- Good morning, y'all! (skillet sizzling)
0:02
Actually, it's evening
0:04
but what I'm making I'm gonna serve Christmas morning.
0:11
I always, when my children were small
0:15
or when they was still living at home
0:18
I would make some type of make-ahead casserole for them
0:23
so I could plate it up
0:26
and they could eat it around the Christmas tree
0:29
while they were getting to their presents
0:35
and I call this one Christmas Morning Casserole
0:39
and the grand part about this is you can
0:44
(spoon tapping)
0:45
make it the night before.
0:49
Okay, I have got a pound of loose breakfast sausage
0:57
and I just stirred in
0:59
one tablespoon of fresh, chopped sage.
1:05
Easy for me to say. (spoon tapping)
1:08
All right, now I didn't cook this to death, y'all,
1:13
so it's gonna have,
1:16
in the morning like an hours worth of baking
1:19
so it will finish and it won't come out hard
1:22
and in little hard chunks. (dishes clanking)
1:25
So, I'm gonna spray my dish
1:29
(spray hissing)
1:33
with a little spray so it won't stick
1:36
and then I have seven slices of bread.
1:40
Now, the bread I had was much bigger
1:43
then like a sliced bread
1:46
so I don't think I'm gonna use all of this bread
1:51
cause, like I said, it was pretty big
1:53
but it calls for, like, seven slices
1:55
of a regular sandwich bread that you've buttered.
2:02
I'm gonna wind up using most of it, y'all.
2:08
This is so good and it brings back so many memories.
2:13
You know, you just wonder where the years went.
2:17
Where did they go?
2:22
Now I'm, instead of worrying about your children
2:26
we all worrying about our grandchildren,
2:28
making sure they have everything they want
2:31
and everything they need. (fork beating)
2:33
All right, now I'm gonna mix together the custard part
2:38
of our Christmas Morning Breakfast Casserole.
2:45
All right, I've got a half a teaspoon of dried mustard.
2:51
Now, this is something that I didn't put in it
2:54
all those years ago when I was making it for my children
2:57
but this is a half a teaspoon of cayenne.
3:01
So, you can do whatever you want.
3:05
You can completely leave that out
3:08
if you're feeding little ones
3:11
or if you're feeding just big ones
3:12
you can make it twice as hot. (laughing)
3:16
All right, so I've added one cup of yellow cheddar,
3:20
one cup of white cheddar (fork scrapping)
3:24
so I'm just gonna mix that together
3:28
and now I'm gonna stir in some salt,
3:33
maybe about a teaspoon of salt
3:37
and about a half a teaspoon of pepper
3:43
and then I'm gonna add my three cups of milk.
3:49
You know, I found through the years
3:55
I would alter my breakfast,
3:58
my Christmas Breakfast Casserole,
4:01
I started putting, um,
4:04
I'd cook my potatoes, my white potatoes skin on
4:07
and I would boil them whole
4:09
and then when they cooled I would slice 'em
4:12
and I would add a layer of potatoes to this
4:15
so, you know, really use your imagination.
4:18
You can do a trinity of, like, you're peppers,
4:22
you're bell peppers, you're onions, celery,
4:25
you can do anything that you want to.
4:28
Uh, sometimes I use ham, sometimes I use bacon
4:33
and sometimes I use sausage. (spoon tapping)
4:36
So, do what you're feeling.
4:39
(eggs splashing)
4:43
Just do what you're feeling.
4:45
All right, so we're gonna just pour that
4:56
right on top of our bread
5:01
and then I'm just gonna take my hands
5:03
and kinda push that down a little bit
5:07
so that bread can start soaking up that
5:12
what's gonna be a very, very good,
5:15
like, egg custard around it.
5:18
All right, so now when we started out
5:21
I was telling y'all (water splashing)
5:24
I'm all about giving gifts,
5:27
giving homemade gifts this Christmas
5:30
because, let's face it, this year has really been
5:35
like no other year we've ever had and, you know,
5:39
I think we're doing a lot of shopping from our home,
5:43
you know, through the internet
5:46
or making these wonderful homemade gifts
5:50
so, I said, you could have this ready for your family
5:53
and stick in the oven
5:55
and bake it for about 45 minutes to an hour
5:59
but you can also cover this with Saran Wrap
6:01
and put a bow on it and take it over to a neighbor
6:05
and say, "Merry Christmas,
6:07
your Christmas morning breakfast is made".
6:10
- [Theresa] Don't forget the sausage.
6:16
- Y'all, it's a good thing Theresa's here
6:20
cause guess what I forgot? (laughing)
6:23
If it's not right in front of me.
6:25
Thank you, Theresa!
6:27
Thank you for keeping your eye on me. (laughing)
6:29
- [Theresa] I was wondering
6:31
if maybe you was just getting to it.
6:33
- The sausage was supposed to go on top of the bread, y'all,
6:37
but that's all right.
6:38
I'm just gonna do it just like this
6:42
and tuck it, tuck it away.
6:45
Now, in the morning, (laughing)
6:48
I swear, Theresa, I would lose my head
6:51
if it wasn't screwed on. - (laughing)
6:54
- [Theresa] I think we all feel that way sometimes.
6:54
- Do y'all feel that way?
6:56
Please tell me ya feel that way! (laughing)
7:00
All right, so I was telling ya what I do,
7:04
bacon, ham, sausage
7:07
and I was about to do one with nothing. (laughing)
7:11
(spoon tapping) (laughing)
7:14
All right, so here we go.
7:16
So, like I said, (water splashing)
7:19
if you have a neighbor
7:23
and you know that they haven't maybe got any family
7:28
or they're quarantined away from their family,
7:33
this would just make a wonderful gift with a bow on it
7:39
and take to them.
7:40
- [Theresa] And the nice thing about that one, Paula,
7:41
is you really only have to let it soak
7:44
for like 30 minutes to an hour.
7:46
It's not like the, some of the others.
7:48
- Well, I tell you in this recipe, um,
7:52
(paper rustling)
7:53
let's see what I tell you in this one.
7:55
"Cover up with plastic wrap and refrigerate.
7:57
The next morning, preheat the oven to 350
8:01
and bake for about one hour". (pan clattering)
8:03
Oo! (laughing)
8:05
I'm jumpy.
8:07
Uh, and bake it for about one hour, it'll take longer
8:11
because it will have been refrigerated and cold,
8:20
so, you can set this out
8:21
and try to let it get to room temperature.
8:25
When you get up you could take that out.
8:29
Now, I wish I had a pretty bow for it but I don't
8:33
but you could make somebody's day
8:36
by sharing just this little bit of love that you've put
8:41
in this almost meatless breakfast casserole. (laughing)
8:48
You know, I have to laugh at myself, y'all,
8:53
rather than cry cause I can't remember. (laughing)
8:58
So, there ya go,
8:59
in the refrigerator it goes,
9:01
in the morning, preheated 350 degree oven for one hour.
9:07
You know, when I start thinking about,
9:09
"Well, now who would I love to gift this with?"
9:13
I keep coming up with like three or four
9:16
and I know Bobby has some neighbors here
9:19
that's an older couple
9:21
so, I may have to make three or four more of these, y'all,
9:26
because, um, definitely makes me feel good
9:30
to do something nice
9:31
for somebody that you don't even hardly know.
9:36
So, this one's going in the refrigerator
9:39
and I'll be making some more later on tonight. (laughing)
9:44
Love and best dishes, y'all.
