39
I think I'm gonna put some basil in this one,
15:46
a tablespoon or two.
15:51
And like I said, if I had my little bitty processor here.
15:56
And you can just lay this on top of each other
15:59
and do like a shift or nod,
16:01
which is just roll it up like a cigar
16:06
and slice it real thin, and you'll wind up with strips.
16:13
And then I'm gonna go back again
16:19
and chop, chop, chop, chop, chop, chop.
16:24
And the longer you give this dimeric together,
16:32
like overnight.
16:35
And I just love thyme, and I'm just gonna strip it
16:43
going backwards on the thyme leaf,
16:51
and drop those little leaves into our butter.
16:59
I dropped the whole...
17:04
You see, it's really easy,
17:05
a little tedious, but it's easy.
17:09
All right, let's find (indistinct).
17:16
All right, let's see what we've got.
17:20
Okay.
17:24
And that's probably about enough thyme.
17:29
And I don't think I'm gonna use sage,
17:32
but I do think I'm gonna put some rosemary.
17:39
And just depending on how strong you want this,
17:43
is how much of these different herbs.
17:51
Okay, and Rosemary is a pretty strong herb.
17:53
So that should be enough.
18:00
It's not thundering, is it?
18:02
- [Teresa] No, it's (indistinct).
18:03
- Do we have some chunky black pepper
18:05
or is it all just really...
18:09
- [Teresa] I think all we have is what's in there.
18:10
- Okay.
18:12
I'll put a little black pepper in to go along with the salt
18:19
that we put in it.
18:25
Okay, and we are just gonna (indistinct)
18:30
It starts out so fast.
18:42
So, we'll be tasting this and see where we stand
18:47
with our different herbs.
19:12
Okay, so we slide it off.
19:18
Where did I go to with my little spatula?
19:21
- [Teresa] I got it, but you can have it.
19:23
- Okay, Teresa has got it.
19:28
(indistinct) I can use a spoon.
19:31
And this looks awfully pretty.
19:34
And this is the butter that I would like
19:39
for you to put on my steak, Michael,
19:41
as it comes off the grill.
19:45
So let's see if I got it right.
19:54
That is so good.
19:58
That is so good.
19:59
Would you change now with Eddie?
20:01
- [Teresa] Certainly.
20:02
- I'm wondering if I need to put
20:08
a little bit more salt in it.
20:12
So, Eddie, if you would taste that
20:17
and tell me what you think.
20:19
Now, as the flavors marry together,
20:23
this is gonna get more flavor.
20:25
- I can smell it just blending it up.
20:27
- I know.
20:30
Does it need more salt?
20:33
- No, the salt was the first thing I tasted.
20:35
- Okay, good cause it was in fact the last thing I tasted.
20:40
All right, so Teresa finished filling this for us.
20:44
And you can see it's adhered all the way around to the jar.
20:50
So there's several different ways you could do this.
20:54
You could make a little square cloth.
21:00
All right, come on.
21:04
Come on.
21:07
This is kind of slippery with...
21:09
- [Teresa] Your butterfingers.
21:11
- Yes, I do have butterfingers.
21:14
All right, so there are several different ways
21:15
that you could do this.
21:16
You could cut with pink and sheers,
21:20
the scissors that make so little things on it.
21:25
You could put between your lid and your screw top,
21:31
you could put a little square cloth on it, but we are not.
21:37
We're gonna put our little sticky stickers
21:43
on the top, right Eddie?
21:46
- [Eddie] Mm-hmm.
21:47
- I think that's the way we ought to do it.
21:49
And then we're gonna choose a ribbon to tie it up around it.
21:53
And to walk in and give this to somebody,
21:58
personally, I just love it
22:00
cause I think that person loves me.
22:03
(Eddie laughing)
22:04
So there you go.
22:07
I'll be filling this.
22:09
- Okay.
22:10
- If you will be showing them how we gonna ribbon that up.
22:19
And I'm gonna try to be very precise with this.
22:26
You work it into the bottom (indistinct).
22:27
- [Teresa] If you're looking for a round one,
22:28
there isn't a round one-
22:29
- Well, I'm not.
22:30
I'm just looking at my-
22:31
- [Teresa] No, I looked for round gift things.
22:33
- Looking at my options.
22:34
- Yes, we always want to check out our options.
22:39
So you wanna take this and layer that butter in,
22:47
mash it down slowly, getting all the air pockets out of it
22:52
cause you don't want them to open their jar of butter
22:56
and then see big old holes where there's no butter.
23:03
I can't believe this is right on the first try
23:08
because as y'all know,
23:09
I didn't measure really anything too much.
23:13
It was kind of a guessing game.
23:17
But oh, how wonderful this is gonna be.
