- Oh!
0:01
(laughter)
0:02
I didn't know Eddie was rolling, y'all.
0:05
Um,
0:06
you caught me with my britches bout halfway up.
0:09
(laughter)
0:10
So, I told you earlier that uh,
0:15
I had another recipe from up North,
0:19
another recipe from New Hampshire, y'all
0:22
and this too is from Eddie's mother, Carol,
0:28
and um, it's raisin pie.
0:32
Now, I have never made a raisin pie in my whole life
0:37
and I'm so excited
0:38
and Eddie, I want you to share your memories with us
0:43
about this pie.
0:44
- [Eddie] This is actually a cranberry raisin pie.
0:47
- Oh, cranberry raisin, yes I see that now.
0:51
- [Eddie] Um,
0:52
and I remember my uh, my mother's mother I believe made it
0:56
and um,
1:00
I remember as a child, it was one of those desserts
1:02
that was on like the adult table
1:04
with like the Rum balls,
1:06
so you know, I think I was a little bit older
1:09
before I tried it, but it's,
1:11
it's one of those desserts that has the kind of like
1:15
sweet, you know a sweet and then tang to it.
1:18
- Well, I thought this sounded very adult.
1:22
- [Eddie] Yeah.
1:23
- Like, so you have me cooking two cups of sugar
1:29
with two tablespoons of corn starch
1:32
and a half a cup of water
1:35
and Carol tells us to cook that for about five minutes.
1:40
So I think it's been five minutes, don't you Eddie?
1:43
- [Eddie] Yes.
1:44
- [Paula] So now, I am gonna add um,
1:47
one cup of raisins,
1:50
four cups of fresh cranberries,
1:55
oops,
1:57
maybe I need to be using.
1:59
- [Eddie] The big whisk?
2:01
- [Paula] The big whisk.
2:02
(laughter)
2:04
All right.
2:07
Four cups of cranberries
2:09
and one tablespoon of a grated orange rind.
2:17
So, this, right now it kinda sounds like cranberry sauce,
2:22
doesn't it?
2:23
A good old homemade cranberry sauce
2:27
'cause I, this is what I like to put
2:30
in my cranberry sauce when I make it.
2:33
So it said bring this to a rapid boil.
2:37
Oh, and looks it's thick, Eddie.
2:40
I hope I didn't cook it too long.
2:42
- [Eddie] Um, I think you cook
2:43
until you start hearing the.
2:46
- [Paula] Well, I'm talking about the first round,
2:47
the two cups of sugar and the cornstarch
2:51
and a half a cup of water,
2:52
I hope I didn't cook it over the five minutes
2:55
that your mother has told us to cook it.
2:59
Yeah, now these should start popping open like any second
3:06
and I'm gone, I'm gonna wash my whisk.
3:09
If you'll watch that pot for me please, Eddie.
3:16
I bet you know how do that for your mama, did you?
3:18
- [Eddie] Uh, no.
3:20
- [Paula] I bet you did.
3:23
I bet you did.
3:32
Okay, I just love this small whisk,
3:35
but when you're using a big pot,
3:38
it does have a tendency to,
3:40
and y'all you know I'm living in Bobby's guest house.
3:45
It's located next to his house that his family lives in
3:50
and it's got that induction top
3:54
and I'm really trying to adjust um,
3:58
my cooking to this stove
4:01
and when I think I've got it, then I don't got it.
4:06
(laughter)
4:07
So uh, I'm doing, I'm doing pretty good,
4:12
but I just love cooking with gas
4:14
because when you want it on, it's on,
4:16
and when you want it off, it's off.
4:19
Hear em popping, Eddie?
4:21
- [Eddie] Yes.
4:24
- So it said bring to a rapid boil,
4:28
so I'm gonna turn this up,
4:32
I'm gonna turn this stove top up to high.
4:40
All right, now it's starting to boil, Eddie.
4:46
So was this passed down from your grandmother to, or um?
4:50
- [Eddie] I would say I guess, it was probably.
4:52
- [Paula] Did it come from a restaurant?
