0:01
- Hey, y'all. It's Jamie Deen here,
0:01
I'm back in Mama's Kitchen.
0:02
So you know I've got delicious, easy recipes for you today.
0:08
It's the holiday season, y'all.
0:10
So, how about a breakfast casserole this week?
0:13
I got a pound of sausage that I browned off.
0:16
To this, I'm gonna add a cup of green onions.
0:19
This is spring onions that we've chopped up.
0:21
You know, I like a little bit of the green
0:23
and I like a little bit of the white.
0:26
The green's got all the pretty,
0:27
the white's got all the flavor.
0:29
So, I'm gonna let this go for about one minute.
0:32
Now, what we're gonna need for this, y'all,
0:33
some eggs and some tater tots.
0:36
This is a dish that you can put together the night before.
0:40
you could put this in your refrigerator,
0:41
and then Christmas morning you pop it right into the oven.
0:43
That's what Brooke and I are gonna do this year.
0:45
'Cause who has time to make breakfast on Christmas morning?
0:51
My sausage is going good.
0:52
I got my onion stirred in here.
0:54
They've been going for about a minute, that's enough.
0:56
So, I've got a prepared pan here
0:57
that I'm gonna put 'em into.
0:59
Let me make sure I don't catch myself on fire.
1:03
I'm gonna put this in the bottom of the pan.
1:05
And you notice they did not ask me to drain this off.
1:10
And I'm fine with that,
1:11
because there's a lot of flavor in those drippings.
1:14
Now, to this, I'm gonna add two cups
1:24
I'm gonna put this right here
1:26
and then I'm also gonna stir in some cheese.
1:30
I'm gonna put about probably half of my cheese
1:42
And then, we're gonna mix this mixture together in our pan.
1:46
I'm gonna get this good and mixed up.
1:49
And when y'all come back,
1:51
I'm gonna start getting into the egg business.
1:54
this is gonna be great on Christmas morning,
1:56
it's gonna be really good today.
1:59
I'm having this for lunch.
2:01
Okay, this is what I'm gonna do now,
2:02
I got a big bowl I'm gonna put my eggs in,
2:12
We've got some black powder,
2:14
black powder, black pepper, some garlic powder.
2:18
We got a little bit of salt,
2:29
Dijon adds such a beautiful complex flavor.
2:34
And we're gonna whip this up.
2:39
Whip, whip, whip, whip, whip.
2:43
I'll tell y'all, we were up in Pigeon Forge for Thanksgiving
2:47
and I made a new friend,
2:48
and Teresa I know you're watching.
2:51
And we talked about empanadas.
2:54
So, just after the first of the year
2:57
- Theresa, I'm gonna make make empanadas.
3:01
- Not you, Teresa. The other Teresa.
3:02
But, every Teresa out there,
3:04
I'm making empanadas coming up at the end of-
3:06
- [Speaker] Oh, it was the Teresa
3:07
that taught you how to make them?
3:08
- Yeah. - [Teresa] Nice.
3:09
- Teresa, you know who you are.
3:10
I talked to you at Thanksgiving,
3:13
and I said, "You know what, I wanna make empanadas".
3:15
I make a fantastic sloppy joe with red bell peppers.
3:19
I put 'em in at the very end to keep 'em crispy.
3:21
So, what I'm gonna do is a sloppy joe empanada.
3:25
Thanks to you Teresa.
3:28
Everything's mixed up here.
3:30
- [Teresa] How about pimento cheese, where do they?
3:31
- Oh yeah, yeah, yeah, that's right.
3:35
We got some pimentos that I'm gonna stir in.
3:38
You know, I love red peppers.
3:39
I don't know how much flavor this is gonna bring,
3:41
but it's certainly gonna make it look more pretty
3:45
with that red in there.
3:47
So, this eggs mixture goes right over the top.
3:53
This is, I'm making this for Christmas this year.
3:57
I'm making it for me and y'all and everybody
3:59
and I'm having it for lunch today.
4:02
Now, on top of this goes the rest of these tater tots
4:08
and they're gonna cook down in these eggs.
4:10
My goodness gracious.
4:13
Now this one's going in the oven at 350
4:16
for about 45 minutes.
4:18
But right here is the spot where you would stop.
4:22
Make sure all this is cool, covered up,
4:23
put it in your fridge, you can cook it tomorrow.
4:25
I'm cooking this today though.
4:29
Okay, y'all, we've got it cooked through.
4:32
The center is nice and
4:36
So, I'm gonna top it with the remaining.
4:38
This is gonna be so good y'all.
4:44
I'm eating this next today.
4:46
So, we got our rest of our cheese going on here.
4:48
Now, this is just gonna go back into the oven
4:50
for only a few minutes to melt this cheese.
4:52
So, y'all don't go too far.
4:54
Get your forks ready.
4:58
Tater tot breakfast casserole.
5:01
I'm telling you, for Christmas morning?
5:05
Oh, you wake up, and then you got your potatoes
5:07
and your sausage and your cheese and your eggs
5:13
The pimentos are so pretty in there.
5:16
It says to let it cool for about 15 minutes
5:19
So, let's dive right in.
5:21
It's not an episode of me at mom's,
5:23
unless I burn the roof of my mouth off.
5:42
Y'all, Christmas day is one of my favorite days of the year,
5:45
If you got kids around the house,
5:47
it's also one of the busiest,
5:48
most stressful days in the year.
5:50
If you can find this recipe
5:51
it's in mom's magazines, it's on shelves now.
5:53
They got a tremendous savings,
5:55
I think for a year's subscription.
5:56
Y'all look up the hash brown tater tot casserole
6:00
with sausage, it is fantastic.
6:02
It will make your Christmas day easy, merry and bright.
6:05
Thanks for tuning in y'all.
6:06
I'm Jamie Deen, this is good food.
6:08
See you around the kitchen.