23:27
And one stick of butter fills up
23:31
these little four ounce jars just perfect.
23:39
- [Teresa] So Eddie, tell me what you're doing over here.
23:41
- Well, I'm thinking she wants to stack them.
23:46
- [Paula] Oh no, no, no.
23:47
- [Eddie] Oh, okay.
23:49
- No, I was just saying we could.
23:51
What I would do is I would run this ribbon around this way.
23:58
You may need some tape to tape it on.
24:00
- [Eddie] Okay.
24:01
- [Paula] But I would do it that way
24:02
so keeping this visible, you know?
24:06
- [Eddie] Clear.
24:08
- [Teresa] So they can see their name.
24:09
- [Paula] Yeah, so they can see their name.
24:11
- [Teresa] And Paula's, when she gives it to them.
24:14
- [Paula] Or Eddie's or Teresa's
24:16
- [Eddie] Well, I don't think we have any tape here.
24:18
So let me see.
24:20
- [Teresa] Oh, to be in a house with everything in it.
24:23
(Paula laughing)
24:25
That's my Christmas wish.
24:29
- Oh my goodness, mine too Teresa.
24:32
I know I got it.
24:33
I know I got it.
24:35
Now, is that in the storage bin
24:37
or is that in the dogwood house,
24:39
or is that in Bobby's house?
24:42
Or was it my last house that I left?
24:43
- [Teresa] In your dreams.
24:45
(laughing)
24:47
You know, I just don't know.
24:54
So I hope that this got y'all to thinking about ways...
25:05
Cause money is totally different now
25:10
than it was nine months ago.
25:14
I mean, it's not even...
25:16
- [Teresa] And for those of you
25:17
that aren't very, very creative, such as myself,
25:19
I did get them some of the crinkly ribbon,
25:22
that all you have to do is tie it on.
25:24
Did you do this in with s...
25:28
What do you do with, scissors?
25:29
- Scissors, and twirl up.
25:30
- [Teresa] And off you go.
25:30
- Well actually, I like ribbon that has the wire on it
25:37
because you can zap up a beautiful bow in two seconds
25:42
when it's got the wires.
25:44
- [Eddie] Yes.
25:44
- [Teresa] Says the creative people.
25:47
- [Paula] Uh-oh.
25:47
- [Teresa] Look Eddie, you did a nice job.
25:49
You did end up having to use the...
25:51
Can you turn that upside so they can see?
25:55
- [Paula] You know what, doing it that way,
25:57
we probably should have put it on the bottom.
25:59
- [Eddie] (indistinct) the label?
26:00
- [Paula] The name tag, yeah.
26:02
- [Eddie] Or in the front if we (speaking faintly)
26:03
- Yeah, yeah, if we can get the right size one.
26:06
All right, listen.
26:07
- [Eddie] Be creative.
26:08
- Yes.
26:09
But to me that's beautiful.
26:11
That ribbon with that holly.
26:14
All right now, with my hands helping you,
26:19
let's see what we can do as a team.
26:23
You want to, I'm gonna help you hold this.
26:33
- [Eddie] The jar's tapered, so it slides right off.
26:36
- [Paula] Right, right.
26:38
So that's why we need our tape.
26:40
Do you wanna add some of this ribbon to that,
26:43
or what do you want to do?
26:45
- [Eddie] I think this (speaking faintly)
26:46
- All right, if we can do it on the screw top,
26:49
would you feel better about that?
26:52
(indistinct)
26:53
Wait, I can't see.
26:55
Okay.
27:03
I can't, you can't, but we can.
27:08
- [Teresa] Note to self, ribbon with wire.
27:09
- Ain't that right?
27:11
- I can't, you can't, but we can.
27:15
And I love that, when I opened the restaurant,
27:19
that was one of the first things I told the people
27:25
that applied and came to work with us.
27:30
Together, we can do anything.
27:34
So Eddie put a little sprig of thyme in this one y'all.
27:38
And so, you know at a glance, that's an herb,
27:41
that's a savory.
27:43
And if we had a little miniature candy cane,
27:47
those that are about that big,
27:49
we could have tied it up in that bow,
27:51
and they'd known it was sweet.
27:53
But I hope that Eddie and I have given you some ideas
27:58
that you're gonna love giving,
28:02
and your friends and family are gonna love getting.
28:06
And to me, this is so relevant
28:09
in our world right this minute
28:12
- Yeah, and this is a really different gift idea I think
28:14
- Absolutely, give them that and that
28:17
and some homemade vanilla,
28:20
and tell them you're waiting on you're damn cake.
28:23
Now get busy.
28:24
(Paula laughing)
28:26
Love and best dishes y'all.
28:28
Merry Christmas, we love you.