4:54
- [Eddie] I think it would have been my mother's mother.
4:58
- Oh, and you know what?
4:59
Those are the best recipes because uh,
5:02
they come with so many memories
5:05
and most of those memories are wonderful.
5:08
- [Eddie] Yes.
5:11
- How long has your grandmother been gone?
5:13
- [Eddie] Oh gosh,
5:14
I think I was in junior high school when she passed away.
5:21
- So it's been a long time.
5:24
- [Eddie] So we had a mix, this, this recipe and um,
5:28
some of the others, um,
5:29
could have been like from the Canadian French side
5:33
from my grandmother.
5:35
- Well I would love to hear,
5:37
'cause your grandmother was Canadian, French, Polish?
5:43
- [Eddie] No, no, no.
5:44
- Okay, the Polish side is from your father?
5:47
Okay.
5:49
All right Eddie, look at that,
5:51
that's a rapid boil, isn't it?
5:53
- [Eddie] Yes, I would say.
5:54
- [Paula] All right.
5:55
I'm gonna cut this off and um,
6:00
did your grandma speak French?
6:03
- [Eddie] No.
6:04
- She didn't?
6:05
- [Eddie] No, I don't, I don't think so.
6:06
(laughter)
6:08
- But she had some kinda accent, surely.
6:11
- [Eddie] I think, I think she just had a uh,
6:14
a New England accent.
6:16
- And what's a New England accent?
6:18
Is it like ca?
6:20
And pock?
6:21
- [Eddie] Yeah, like Boston.
6:23
- I love that accent, I just love it.
6:27
Love it, love it.
6:28
All right so, Carol tells us to let this cool completely
6:35
and we're gonna,
6:36
we're just using frozen ready to go pie crust.
6:42
You know, I don't have a problem with these at all,
6:48
although I don't like the tin pan that it comes in,
6:53
that's a dead giveaway,
6:54
but you know, it's actually a good product.
6:57
I also like uh,
7:01
the refrigerated pie dough because you unroll it
7:04
and you can put it in your own pie pan,
7:07
so nobody would know that you hadn't made it,
7:10
mixed it up yourself and if you like a thick crust,
7:14
you know, it comes with two, two crusts, two pie crusts,
7:19
and I have put them one on top of the other
7:23
if I wanted a thicker crust and do it that way
7:27
and it, it's good, it gives you a lot of crust.
7:30
All right, so I've got the second crust here
7:34
and uh, after it has set out here
7:39
and got more at room temperature,
7:41
I'm gonna take this out of the pan
7:44
and I'm gonna roll it a little bit and uh,
7:48
because this is, this is a two crust pie that we're making,
7:52
so we'll roll this out and we'll put it on top
7:56
of our cranberries and raisins
8:01
and we will um,
8:06
brush it with a egg wash.
8:09
Okay, it's about ready to come out.
8:12
Okay, so it's gonna take a while for this to cool,
8:16
so I won't be gone long.
8:18
Y'all go get ya something to drink,
8:21
go to the bathroom, call a friend,
8:25
do whatever you need to do
8:27
and I'll be here waiting on y'all to come back.
8:31
Who's ready to finish the cranberry raisin pie?
8:37
I am.
8:38
I am, so this has gotten cool for us, y'all,
8:43
and I'm just gonna, look, look, look,
8:47
look at that beautiful pie.
8:49
Eddie just said, oh, with some vanilla ice cream.
8:54
He said it's so good.
8:57
But now, I'm like your mother, Eddie,
9:01
I don't know if the children
9:03
will be very crazy about this one
9:06
because I just tasted it and it's very tart,
9:10
it'll make your lips pucker.
9:12
(laughter)
9:16
Hm, look at that, that filled up that pie
9:20
and we're using a deep dish, right?
9:22
- [Eddie] Yes.
9:24
- [Paula] A deep dish pie.
9:27
Okay.
9:30
So,
9:35
I got our second crust
9:40
rolled out
9:42
and then I'm gonna try to just fold this,
9:45
the extra under
9:48
to make a little thicker crust
9:54
and then we'll see if we can't
9:57
kinda pretty it up a little bit
10:02
by using a fork on it, or our thumbs.
10:09
I'm glad to see that Eddie's mother
10:14
made this a two crust pie
10:16
because that's gonna help cut some of the tartness,
10:20
right Eddie?
10:21
- [Eddie] Oh yeah.
10:27
- [Paula] Oh honey, I'm fixing to put sugar on top of it.
10:30
(laughter)
10:32
I've got some Turbinado sugar
10:36
that I think I'm gonna sprinkle on it.
10:38
Let's see, I think,
10:41
I think that I will just rather fork this,
10:45
it looks like that kinda pie to me.
10:49
So that's what I'm gonna do.
10:55
I'm gonna get a little flour
11:06
and a fork and I'm gonna get my tongues
11:12
in the flour.
11:16
This really reminds me of an old timey pie,
11:22
when your grandmother just used to,
11:24
didn't do anything fancy,
11:26
just used her fork
11:32
and made that really homemade looking crust.
11:38
This is gonna look like a cherry pie cooking, Eddie,
11:41
you know it?
11:42
- [Eddie] Yeah it will, yeah you know,
11:43
it kinda has that tart, you know.
11:44
- [Paula] Uh huh, cherry pie is tart.
11:48
- [Eddie] I think adding the raisins adds you know,
11:50
the extra sweetness.
11:51
- [Paula] Listen, I love raisins on my salad,
11:55
or anything like that because um,
11:58
the sweetness that the raisin brings to the table,
12:04
is so good.
12:06
So that's very pretty, isn't it?
12:09
Very homemade-y looking.
12:17
That flour will bake off but now,
12:22
look, I was looking for my egg y'all.
12:24
(laughter)
12:27
And look.
12:28
- [Eddie] The bad elf.
12:29
- [Paula] Look who stole my egg.
12:33
That elf on the shelf.
12:36
(laughter)
12:38
I think he might be the naughty elf, you think?
12:44
He looks a little devilish.
12:46
(laughter)
12:48
All right, go find you something else to
12:51
mess with, Elvie.
12:58
My grandchildren all love,
13:00
I was out at Jamie's,
13:04
Eddie and I went out to Jamie and Brooke's the other night
13:08
and Maddie had to show me where the elf at his house
13:13
had flown and that elf had flown up
13:17
to like the top of a tall mirror.
13:20
I mean, he must, he must have good wings or something.
13:24
All right, now where is that brush?
13:27
Here we go.
13:29
Now this, this uh, egg wash
13:33
is gonna give this pie a beautiful sheen.
13:40
It's gonna just shine.
13:45
Because you know we eat this first with our eyes.
13:52
I have to make sure we get that
13:55
flour work covered up good.
13:57
All right, and Theresa said,
14:00
gosh, that would be good with some sugar on it.
14:05
And I thought, I am with you, sister.
14:08
I've got some Turbinado sugar in here
14:11
and I love to put that on some of my cookies that I bake.
14:17
It's so good, now all I have to do is find it.
14:23
Let's see, that's a coconut sugar
14:30
and this is the Turbinado and this is the Turbinado
14:35
and this one's open, so let's use this one.
14:41
Now this pie
14:43
only has to bake like 25 minutes, y'all.
14:47
So that's pretty short for a pie.
14:52
So what y'all think, kiddies?
14:54
(laughter)
14:56
I know!
14:58
All right, now I'm gonna take, oh, it's a heavy pie.
15:03
And every bit of its gonna go to my middle.
15:06
Okay, now I've topped it with our Turbinado sugar
15:11
and this is it, you just get it from the grocery store,
15:14
it's in the same department as your regular sugar
15:18
and now, I'm gonna cut some slits in this
15:22
so it will vent.
15:28
And I'm gonna give it just like three slits.
15:33
Or maybe I'll do four.
15:38
Or who knows?
15:39
I think five would be better
15:43
and another right there just for good measure.
15:47
Okay, so we'll be able to see
15:50
that beautiful red cranberry bubbling out of there.
15:55
So 25 minutes on what, 375?
16:01
Eddie, is that right?
16:03
Yes.
16:06
And Carol, Eddie's mother, said,
16:10
I brush the crust with a little milk or an egg wash.
16:14
375 to 400 for 25 minutes, or until crust is brown,
16:21
but for this oven,
16:24
you know, I don't know it
16:25
as well as I knew my own ovens,
16:28
so I'm, I'm gonna cook this one at 375
16:32
and that little beep just told me
16:35
that our oven had reached the temperature of 375,
16:40
so I'm gonna set my timer
16:46
for 25 minutes
16:51
and this is going in the oven.
16:54
Whoa!
16:55
Did y'all about see that?
16:57
(laughter)
16:58
That's why you should always use two hands.
17:05
I'm gonna put him back in the center,
17:06
that's one, that's one beautiful pie, Eddie.
17:11
So in 25 minutes,
17:14
how long do we have to let it cool
17:15
before we can taste it?
17:18
- [Eddie] Dig right in.
17:19
- Huh?
17:20
- [Eddie] Dig right in.
17:21
- Dig right in.
17:22
(laughter)
17:23
Okie doke.
17:26
We'll see you for the tasting.
17:29
I want y'all to look at this beautiful raisin cranberry pie.
17:37
Look how beautiful.
17:39
The Turbinado sugar that I put on top of the egg wash,
17:44
it's just made it so shiny and so beautiful.
17:48
I don't know though
17:49
if this has cooled down enough for us to slice it,
17:54
but would y'all like for me to try?
17:58
Who would like for me to?
18:00
Okay, so Theresa and Eddie say yes.
18:03
I'm saying there's a good chance
18:07
that it can run everywhere.
18:15
Because.
18:16
- [Theresa] When has that ever stopped us?
18:17
- [Paula] I know.
18:18
(laughter)
18:19
Look at that, it looks like a cherry pie, y'all.
18:22
Look at that.
18:25
Uh oh.
18:28
I got some cleaning up to do.
18:30
(laughter)
18:32
It's gonna run, y'all.
18:43
It's gonna run.
18:46
- [Theresa] It's running?
18:47
- [Paula] It's running, but not real, real bad.
18:52
Hm, hm.
18:55
If I didn't know.
18:56
- [Theresa] I was gonna say, that's a good run.
18:58
- [Paula] If I didn't know better,
19:01
I would say it was a cherry pie.
19:05
Okay, I only see one fork here.
19:10
- [Theresa] Well who else needs to,
19:11
I mean, this is mine.
19:13
(laughter)
19:16
- [Paula] So you saying Eddie and I don't need one?
19:18
- [Theresa] Y'all can share that.
19:21
- There you go.
19:23
Come on, let's bite into it.
19:27
That crust is just amazing.
19:36
- [Theresa] Yum!
19:39
That was not as tart as, I thought it would be tarter.
19:44
- That is delicious, Eddie.
19:47
But to me, it is an adult pie.
19:50
- [Eddie] Totally.
19:51
- [Theresa] Yes, this is definitely not.
19:55
- [Paula] And that top crust on it, just makes it.
19:59
- [Theresa] If this had some cherries in it,
20:01
in addition, I would love it.
20:05
- [Paula] It still tastes like cherry pie.
20:10
Eddie,
20:14
well, I'm talking straight to Carol Zorawowicz,
20:19
thank you Carol
20:22
for giving these recipes to your son
20:26
so he could share them with everybody,
20:28
you're so sweet and I've,
20:31
I miss not being able to see you
20:33
and I know your son definitely has.
20:38
How long has it been Eddie, like three years?
20:40
- [Eddie] Oh no, it's only been a year since I saw her.
20:44
- No, since I saw her.
20:45
- [Eddie] Oh, since you saw her,
20:46
yeah, yeah it's been three years.
20:48
- That's what I thought.
20:51
I don't remember.
20:53
Just a year ago, but thank you Carol
20:57
and if you got any more treasures,
21:00
just give your son a call
21:02
and we'll share them with the rest of the world.
21:05
So love and best dishes.
